S'mores Brownies

Everyone has their own way of enjoying toasted marshmallows.  It’s very much a personal thing… this I understand.

I like my roasted, toasted marshmallows extra crispy… extra well done.  I want that sucker on  the end of the misshapen close hanger, stuck right into the depths of the fire.  I want it to come out flaming.  That’s right, I’m a marshmallow torch girl.

Apparently, the marshmallow torch is not how you make friends at all-girl sleep away camp.  I would always get groans of disapproval from the girls that were trying to keep their precious marshmallows just far enough away from the orange coals to perfectly toast them.  Maybe they were less than thrilled with my marshmallow torch because I usually managed to set at least one of their darling marshmallows on fire just out of sheer proximity.  I considered it a favor.  Them..?  Not so much.

But these brownies aren’t really about my summer camp misadventures, are they?  These S’mores Brownies are more about fudgy, dense chocolate that bakes up with graham cracker bits and toasted marshmallows.  Toasted, not torched.

There are few things quite as spectacular as a pan of warm brownies just about 15 minutes out of the oven.  With their  slightly crackled top and perfectly chewy  chocolate center, brownies are a simple pleasure.  These S’mores Brownies are  simply an improvement on something that didn’t really need much fussing with.  The result is a marshmallow topped brownie that’s so good, you might find ways to rationalize a big hunk for breakfast.  Chocolate can be breakfast too.  Life is entirely too short not to make a S’mores Brownie breakfast from time to time.

Print this Recipe!

  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter
  • 6 ounces unsweetened chocolate, chopped
  • 5 large eggs
  • 1 1/4 cups dark brown sugar
  • 1 cup granulated sugar
  • 2 teaspoons vanilla
  • 1 cup graham cracker, roughly crushed with your hands
  • 12 big marshmallows  (I also diced 6 additional marshmallows and stirred them into the batter. These marshmallows dissolve when baked, so you can leave them out, or throw them in.  Up to you!)

Preheat oven to 350°F. Butter 9×13-inch baking pan with 2-inch-high sides. Combine first 3 ingredients in small bowl. Stir butter and chocolate in a medium sized bowl over a  heavy  saucepan of simmering water.  Stir chocolate and butter in this double boiler until melted and smooth.

Beat eggs, sugar and vanilla in large bowl to blend. Stir in warm chocolate mixture, then dry ingredients. Fold in graham crackers.  Pour batter into prepared pan. Dot with 12 large marshmallows.  Bake until toothpick inserted into center comes out with moist crumbs attached, about 30- 40 minutes minutes.

Marshmallows will be browned and puffy but will deflate as the brownies cool.  Cool for at least 20 minutes than slice with a sharp knife, cleaning the knife with hot water if it gets too messy and sticky.  Serve or wrap individually in wax paper for storing.

I can’t believe it, I JUST posted my own version of smores brownies! But I’m not too proud to say, I think I like the looks of yours even better–why didn’t I toast my marshmallow?! Yum, yum, yum. Looks like brownies, round 2, is now on my to do list.

Marshmallow torch is totally the way to go. Flaming and gooey, so torch-y that it has to be beat out on the ground. The burned exterior is the best part and one of the best textural contrasts in the world of food is crunching through the brittle blackened part to get to the melty molten center.

Heather- Hm… Vegan marshmallows? I’m afraid I’m no help to you. I’ve only ever used the animal unfriendly type.

Amy- I think I used about 6 or 8 of the double stacked graham crackers. Just crush them with your hands lightly so they come out in big chunks and you’ll be just fine if you go over or under a cup.

roasting marshmallows: first I twirl them pretty high above the fire so that tiny light brown spots begin to appear then I pull them away. this heats them so that when I put them back for the second round I can ignite them, twirl long enough for flames to cover all sides and them blow it out ~ the result is melted on the inside and yummy blackened sweet on the out.

mind you I’m usually toasting them over my little weber grill and I’ve got 3 going at a time because my daughters still have understandable reservations about fire. these brownies look delish! I know that they’ll want to try them at first glance (did I mention my 7 year old is one of your fans?)

I love catching my marshmallows on fire. Mmm, they are best burnt…it’s the only way to ensure extreme gooeyness in the middle. These brownies look right up my alley. I can’t wait to try them out! How delicious!

Oh, I am so making these today. My family is coming into town tonight and we’re going camping to celebrate my little sister’s 18th birthday. These will be perfect around the campfire this weekend…though I might need to sample them today just to make sure they are edible. :-)

the girls at camp didn’t get me either…so my cousin and i unscrewed all the shower heads and put red kool aid powder in them. funny to me, not so much to them. i wish i had these brownies right now. perfection for the coming summer.

We love lots of your recipes, but being in the UK we sometimes have to compromise on ingredients. We are DESPARATE to try this gorgeous looking recipe but don’t really know what Graham Crackers are like. Could you give a brief description so we can find something like them over here please? Are they light, crispy, sweet, salty, crunchy, dense etc etc?

I just made these for my s’mores loving boyfriend and I think he’s in heaven :). The addition of the extra marshmallows was a fantastic idea. I used 8 stacked graham crackers (or half-grahams) and it gave every brownie a satisfying crunch.

You can buy vegan marshmallows at grocery stores like Whole Foods and other health food-type stores. I’ve seen them in the refrigerated section. Or you can buy vegan marshmallows online at places like http://www.sweetandsara.com/. Just do a search for “Buy Vegan Marshmallows” on Yahoo! and you will get lots of ideas.

These look AMAZING. I’ve been scouring the internet all day for a recipe where the marshmallows are cooked with the brownies and this is SO the winner, oh my!! But let’s face it, I will make a marshmallow matrix on top…

Question – Can I use semi-sweet chocolate? I’m not sure if the graham and marshmallow make up for it, but the Supernatural Brownies [Nick Malgieri] that I always make want semisweet squares (I just use semisweet chips), but have about the same amount of sugars as your brownies here. I’m wondering about the chocolate eating the graham and marshmallow tastes, or is the darker chocolate a better companion? Thanks!

hello!

i was trying to think of fun things to bake for my mom’s preschool end of the year picnic and i knew these would probably be a hit! so i just baked some up. i’m pretty pleased with them except that they turned out much more cakey than i would have expected. in fact, so much so that i am just going to call it “s’mores cake”.

i am wondering if i perhaps beat the eggs too much and too much air got incorporated into the batter; because in your photos they don’t appear to be cake-like in texture. all in all they are not too bad, but i think i would try and modify them quite a bit next time for more of a brownie result.

hi holly. these brownies are on the cakey side of the brownie spectrum. if you don’t like the cakeyness, you can either try to make them for less time, or use your favorite fudgey brownie recipe and simply add graham crackers and marshmallows. hope that helps!

bummer. these looked great. but I baked mine for almost 45 min. and still they were undercooked. might be good in an ice cream but I can’t tell, I have the worst cold ever and I haven’t been able to smell or taste (can hardly hear either!) for a few days. My batter also didn’t resemble your glossy one, but I hand wisked everything instead of using my mixer the battter was lighter in color and looked grainy. wondering if I should try again? feel like I lost my baking mojo :-(
