Linda- The technique isn&#039;t too messy.  The flour actually stays on the work surface pretty well.  It doesn&#039;t go flying into the air, if that&#039;s what you&#039;re thinking.  I&#039;ve grown to really like the technique.  I get great results every time.   Please try it and let me know what you think!</description>
