Sometimes I have imaginary phone conversations. Ok… this happens a lot. They go a little something like this:
Hello..? Yes, hi. I’d like to speak with the person in charge of making up all these clever food holidays like today’s Bacon Day. Oh, that’s you? Excellent. I have a few additional food holidays I thought you might like to add to your calender.
How about a pizza and beer holiday every Friday of the month. I mean… it’d just be really great if my calender could justify my food choices. No? You know, you don’t have to decide so quickly. Maybe think it over a bit. Still no? Ok… lemme run another idea by you.
Can we make everyday at 3:30 in the afternoon National-Go-Ahead-And-Eat-A-Brownie Moment? What? That’s too specific? I see. You might reconsider this one… the people are really calling for it.

Ok…. I’ll just stick to Bacon Day. Thanks for that one.
I gotta run. I have to tell all my friends about these Peanut Butter Bacon Cookies I just made! Laaaater!

How about Brown Sugar Bacon Waffles or BLT’s with Homemade Mayonnaise!?
Bacon and peanut butter!? Peanut Butter and Bacon! Yes. Yes yes yes!
I had never heard of this combination until a friend told me how her grandfather used to make peanut butter and bacon sandwiches for all the grandkids to eat. What? I need ts combination in cookie form and I need them in my face right now…. that’s what I thought as she was waxing on about her grandfather. Sorry.
So how do these cookies taste? So amazingly good! The cookie itself is a more delicate, crumbly peanut butter cookie due to the absence of butter and flour. Yup! Gluten free! The peanut butter taste is front and center. The bacon blends incredibly well with the sweetness of the cookie, adding an alluring salty, smoky, chewy bite. Hot dang! I will make these cookies again and again and again. Flourless. Butterless. Only five ingredients and one of those ingredients is bacon. The world just got a step closer to perfect.
Peanut Butter Bacon Cookies
adapted from The Gourmet Cookbook
makes 15 cookies about the size of your palm
1 cup all-natural chunky or smooth peanut butter
1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
1 egg
1 teaspoon baking soda
about 6 slices of bacon, cooked, cooled and diced
In a skillet over medium high heat, fry up bacon until cooked through and let cool on paper towels until cool enough to dice. Dice up and set aside.
Preheat oven to 350 degrees F.
Grease a baking sheet with butter and set aside. In a mixer combine peanut butter and sugars until well combined, about 2 minutes. Add egg and baking soda and mix for another 2 minutes. Fold in cooked bacon. Roll into large walnut sized balls and create a cris-cross pattern with a fork. If you’d like, roll the dough balls in granulated sugar before making the cris-cross pattern. Bake for 10 minutes, until lightly browned. Cool on a baking sheet for five minutes, then transfer to… your mouth.

my boyfriend asked me to make peanut butter bacon cookies not even an hour before i saw this post. of course once i saw the recipe i figured it was fate that i had to make them [although i did add chocolate chips to mine ;)]. these were a huge hit at the bbq i went to sunday evening as well – once people got past the strangeness of having bacon in cookies.

I made these last night and put chocolate chips in half of the dough. Both were yummy, but the choc chips may have been over the top. The kids tried to eat all of them. I told my neighbor and he said, “Bacon what!, Did you bring ‘em?”.

Hi there. Finally… someone who knows about the amazing pb and bacon combo! For years my father made a toasted bacon and tomato sandwich with mayo (we use miracle whip) and peanut butter! It is amazing! No lettuce. Everyone I tell about this sandwich looks at me like I’m crazy but it really is soooo good! I’ve converted a few people.

