I made these last Thursday, to celebrate the strawberry season (I'm in South Africa, so it's just warming up nicely now), using sour cream instead of ricotta, and I have to say: yum! These may have been the best little things I've baked all year. They were soft, delicate, beautiful, and they had just the right sweetness. They were amazing.

Joy, how much sour cream would you use instead of the ricotta? Would you still mix it with milk? I think I want to make these for a baby shower :)

Hi Joy,
I always look at your blog and today I baked these cupcakes for Easter!

I just wanted to let you know that there's a typo in the ingredient list...When you click on "print this recipe" the spacing is off so the 1 from 1 1/2 cups of flour is stuck on the line above, making it look like the recipe calls for only 1/2 cup of flour. Just wanted to let you know so others can avoid making the same mistake as me! Thanks for the awesome recipe :)

i've been following your blog for a loooong time and i love it. i made these last night and they tasted like HEAVEN! i ate half the batter and didn't have enough to make 12 cupcakes. hahaha. my roommate and i were moaning as we licked the beaters! :) thanks for the awesome recipe. mine came out a little stumpy and caved at bit at the top. is this because i didn't use enough flour??

Dear Joy,

I don't know how else to contact you (or someone who works for you) but I am trying to find some specialist cupcake/patisserie cases, and I thought who better to ask...than you.

With your infinite-baking knowledge, I was wondering if you had ever come across some continental looking cake cases.....I need to send you a picture of them really, as I can't describe them.

I know you're supremely busy, but perhaps if you get a spare moment, you might be able to point me in the right direction....?

I hope to hear from you, Victoria (UK)

If I were to use yogurt instead of ricotta (lactose intollerant!), would I still need to mix it with 1/4 c. milk? I assume I'd just substitute it 1 for 1 and use 8 ounces? Thanks!
