Lemon Rosemary Palmiers

Let’s play a game called What’s on Your Nightstand?.  What?  Too personal?  Oooh come on!  We’re all friends here.  Let’s try to figure out what our night stands say about the state of our lives.

On my night stand is:

1 Ikea lamp.

A water color painting made by my aunt in the 80′s.

A cup of what once was hot lemon water with honey, now just a mass of lemon seeds at the bottom of a mug.

A glass bowl with a ring and a business card for a French bed and breakfast.

Two books:  Unaccustomed Earth and Seize the Day.

My credit card, and a small bowl with cookie crumbs in it… Lemon Rosemary Palmier cookie crumbs.

What might my night stand contents say about me?  I love a home furnishing bargain.  When I run out of tea I make do with lemons.  I can’t sleep in jewelry and I like to daydream about vacationing in the French countryside. I either read a book or go internet shopping before I fall asleep, and I eat cookies in bed.  All things considered, it seems like a pretty cushy and self indulgent life…. plus, cookies!

I’ve taught you how to make Palmiers.  Have you made them yet?  It’s amazing how easy they are.  The only trick is to get the right store-bought puff pastry.  Make sure to buy an all butter puff pastry like Dufour.  Puff pastries that aren’t made with all butter are liable to have all sorts of mystery fat in them.  Ick.

These Palmiers are flavored with lemon zest and fresh rosemary.  They’re delicate and sophisticated but delicious enough to munch on in bed on a Saturday night.

Print this Recipe!

1 package puff pastry

1 scant cup of sugar

zest of 1 large lemon or 2 small lemons

1 teaspoon finely chopped fresh rosemary

Preheat the oven to 400 degrees F. Finely chop fresh rosemary and set aside.  Measure out one cup of granulated sugar (it doesn’t have to be exact).  On a clean, flat surface rub lemon zest into the sugar using a bench knife or the back of a spoon.  The sugar will become fragrant as the zest is rubbed into it.  Sprinkle about half of the lemon sugar onto a clean work surface.  Unfold the thawed puff pastry onto the sugared surface and sprinkle the top of the pastry with the remaining lemon sugar.

The Dufour Puff Pastry unfolds out of the package just about the length and width you’re looking for.  You’ll just need to roll it to thin it a bit, extending it about 1/2 to 1-inch on all sides.

What’s that?  You have a little rip on the seam of your puff pastry!? Me too.  Maybe just try to patch that up a bit.  But really?  It’s not that big a deal.  Don’t sweat it!

Sprinkle the surface with fresh rosemary.

Your puff pastry should be roughly 8(to10)x12-inches in size.  Now start rolling.  Roll up the left vertical side towards the center seam.  Roll the right vertical side towards the center too.

Gently press together.  Wrap in plastic wrap and refrigerate for an hour, or until cold and firm.

Remove dough from the fridge and slice in 1/2-inch slices.  Place on lined baking sheet.  Bake in 400 degree F oven for 10 to 15 minutes of until golden brown.  You may want to rotate the baking sheet halfway through baking.  Keep a close eye on the cookies after about 11 minutes.  They might burn quickly.

If using just a greased and floured baking pan instead of a parchment or silicone lined pan, remove the cookies from the pan immediately after they come out of the oven.  If you’ve lined you baking sheet, you’re fine to let the cookies cool on the sheet.

  • Your nightstand sounds tastier than mine (a sunflower in a Fiestaware yellow vase, Henry James’ The Bostonians, the DVD remote, a glass of water, and my mouthguard for TMJ), even if there’s only crumbs.

  • These sound amazing! My hubby is not a huge fan of rosemary, and as I have to keep him happy, I’d like to substitute it with something else. Do you think thyme would work?

    As for my (Ikea) nightstand, I have a lamp of unknown origin (Target, maybe?), a glass of water, a pen and notebook (to capture all of my to-do lists and brilliant evil plans), several food magazines that I swear I’m going to read and clip recipes out of one day, and two books (“The US Intelligence Community” by Jeffrey Richelson and “Harry Potter and the Deathly Hallows”). I don’t know what that says about me other than maybe I need to straighten up a bit… ;)

  • My target nightstand holds a box of tissues, a lamp (though I don’t know why because I NEVER use) and whatever book I am currently reading (it was Julie & Julia, now it’s The Help by Kathryn Stockett). I don’t usually eat in bed, but cookies are tempting.

  • An IKEA lamp, L.L. Bean tick tock clock, phone, lilac smelling candle, novel (right now it’s The Center of Everything) & a glass of water on a ceramic coaster.
    Pretty boring stuff now that I look at it! Yikes!

