Yea… that just happened. I just dropped that madness on you. I know… totally unfair.

Milk Chocolate Chip Pancakes

These Milk Chocolate Chip Buttermilk Pancakes will weaken all defenses. They’ll make you completely susceptible to lounging in bed for an early afternoon nap. They’ll make it even more impossible to remove yourself from the couch to get any weekend chores done. These pancakes are perfect for that epic unproductive weekend you’ve been planning. You were planning one of those weekends, weren’t you?

In short, these pancakes are a blessing from the heavens.

Milk Chocolate Buttermilk Pancakes

makes lots, enough for four people.

2 eggs
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
4 tablespoons butter, melted and cooled
½ teaspoons vanilla extract

1/2- 3/4 cup milk chocolate chips (depending on how chippy you feel)

oil or cooking spray (for cooking)

Step 1: In a large bowl beat eggs. Add buttermilk, butter and vanilla and mix well. Add flour, sugar, baking powder, baking soda, and salt. Mix well until mostly smooth. Fold in chocolate chips and let batter set for a few minutes.
Step 2: Heat griddle or pan over medium heat. Add a teaspoon of oil to the pan or spray with cooking spray. You can test to see if the pan is hot enough by adding a few drops of water, ifor when the drops start to dance its hot enough.
Step 3: Pour 2 Tablespoons of batter onto the griddle. Cook on the first side until bubbles that form start to pop. You can also gently lift up the pancake to make sure the bottom is not overcooking, if it is the pan may be too hot and you will need to adjust the heat. Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone. Let cooked pancakes rest on a heat proof plate in a 200 degree F oven until ready to serve.

I’ve always thrown chocolate chips in my box mix pancakes, but this time I decided to make the pancakes from scratch using this recipe. What a difference! My 19 year old son and his girlfriend both commented on how delicious these were, and they didn’t know they were from scratch, they just said how good they were! No more box mixes for me! These were great!

To turn soymilk (or any alterna-milk) into “buttermilk,” stir in a tbsp. of white vinegar and let it sit a minute. :)

Joy! It’s Sunday night and I’m ALREADY planning on making these NEXT SUNDAY! (Darn that taking classes on the weekend! Otherwise I’d be making them Saturday!)

I have tried to make homemade pancakes in the past, testing various other recipes. And have always ended up with flat pancakes. But these are awesome. They were light and fluffy. My husband and step-daughter and I all loved them. We increased the chocolate chips to 1 cup, which I thought was great but some folks might find a bit rich. I imagine they are also great without the chocolate chips, should one want to make plain pancakes….

Two words. utterly amazing!! makes me wonder why i never thought of adding chocolate chips even back when i was still using pancake mixes. I’ll never use pancake box mixes ever again! nothing can really compare to the fluffiness and flavor of from scratch, homemade pancakes. :)

Hi Joy…I stumbled upon your site months ago and what a gem of a find it was! Perhaps it was meant to be as I fancy myself an apprentice baker..or really one that just likes to bake!

I make these pancakes everytime the pancake urge hits – breakfast OR dinner! No more box mixes for me! I have a question though, is it okay to mix all the dry ingredients together and just store them in a jar or plastic container til the urge hits again? That would be a real time saver. I’m guessing it’s okay, but not quite sure about baking powder and baking soda being mixed together and just sitting them for weeks (as I surely would be making enough to last awhile!

I fell in love with American choc chip pancakes when I worked at summer camp, and I have tried so many different recipes, but they just never tasted the same.

Last night, I co-hosted a small dinner gathering for adults–no worries on my part. It went well, and I was calm.

But this morning–a morning I’ve been worried and stressed about for a few days now–I had to cook chocolate chip pancakes (as per a very specific request from a 9 year old girl) for a group of young girls. Kids are tough critics and I was worried. I was really worried Joy.

I made these pancakes. These fluffy buttermilk cakes studded with sweet chocolate chips were my savior this morning. I saw girls go back for seconds…and thirds…and I heard them whisper about how delicious these pancakes were. They were a hit! And Aunt Danielle is now in the running for best Aunt in the world. Thanks Joy. I owe you more than I can tell you :)

I have been drooling over foodgawker.com for the last week; I stumbled upon your blog through the Chocolate Brownie Cookies submitted there. Absolutely LOVE Joy the Baker. I made these pancakes for my 14 month old son this morning, slathered a little peanut butter on them and drizzled pure maple syrup over the top…he adored them. I would post a pic of the little guy attacking his pancake covered fork but I’m not sure how to do that! I will definitely be trying more of your recipes…thanks!

I have made this recipe many many times. My kids love it and I do too.

Today I made it with one egg instead of two, and increased the buttermilk to about 2 1/2 cups – so the batter was a little thinner. I thought the buttermilk flavor came out a bit more and it tasted great.

double posting, who cares, do you rub your griddle with butter to get that beautiful golden crust on your pancakes? I cant seem to get mine to look like that without slathering the whole thing with butter. And my first panacke is also a flop…. it gets eaten, but its still a flop.

These came out really well when I used a large cast iron pan with butter. Since the recipe calls for butter, I melt the butter on low heat in the cast iron, then pour it off into the batter and turn the heat up to get ready for the pancakes. By the time everything else is mixed, the pan is heated and has just enough of a butter coating left behind from the melting stage. With the cast iron, there’s no need to add more butter along the way, though you night need to add some for the last few batches if you’re using other pans.

1 cup milk plus 1 Tbsp of lemon juice (or vinegar) will substitute nicely for 1 cup of buttermilk.

These look delicious Joy! I know of your pancake obsession and I wanted to tell you about my brother’s pancakes. He puts a chocolate chip inside every raspberry, and then makes raspberry pancakes. When you go to take a bite, you have a gushy chocolate raspberry thing going on. It’s AMAZING! You should try it out sometime. You might fall in love with it! You might even want to marry it.

I made these for my friend (too bad she was on a diet) and she quit the diet a few days later, came over, and asked me to make them again for her! They are so good. If you were ever a child that went over to that friend’s house, and their mom/dad made those pancakes that you have never been able to get out of your head because they were so delicious, these pancakes are most likely the ones you’ve thought about all those years.
