Low Fat Chocolate Muffins Bites

I know, low fat!? I’m trying something different.  I’m trying to make low fat muffins balls for those out of control chocolate cravings.  I’ve made these muffins an easy snacking option- 2 muffins balls are 100 calories.  Good, right!?  These muffins are dressed up with whole wheat flour, part skim ricotta cheese and dark chocolate chunks.  It’s a recipe I’ve developed myself, and for that reason, the recipe is a work in progress.  I’m certain that I need more cocoa powder, and maybe light sour cream instead of ricotta cheese.  I just wanted to let you disciplined dieters know that I’m working on something delicious for you… I’m working on it.  To be continued…

It’s difficult to make very low fat chocolate muffins that taste good so if you know the secret, let us know!

Sounds totally excellent to me. I had to take my last baked “things” to work today just to get rid of them. I told them I’d bring something more healthy next week…

Joy, all your creations are simply so addictive! I’m sure you’ll perfect this recipe too, just like all the others, and when you do, it’d be a great addition to the WBB_Balanced Breakfast event that I’m hositng on my blog:)

Joy! Thank you so much for creating this recipe. I am the coworker of your lovely boyfriend and I am trying to get low cal, low fat chocolate recipes – I found the Hostess cupcakes option which is in fact 100 calories (and only 1 weight watcher’s point) but they have TONS of chemicals in them. I loved the muffin that Michael brought in and I really appreciate your caring! ;-) Drea