  • Ooh cookies! My corner nightstand has my journal, a seashell lamp, a box of tissues, Jane Austen’s Persuasion, and LA Magazine’s Cheap Eats issue. Also, a little more dust than I care to recognize…

    a small art deco lamp (just love it) & inside the stand are printouts of your “how to’s”…& more of your recipes that i read & read & read…several ina garten books…& always a bottle of h2o…

    On my nightstand – Ikea lamp, an old mobile phone I use as an alarm clock, Taste by Kate Colquhoun, a watch that needs a new battery and my glasses.

    Inside my nightstand is chaos.

  • Oh, I never thought of adding rosemary and lemon zest to palmiers (which I make pretty often). I usually put some brown sugar, or add slivered almonds and raisins. Next time I’ll try your variation, it sounds delicious!
    I’ll probably keep it on my table though, because my nightstand says I’m a little maniacal : no food in bed… Just a glass lamp, a mini Paddington bear, a plastic firefly my mother gave me when I was 6, and Heat by Bill Buford. Oh, and hand cream and a chapstick (it’s the maniacal part again, I put hand cream before going to sleep to be sure not to put any on everything I touch!)

On my nightstand I have a lamp I got for my 10th birthday, a picture frame with my couisns, sister and friends from HS, a blue clock, a mug with pens and pony tail holders and barrettes, and a jewlery box that plays the theme from Romeo and Juliet (the Oliva whatshername version). No books..they are in a pile on the floor :)

    a glass no longer full of coolaid,
    a tuperware container with some candy in it,
    a dull folding knife,
    a dead cell phone functioning as an alarm clock,

A carved bone necklace, rings/earrings, a Laura Ashley lamp, Hello Kitty candy (a gift)…hair clips and hair bands…A small blue and gold elephant. Photo of my family in a pretty frame. A biottle of Tropical Island nailpolish…

  • Ah the night stand.

    Mine is the spare cane back chair that goes with our dining room table & when we need it for company the contents get dumped onto the bed rather unceremoniously. On it is: a letter from my mother, an empty water glass, a beautiful green glass lamp with leaves on the shade from Target, Circus of the Damned by Laurell K Hamilton (reading it to hubby), 1000 Years Over a Hot Stove by Laura Schenone, Buddhism for Mothers by Sarah Napthali, a pile of various PlayMobil warriors & their accompanying parts (left there by my son), my reading glasses and my cell phone which doubles as an alarm clock.

    Seems like it is definitely missing some cookies!

  • my night stand has cookbooks and design books and always has my computer which is with me when i go to bed and when i wake up, not enough hours in the day to blog, work on website, marketing for business, facebook group, twitter account, upload flickr photo–ugh, i think i will stick with some of those delish looking cookies you made. thanks for another great recipe.

  • Interesting, I’ve never thought of my nightstand as a reflection of my life— let’s see here….
    ~an owl lamp that I’ve had out for almost three years and only put a shade on it 2 months ago…
    ~an alarm clock (boooo)
    ~2 glasses of water (I don’t know why 2…)
    ~a framed card I got from a friend with 2 cupcakes on it that says: Take two and call me in the morning :)
    ~a goldish vase with fancy swirly sticks in it
    ~AND my mini bible and handout from church this A.M.

  • Am I the only one without a Nightstand? I feel so excluded… I do, however, have the edge of a bookshelf that functions like a nightstand might. It has 3 almost-full water bottles (what can I say, I’d rather refill once a week than every night), a bottle of vitamins, deodorant and my glasses which, in turn, have a goldfish sticker on the top of the right lends (I do enjoy goldfish).
    Now if only I can get some cookie crumbs on there…

  • First, I just made the nectarine cobblers (with peaches from the farmer’s market). My boyfriend and I polished off half of the pan for dessert!

  • Mmmm…I just love Palmiers. I love butter, so it’s a natural union, but adding the lemon zest and rosemary is just plain genius!

    Nightstand contents:

    -small silver vase with fake roses I got from the Goodwill
    -Broken alarm clock (very telling)
    -various earrings
    -book on organization ::snort::
    -Martha Stewart’s book titled Cookies
    -various devotionals
    -various hair accessories
    -2 cups of water because obviously I’m too lazy to dump one before I bring another one in there!

    ::sigh:: If this sounds like I’m unorganized and hairbrained then this is pretty accurate test. Who knew?…

  • Wow, I think everyone’s nightstands must be way bigger than mine — no way a cat would sleep on it! It’s tiny and from when my dad was a kid. It’s also very crowded! Right now it’s holding a glass ball lamp from Target; my CD/clock/radio; a photo of me, my brother, and grandparents, in a green frame; my journal; a book of sudokus; Hardcore Zen by Brad Warner; and Flatterland by Ian Stewart. Soon it will also hold my glasses and cell phone.

