I had a bag of limes that needed to be turned into deliciousness (or into a dozen g&t’s) so I used this recipe. Sure this wasn’t the sexiest cake in the world, but for a summer Thursday night with close friends from my church small group, it was perfect.

Oh wow Joy. I’ve made MANY of your delicious treats, but this one is something special. It’s like lemon drenched lemon cake…but with lime. Oh my. I substituted vanilla soy milk for the milk, (it was all I had), but it worked out nicely. I also sprinkled the top with unsweetened coconut. NOM!

This cake is so delicious. It isn’t an ordinary boring cake, it’s light and limey and a bit crumbly. I really loved it, so did my husband, so did our 6 year old daughter. It’s a winner :-) Thanks again Joy, your recipes always shine!

Hello Joy! i have a question, howm many portions do you have with this recipe.. if i double it will it alter the result (it has happened to me with other recipes) beacause i have a birthday party y need a biiiig cake.. i do want this recipe because my husbando looooves lime. I just baked this cake. It’s taste nice, BUT how come mine is so oily and the middle of the cake just ‘sink’ down?? Any ideas what did I do wrong? :(
