With a deep breath and a big fat smile I welcome you to National I’m a Maniac and Posting On My Blog Everyday for and Entire Month, also known as NoBloPoMo.

Well…. here we are.  Now what do we do?  Can we just sit and stare at one another for an entire month?  No?  You mean you actually want me to cook things, take pictures and tell you all about them?  Ooooh.  I guess that makes sense.  What’s that?  You want my crazy good Apple Pie recipe?  Ok… we can do that.

What else?  I’m coming to you with an empty bowl and a clean spatula.  What would you like to see come from Joy the Baker in the next month?  Do you have a recipe you want to share?  Do you want me to make more pancakes?  Do you need some sort of tutorial?  Leave a comment announcing your deepest baking desires and we’ll see if I can make all your dreams come true.  It’s going to be just like Disneyland, with shorter lines and fewer mice.

And now…. oatmeal.

 

This oatmeal idea comes from Joy the Baker fanatic Elizabeth.  She claims to not have much baking prowess but I thought her oatmeal idea was pretty clever.  See, Elizabeth needs an instant oatmeal concoction that she can throw in a zip lock to take to the office and then microwave in a bowl once at work.  The packaged oatmeal is often packed with sugars and preservatives and barely there dried fruit.  We can do much better than that.

Print this Recipe!

Here’s what you do.  Take down that 18 ounce canister of quick cooking oats from your top shelf.  Take out three cups and throw together a batch of oatmeal cookies.  Into the remaining oats add 1/2 cup of dried cranberries,1/2 cup of chopped almonds and 2 tablespoons of flax seeds.  Throw the lid back on the canister, give it a good shake, and you’re good to go.

Now every morning before you rush out the door, you can quickly measure out a serving of dried oatmeal mixture, carry it off to work and serve it up nice and warm once you get to the office.   Mix 3/4 cup of quick cookies oats with 1 1/2 cup of water in a microwave safe bowl, microwave on high for 2 minutes, stir and enjoy.  Healthy breakfast in a flash!

This sounds great! My first thought was “pie crust” – I live in Germany without a dough blender / pastry cutter anywhere in sight and feel slightly intimidated by making a pie crust. (I do have two pie pans though. At least something!) I haven’t even started to think about the filling yet. Maybe this will be covered in your fabulous apple pie recipe though anyway :) I’m sure I’ll come up with some other requests … soon.

Baking Disneyland, hmmm. Well Joy the Blogging Fairy (being that you sound like you’re handing out wishes and all), I would like a recommendation for a good griddle/frying pan if you feel like it. I’ve gone through 2 this year. We cook on ours quite hot for good sourdough pancakes and it kills the sad little no stick frying pans and griddles.

Joy I would love to perhaps learn a new Christmas type cookie-(one per week) so that I can build up a cookie stockpile well before Christmas. I have always been afraid of cut out cookies that you decorate. Mine were always too thick or too thin…they were sticky then too floury…then decorating them was frightening. Maybe a video on decorating. I really want to do this but Im afraid to tackle it alone!Thanks a bunch….

This is what I make for myself almost every morning,with the same exact ingredients and proportions. I’m not quite so organized as to make a whole batch and portion it out every day. Sounds like a plan, why didn’t I think of that sooner??

could you make crepes? I used to watch my host mom make them nearly once a week in France when I studied abroad in college- but I’m too chicken to do it myself even though I own a lovely crepe pan!

THE BEST CUPCAKE EVER! I trust your judgement, any combination of cake, frosting and/or anything else…as long as it is, by your standards, the best ever. Oh, one more thing, what kind of camera do you use…your pictures are so amazing, when i open your blog at work and i havent had my lunch, sometimes its hard not to lick the screen…

Wonderful recipe for oatmeal at work! For the month…my folks have a fuyu persimmon tree and I love them (eating an average of 2 per day) but I’m not finding many recipes for their use. So, if you have any fuyu persimmon recipes to make this month, that would be great! But everything you make is fun to read so I’m looking forward to this month of daily posts!

Grrrrrrrrrrrrrrrrrl, pie crust. Pie crust Pie crust Pie crust.

The only luck I’ve ever had with a homemade crust is this awesome Apple Pie recipe I have that calls for grated sharp cheddar..weird and freaking delicious. But still, I came in second at last year’s Jackson family Thanksgiving bake-off. I lost to my sister’s Monkey Bread. Oh, please…it’s only because my family has issues with warm fruit for dessert! So any rock ‘em sock ‘em recipe you have would be greatly appreciated.

And don’t worry, I’m doing NaNoWriMO. You can take comfort in another brain melting on the East Coast along with yours on the West.

Well, we all know you love eggs…they’re cheap to experiment with, don’t require a rising period or a laborious piping job, so I’d love to see what you can do with them! We love breakfast around here…

joy, I just discovered your website thanks to a mention on cookthink and I am totally in love. I just gorged myself on your archives and I can’t believe I’m lucky enough to have come to joythebaker during the very month when you’ll be posting every day. be still my heart! :)

I second the christmas cookies idea. also, muffins! I have several recipes that I go back to time and again (pumpkin, banana, bran, and alice medrich’s chocolate and raspberry) but am always looking to add new, interesting (and moist!) recipes to the repertoire.

How about imperial cookies – you know the ones with shortbread cookies and raspberry jam in the middle? OR I’ve been making multi-grain bread in my bread machine only because I don’t want to risk wasting all that flour. Do you do bread? I’m sure anything you would suggest would be easy? yummy and nutritious.

I’d love to see you use the sourdough starter for bread. Or maybe pretzels?

And it isn’t your usual baking, but I’ve made pizza dough and now I want to make pizza sauce. I can’t figure out the difference between pizza and pasta sauce other than I can taste that they are different. Any ideas there?

Good-luck this month! I’m sure we are all in for quite a few treats. :) I would love to see your ideas for a breakfast that can be essentially made the day before, then quickly cooked the next morning. So often I want to make something in the mornings, but am too hungry to want to wait to whip-up something homemade.

Hi Joy! I was wondering if you could help me out with a recipe for a favorite treat of mine, pink lemonade cake? I’ve been searching for a recipe on this light, delicious cake but have yet to fall upon one. It is more of a springtime favorite I was sure to indulge in every spring back in NC where I grew up but since I’m living in Sacramento now, southern treats are always a nice way to take me back to my childhood :)

Joy, the thing I enjoy most about your blog is the photos, it lets me know what it should look like, and I wouldn’t have attempted sourdough without all those step by step pics.

How about showing us how to create those cupcakes with the blue and white frosting? Piping directions?

Maybe throw in the recipe for a couple of different frostings, besides the usual buttercream? I love the idea of a pink lemonade cake or cupcakes, with pretty pink frosting!

Great idea for the month…can’t wait to see what you’ll share with us. I’m curious about how you store all your baking paraphernalia. I’m sure you have the never-ending assortment of cupcake wrappers, parchment rounds, sprinkles, food coloring….It’s great to have on hand, but there has to be a practical way to keep it. Suggestions?

I’d love to see a recipe involving cranberry, lemon, &/or white chocolate. I had some permutation of these a few years ago in bar form, but sadly never got the recipe and can’t remember which two it was, so anything that would nicely combine the cranberry and lemon or the cranberry and white chocolate (all three?) would be great (and I know whatever you post on here is going to come out delicious).
