My Favorite Scrambled Eggs

Eggs 

These eggs aren’t the only thing that’s scrambled.  

My brains…. also pretty scrambled right now.  

As far as I see it, there are two solutions to the scrambled brain mess that I’ve got going on inside my head right now: a whole weekend worth of sleep or a bag of fun size Snickers bars.  

Aaaand Snickers it is… but first, let me show you what I eat morning, noon and night:  scrambled eggs.  

Eggs 

Are you picky about how you cook your eggs?  Maybe a little?  That’s no crime… everyone likes their eggs a different way.  I’m more of a dry scramble kind of girl.  Here’s my step-by-step guide to eggs for one.  

Start with good quality eggs.  Fresh medium or large eggs from the farmer’s market are mighty fine.

 Break three eggs into a bowl.

Beat eggs lightly with a fork.  

Eggs 

Melt just over a tablespoon of butter in a pan over low heat.  Add eggs and stir eggs immediately and constantly with a wooden spoon.  

Eggs 

It may take 3 to 4 minutes for the eggs to become just set but still creamy.  At this point add a scant tablespoon of heavy cream,  a small pat of butter and a generous pinch of salt.  Continue to stir.

Eggs 

When eggs are scrambled to your liking, remove from the pan, top with a touch more salt and fresh ground pepper, and serve with buttered toast.  I garnished my eggs with nasturtium petals (they’re pretty), but chives are also lovely.

I absolutely love scrambled eggs!! Best with a bagel and smoked salmon. Although poached eggs are up there too. I can’t make my mind up!

Loooooooove scrambled eggs, it´s my favourite comfort food, eaten with well toasted, buttered sour-dough bread. I heat up some sunflower-oil in a pan and add maldon salt and a pinch of cayenne, crack two eggs directly into the pan and stir with a wooden spoon until they are just right:)

Scrambled eggs may seem simple to make, but some people make them really pathetically. Yours looks very good. I’ve never heard of adding cream to eggs. I just use milk. Now after seeing this, I’d love to try it with cream. And I’ve never seen eggs garnished with petals before. That’s too cute :)

If ate scrambled eggs each time my head was in a scramble, that is really all I would ever eat, seriously. I have never made mine with heavy cream, I feel like that might be the secret I had missed out on.

I like adding herbs to mine, and I usually add milk and the herbs before pouring the eggs into the pan. Great on a slice of homemade brown bread!

Scrambled eggs are my GO TO for a quick supper when I am in a pinch for time.. or feeling no idea for supper! Add a meat and you can have a meal quick.. homemade biscuits don’t hurt either !!

I, too, am a lover of dry scrambled eggs, to the point that I actually like them a bit brown on the edges – no lightly cooked eggs for me!

Say what you will regarding a post about scrambled eggs, but I just learned something new. I never knew that you could add your liquids to the pan when the eggs are almost done cooking. I’ve always added them when scrambling them. I am gonna have to try this!

when it comes to eggs, soft-boiled & scrambled i am particularly fussy about (also potato salad & bread-based stuffing). mmmm-love the recipe, will have this for supper!!!

I love my eggs sunny side up…but that means eating tons of bread to gather all the good stuff. So no it’s scrambled for me and I like them well done. But really, I can eat eggs any which way…except raw.

Hey Joy! There are so many ways i like my eggs but, scrambled is my fav. Salt, peper, a teaspoon of bacon drippings and a splash of half & half is how i cook ‘em!

Did you ever add allspice to your scrambles? My husband does this and it. is. delectable.
Oh, and cheese is always favorite, too, served with oatmeal or grits and toast. Mmm. Breakfast.

I read about putting cream in scrambled eggs in Julia Child’s My Life in France book, and I’ve been doing it ever since. You’re right, it makes the BEST eggs, and we enjoy them often like this. You’re the only other person I’ve ever seen do it!

I like your style of dry eggs. I throw smoked salmon in for the last 30 seconds and it is so yummy. Great on a croissant.

I make mine similarly. I find that if I mix the tablespoon of heavy cream into the eggs while I scramble them it causes most of the egg whites to incorporate better, and I cannot stand to eat scrambled eggs with visible egg whites. Then I add some dried herbs – basil, Trader Joe’s 21 seasoning salute, or herbes de provence (or all) and sea salt. I put a small amount of olive oil in the pan and cook over medium/low heat. The important thing is to take them off the heat entirely before they are completely done and let them finish cooking with the residual heat.

This is the only way I can actually eat scrambled eggs that I’ve made myself. Otherwise, if I see the whites I get nauseous and can’t eat them.

I eat my eggs scrambled every morning! First, I put butter in my scramble egg pan (yes, a dedicated pan), I let it melt, swirl it, then let it brown a bit. Whisk the eggs (with cream, as a treat on the weekends) then put i the pan, with a sizzle. I like my eggs pretty dry. I love the browned taste the butter gives. Now, some sprouted grain toast (must add a healthy touch) with butter and homemade jam. I love breakfast. Don’t tell my family, it is why I get up in the morning.

My babies (well, they are 2 1/2) love scrambled eggs! They eat them about everyday, since we have hens that lay several eggs a day. However, I get tired of them after a while. I will have to try them this way for variety. The heavy cream is a great idea!

Mmmmm – Love scrambled eggs. I add chopped tomato to mine, with a little seasoning. If I’m feeling froggy, I’ll add some pungent hard cheese on top. :)

Mmmm. I’m never a huge fan of scrambled eggs (just lots of ways I’d rather have my eggs), but you make them seem so appealing and much more flavorful than the average :)

Thank you, thank you, thank you, for this recipe! I am a decent cook, but for some reason I have never been able to make good scrambled eggs. I’m vegetarian and I really need eggs in my diet, and now, after following your recipe I can finally make yummy scrambled eggs! (My 18 month old confirmed they are yummy as well). Muchas gracias!

You just can not go wrong when you add heavy cream to…. well, anything.
Somehow, though, it never occured to me to add it to scrambled eggs.

Can’t wait to try this in the morning! Although the only eggs I have are cheap grocery store eggs not lovely fresh farmer’s market ones. But I do have cream and butter so I’ll see how it goes! Thanks for the recipe!!

This is my favorite dinner. I’m so glad others have come to appreciate the brilliant moment there can be late at night with a plate of eggs and toast. MMmmmm. I’m hungry.

Never tried the cream added after cooking a while. Does it make it creamier? I usually add just a bit of cheese (ie: colbyjack) to make them creamy. Gosh I’m hungry!

Since I had beef stew for breakfast, I think I’ll have scrambled eggs for supper. I didn’t know anyone else added a touch of butter towards the end. I also love to add cheese, dill, and/or finely chopped sweet onion.

It’s first thing in the morning and that looks amazing. I usually add a little bit of milk to my eggs as I never have cream in the house. I can eat eggs anytime of the day.

I am a super picky egg eater: scrambled only, need to be very dry with NO browning, and usually they need to be in a wrap or sandwich form. I usually mix some cheese & milk into the scrambled mixture & a little oregano. Yummy! Last weekend I put my eggs in a tortilla with jalepeno refried beans & baked it until the tortilla was crispy and it was SO GOOD!

Ah sounds delicious! We are fortunate to have parents who live in the country and have chickens that lay large pretty brown eggs. And free at that! How much better could it get, my girls love eggs and cream, thanks for sharing.
