These are amazing! Light and fluffy and perfect. I added cinnamon and allspice then topped with homeade blueberry jam. So good, thanks Joy’s Dad!

I was looking for a buttermilk pancake recipe for tomorrow morning and I thought I bet Joy has one. Sure enough it is even for Father’s day. I am very intrigued by the tofu potato bake.

up until this recipe. i was not a fan of pancakes..they just didn’t do it for me. Denny’s was the only place that I would really eat them (and maybe twice a year at that)..I tried this recipe and holy smokes!! I LOVE PANCAKES!!! My little boy (3 yrd old) always asks me to make em!!! Thanks so much for sharing this great recipe Joy!!!
