I LOVE peanut butter...and have never attempted to make my own (guess I thought it was harder than it is). In July I adopted a pit bull, and, at 3 months of age, he has come with skin conditions and allergies--and while we try to figure it all out, I'm trying to avoid any sort of non-natural food, any type of grains, etc--so for Christmas I bought him a new kong toy and can't wait to make my own peanut butter to stuff in the middle of it...(*does it freeze well?) Going to try to make it with no oil and very LITTLE salt. I have a question though, I bought a bag of peanuts ( unsalted, in the shell), it says pre-roasted...so do I need to shell them and then roast again, or just go with it ?

i made this last night and it. is. AMAZING. so good - especially on ritz crackers!! :) other recipes i'd seen call for 1 1/2 to 2 tbsp peanut oil as well - would that make any difference? i'm already looking for excuses to use the peanut butter (other than just eat it by the spoonful)!
