White Chocolate Macadamia Nut Cookies

If this blog were written by 13 year old me instead of 28 year old me… I can safely say that I would blog about these White Chocolate Macadamia Nut Cookies every. single. day.

One bite of these cookies and… oh heavens!  I feel like I’m being dropped off at the mall to meet my friends on a hot summer day.  We speak Gibberish and Pig Latin.  We are fluent enough in both made up languages to combine the two into one mega made-up language.  It’s pretty sick.

One bite of these cookie and I have tragically frizzly triangle hair and my twenty dollar allowance in my pocket.  My friends are trying to convince me to see Jurassic Park and all I want to do is sit on a bench with a bag of White Chocolate Macadamia Nut Cookies from Mrs Field’s and try to muster up the courage to go talk to the cute cashier at Sbarro Pizza.

One bite of these cookie and, yes… I’m wearing overalls.  Yes.. I only have one strap buckled.  Yes… one hanging strap on overalls is super cool.

Who knew one bite of a cookie could be so transforming…. and awkward.  It’s a good thing I don’t make these very often.

White Chocolate Macadamia Nut Cookies

These cookies are a sweet treat.  Boy oh boy are they sweet.  Between the brown sugar and the white chocolate chunks… wowza!  Sweet.  These days I like mine best with a milky cup of coffee.  The browned butter adds a lovely nuttiness to the batter, kicking up the lovable factor on this already stellar cookie.

Brown Butter White Chocolate Macadamia Nut Cookies

adapted from Betty Crocker

makes 2 dozen small cookies

Print this Recipe!

1/2 cup (1 stick) butter, don’t even think of using margarine

1 cup packed light or dark brown sugar

2 Tablespoons milk

1 large egg

1 teaspoon vanilla extract

1 3/4 cup all-purpose flour

1/2 teaspoon baking soda

1/8  teaspoon salt

1/2 coarsely chopped macadamia nuts

1 cup white chocolate chunks

White Chocolate Macadamia Nut Cookies

Preheat oven to 350 degrees F.  In a medium saucepan melt the butter, swirling and stirring the butter until nicely browned bits appear in the bottom of the pan.  This may take about 5-7 minutes.  Once the butter is browned, remove pan from heat and set aside to cool a bit while you measure out the dry ingredients and set them aside.

In the bowl of a stand mixer add the brown sugar and slightly cooled butter.  Beat on medium speed for about 2 minutes.  Add egg and beat for one minute more.  Add milk and vanilla extract and beat to incorporate.

Turn the mixer off, scrape down the sides of the bowl and add the dry ingredients all at once.  With either the stand mixer on low, or by hand with a spatula, incorporate the dry ingredients until just mixed in.  Fold in the chopped nuts and white chocolate chips.

Scoop two teaspoon sized balls onto a lined baking sheet.  Bake for 9-11 minutes or until cookies are deliciously golden.  Remove from oven and let rest of the baking sheet for 3 minutes before removing to a cooling rack.

Is it bad I wanna make mine with honey macadamias? There is no excuse I can think of for that much sugar but I still want it.

Yes! One strap overalls! My brother just bought overalls, and I tried to convince him to wear them with only one strap done.

Mmm…recipe looks good. I make these in bar-form, and I’ll have to try browning the butters! Sounds tasty.

i made these today and they are awesome! thankyou so much for such an amazing recipe joy! ive never made brown butter before so it was a bit nerve wracking but it worked just as you said! i put mine in the freezer before i cooked them so they would stay puffy, i think i left them in there a little long, they didnt change shape! right or wrong, they were still delicious, thanks again!

Oh my goodness! I though my friends and I were the only ones who mixed Gibberish with Pig Latin, thinking we had invented some crazy secret new language! Hilarious. And since I am 28 and grew up in SoCal, I totally remember the overalls and all that. Ahh, the memories. Oh, and btw, the cookies look great!

Just finished baking them, and I could hardly restrain myself from eating them all fresh out of the oven. I skipped the nuts though and used 300 gr. of chocolate.
It’s one of the best choch-chip cookies I have ever had (and I had plenty…)

I too had the dreaded triangle hair, and it was about at age 13. Not so much fuzzy; more along the lines of ultra voluminous. Then I lamented to the volume, and now I’m sitting here at 25 with limp, flat, thinning hair [what?!!] desperately praying to have my volume back. I bet you don’t miss your frizz, though!

So, I just, just made these and had to tell you, that these are friggin’ amazing! I am not wearing one strap overalls but neon pink and green spandex with crimped hair and teased bangs! I almost ate all the damn batter before I got it on to the baking sheets…please don’t judge me :)

Dear Joy,
Thank you for this recipe. I made them for my dad on Sunday. The whole family loved them! My mom is going to use this dough in place of the toll house recipe from now on. The browned butter really takes them to the next level. Magnificent.

Hi Joy

Wow! I only just recently stumbled on your blog.. how did I miss all this time? i must have been hiding under a rock! Anyway, i made these this afternoon after trying to decide for over an hour which recipe to try.. OMG!!!!!! they are truly divine! my husband of 6 weeks couldn’t stop eating them and now thinks that I’ve been hiding this domestic /baking goddess from him all this time..little does he know that its just your recipe thats brought out the domestic goddess ;)
Anyway, I will definitely be coming back for more..so dying to try out the chocolate peanut butter cookie dough cupcakes!!