    Joy, have you ever used Trader Joe’s puff pastry? I just picked some up and haven’t used it yet, and was curious about your opinion of it.

    let’s see…. A lamp, of course, my old credit card that I can’t throw away because THAT’S how sentimental I am, a scarf my sister brought me from Nepal, the biography of Harvey Milk, a Redwall book, assorted seaglass and a single nail. (as in hammer, not finger).

  • Saw this recipe on the way home from church and made them for bible study with some puff pastry that had been sitting in the freezer for way too long. They were a huge hit, despite my husband’s insistence that the rosemary wasn’t a good idea. He admits he was wrong because he’s an amazing guy – and these were amazing little pastries!

    Alarm clock, water, tissues, copy of “The Shack” and Island Magazine. I dream of travel, too.

  • I also love Jhumpa Lahiri! But as of right now all her books are in my living room bookcase and my nightstand is home to Swann’s Way. There’s also an Ikea lamp(love the woven paper!) that is adjustable which makes it a convenient holder for my necklaces lol. There’s also a little porcelain abalone shell by roost that I picked up on a trip that holds my various bracelets and rings. Then just an oil diffuser, my asthma meds, and a reusable bottle full of water! Usually there’s a dessert dish but not tonight. Now I have an idea what to make for it this week! (though it might be those choco espresso sandwich cookies you shared…)

  • I am so making these manana…My nightstand has my new lamp with a tasseled lampshade, small silver tray with a pxi of me and my mum along with hand cream and chapstick. Sookie books, tissue box and sex toy box.

  • Sorry, no nightstand. Just a little shelf with a wooden case full of earrings, a cactus that will not bloom no matter how hard I try to coax it, and a toy rabbit and a toy hen and other random stuff. I’ve been planning to make palmiers in the autumn so thanks a lot for the recipe!

  • So nice nightstands! I don’t have a nightstand, a small cranny by the window and the side of my table function as my nightstand.

    The cranny holds my reader digests in chronological order since January, and the little pig that wears my glasses at night. My odd collection of cute stuff also reside there, while the chunky alarm clock that I never use, and my handphone which functions as a muchmuchmuch more effective alarm clock sit on the side of my table.

    That is such a nice recipe! Would definitely be making it once I get the time!

  • My nightstand holds a lamp in the shape of the Eiffel tower (target a few years back… tres chic), a small care bear doll, a coaster, an alarm clock, a box of tissues, and my cell phone charger. Oh the mysteries.

  • Oh yum. I love rosemary cookies. I’ve got two recipes that I’ve made so many times over the years, that for me, the smell of rosemary evokes thoughts of desserts and not lamb or other normal rosemary companions.

    Now I’ve got a third recipe! I’m so happy – these look delicious, and easy!

    My nightstand is tiny, which is good, because it would otherwise be unbelievably cluttered. Now it has a lamp, a clock, a nail file, whatever earrings I took off right before bed, a small notebook and pen, and a book of devotions. The library books I’m currently reading lean up against the legs of the nightstand.

  • These look amazing! I wish I had some puff pastry at home because I have some rosemary in the fridge that I’ll have to get rid of at some point (maybe a shopping run is in my future …).

    My nightstand has a clock, a lamp, a phone, and the remote for my heated blanket (it’s cold in Canada). At night there’s always a book on it, currently City of Bones. I could keep jewelry on it, but it would only last a few hours before the cats would find it and decide to keep it as a plaything. :-)

    The cookies look great!

    My nightstand is a laundry hamper with a cover because, even though we just bought the house we live in with my husband’s parents, we haven’t been able to get them to move out yet, so we’re still squished down in the basement like a bunch of teenagers. On it is the following:
    A camera case with a Fuji camera in it
    A makeup bag with all the makeup I own (not a ton)
    And in the last pile is the following:
    A stack of birthday cards that I have been given
    Opened mail
    2 Eat This, Not That! books
    Brother Odd by Dean Koontz
    A necklace in a box that my husband gave me for our 4th anniversary last year
    …and my iPhone balances on THAT pile while it’s charging through the night. It’s quite acrobatic. :)

  • The flakiness of that is sublime. And I’m glad someone else has random cups with bits of leftover something on the nightstand. It makes me feel better about being messy slash eating and drinking in bed… often.

  • The palmiers look delicious – I love palmiers but usually make almond or cinnamon palmiers. My nightstand – 2 netsuke, hand lotion, MP3 player & docking station, and the dehumidifier controller that monitors/shows the conditions in the laundry room!