My mom will be so happy to hear about this recipe! She loves bacon and peanut butter sandwiches, and got me addicted to them when I was a kid. Everyone always looks at me like it’s the most disgusting thing ever when I tell them I love those 2 things in a sandwich, lol. There’s something about that salty sweet of the bacon that matches up with the peanut butter so well. That and who can resist when the bacon is still warm and gets the peanut butter all melty… Mmmmmm! I can’t wait to make these!
Oh man, are these good! My husband is in heaven. The bacon is…not a distinct, separate flavor, but an amazing enhancement to the peanut butter. I don’t even LIKE peanut butter and I love these.
I made these yesterday…we found them to be ridiculously too sweet, especially if you roll them in the sugar as well. Made them again this morning leaving out the 1/2 cup of white sugar; only used the 1/2 cup of brown sugar and leaving out the rolling in sugar as well. NOW PERFECTION IS OURS!

I wish I knew about this recipe 4 years ago…this was the only weird thing I craved when I was pregnant with my son…peanut butter and bacon. I am going to have to try it out and see if it would have satisfied that craving.

these cookies went so fast that I didn’t have to think about whether or not they needed refrigeration. I think to be safe, yes, they should be kept in the fridge. You dont want to experiment with bad pork, right?
Once bacon is cooked the chemicals that make it “Go Bad” and rot or grow mold etc, are Eliminated….
I havent tried these yet but all of these ingredients are safe outside of refrigeration.

Im defenitly going to make these but i think im going to make my own peanut butter for this. Ive been wanting to make homeade PB with my kids anyway and this just gives me a giant excuse to do so. Unless you shell out like 6-7 bucks for a jar of PB its all full of junk you wouldnt want to eat.
I made these last night with some leftover turkey bacon and they were delicious! We are having a snowy day today and I wanted a special treat for my girls to have with something hot to drink in front of the fireplace this afternoon. Perfect! There would probably be a bit more bacon flavor if I’d used the real stuff, but this definitely works :) And it suits my pregnancy cravings just fine!
I can’t wait to try these cookies. I had no idea so many people did the pb & bacon sandwiches. My dad would make these for us on occasional Sundays(they were such a treat) He would take toasted bread, spread pb on it take a piece of bacon and then we would dip it in coffee. My dad passed away almost 7 years ago, so when I am missing him on Sunday mornings this is my treat to myself. I don’t tell many people cause they would think I was nuts. YUMMMMY! Maybe my son will eat these…

This is the exact recipe I use for my PB Cookies. And now I must try them with the addition of Bacon. I may try this this weekend for our Bible Study’s group time!

I liked this simple 5 ingredient recipe. My favorite part was transferring them to my mouth. See I can follow instructions.

I made a somewhat similar mistake, then realized I set the temperature to 300° F (I guess the sugar mixture melts at a higher temperature). It might be your oven; I would recommend that you get an oven thermometer to be sure it’s heated to 350° F.

Monday 1st Attempt – Success I made them w/o the bacon (couldn’t wrap my head around the combination) my co-workers loved them and convinced me to make them with the bacon so I did.
I re-read the recipe b/c I couldn’t figure out why my 1st batch came out thin and crispy so I re-read the recipe and saw the peanut butter should have been “all-natural”…..ahhhh the error of my ways
Wednesday 2nd Attempt – Smashing Success I could have eaten the entire batch uncooked! But since my co-workers were eagerly expecting them that just wouldn’t do.

OMG, I found this recipe yesterday. “Peanut butter bacon cookies?!?!” I said to myself no way. I had everything to make them so it was the first thing I did when I got home last night! My husband was skeptical and so were my kids.. making the confused, scared, baking away from mom because shes a freak motions! Needless to say, everyone tried one and was utterly amazed by how delicious they are! I brought some for my co-workers today and they ironically had the same reaction as my husband and kids but after that first bite they tried to take the bag away! They are hidden now because the rest are for my mouth :)I guess next time I need to double the recipe, maybe even triple! Thank you so much for this recipe!
can i just ask: after you roll the cookies into balls, do you bake them as is, or do you have to press them out flat? cos it’s not stated there, and i’m a little nervous if the cookies will spread

i do have a problem with flourless cookies cos the last time i tried making flourless peanut butter cookies they didn’t bind together and i ended up with gloop. what can i do to make sure these bind together into balls? is it due to the peanut butter?
