You know this guy, right!?
He’s my Dad. He makes some amazing pancakes… the best pancakes, the best tacos, the best sweet potato pie, the best tofu potato bake. He’s a champion in the kitchen.
He’s also a champion Dad. Top notch. The kind of man that will talk to you for hours about the intricacies of Alfred Hitchcock movies… when you’re eight years old, make your stuffed animals talk and have fake bowel movements, and microwave your ice cream so it’s not too cold. He’s the best I know. Happy Father’s Day.

Dad’s Buttermilk Pancakes
1 cup buttermilk
2 eggs
2 Tablespoons vegetable oil
1 stick unsalted butter, melted and cooled slightly
1 1/2 cup all-purpose flour
4 teaspoons baking powder
4 teaspoons light brown sugar
1 teaspoon salt
Whisk together milk, eggs and vegetable oil in a medium bowl, then whisk in the butter.
Stir together flour, baking powder, sugar and salt in another medium bowl. Whisk in egg mixture until combined.
Once combined, let the batter sit for 10 minutes while griddle preheats.
Spray a griddle or skillet with nonstick vegetable spray over medium heat. Working in batches of 3 (or 6 if your griddle will allow) pour 1/4-cup measures of batter onto skillet and cook until bubbles have formed on the top and sides of the pancakes and broken, about 2 minutes. Flip pancakes with a spatula (a super thing metal spatula works great) and cook until undersides are golden, about 1 minute more. Lower heat if pancakes brown too quickly. Serve with maple syrup or molasses.

Oh how I love, love, love your recipes! I’ve never, ever had issue executing one of them…until today :( I grabbed my whole wheat pastry flour instead of regular and the batter ended up thick like cookie batter(I even used a cookie scoop to portion and the little mound stayed mounded in the pan). If my waffle iron wasn’t in storage for our move, I would have tried the batter for waffles, which I imagine would have been amazing!. So much for pancakes today. I look forward to trying these again, when I DON’T grab the wrong flour :)

Ok. Another one of your Dad’s recipes is now a staple in my book. I just made these pancakes this morning and they were the best I have ever put in my mouth!!! Normally I do the wheat flour, bran and pecan thing in my pancakes, which are still wonderful. But this morning, after a long week of grad school, I wanted something classic, really yummy and not necessarily good for me. These were perfect. The 1 stick of butter was PERFECT! a STICK of butter??!! Wow, that’s a lot, in addition to the oil. I’ll have to give these a whirl – I’ve been having trouble getting my “light and fluffy” pancakes to STAY light and fluffy – they seem to collapse immediately upon entering the 200F oven where they are intended to stay warm while I finish cooking the rest.

Aaah, i have yet to taste american pancakes, i only make the thin ones or crepes, love them, but they seem to be an entirely different animal. :) And now the mystery of small tall round pancakes has been revealed: you have a special pan! That’s great that you spend so much time with your dad. My dad works all the time to support us so it’s hard to really spend time with him. I made him a nice card and bought him something really unique and thoughtful and left it on the table for him this morning.

My dad always made a fried egg samich. Plain ol’ white bread, fried egg, american cheese, and ………………. bacon! Oh, and lots of pepper. I loved waking up in the morning to that smell (well, waking up at noon….but it was still there!).

Hey my dad lives in LA too and HE makes the best pancakes too!!! He used to make them for us every Sunday before church. He put his engineering mind to the task of making them perfect so everything would be so exact, and the egg whites soo whipped up. They were so soft and delicious. I wonder if your dad and my dad could hold forth together on the awesomeness of pancakes? I bet they could!

I have made these pancakes every weekend (unless I’m out of town for work) since you posted the recipe ages ago. My husband refuses to let me make any other version, because he believes these to be perfection. In fact, I’m making some right now for a big ol’ Father’s Day breakfast, and he’s having a hard time keeping his fingers from snatching one from the plate before I’m done. So, a big “Thank you!!” to you and your Dad for helping us to create a family tradition that we hope to pass on to our kids!! :)

I know it isn’t normal or good for you, but I always love my pancakes a teeny bit underdone in the middle. My poppa would always make ’em for me special like that. I’ve found a good non-buttermilk recipe that I use all the time and we like to play with. Most recently we’ve tried adding little dabs of warm jam to the pancake when it’s first poured on the griddle, making jamcakes. Especially delicious with raspberry. Never found a buttermilk recipe I loved though. Can’t wait to give this one a whirl! Thank your dad for us.
