Living in Mozambique with a sweet craving and found this recipe. You can imagine the oohs and gasps of goodness brought the neighbors over to see what we were so excited about. These pancakes. Me oh my. There were no words. We did have to make some substitutions: honey instead of syrup, no Cinnamon, nutmeg or raisins, and we used whole wheat for half of the flour. We topped them with a fresh mulberry pineapple syrup.
It’s been a few hours and there is still drool on my face thinking about them.

I made a batch of these for breakfast…so delicious! My fiance and I absolutely loved them. They had the perfect consistency as well as a great flavor. :)

Fantastic! I chopped up a banana instead of using raisins. Then we made pancake sandwiches with banana, PB, and chocolate chips in the middle… Yumm-o!!!!

I finally made these pancakes over the 3-day weekend. My husband loved them! The oatmeal cookie flavor is subtle – adding “real” syrup would probably have made a big difference (didn’t have it on hand). Another great pancake feather in your cap, Joy! Next up – the pumpkin ones!
