I made this today in two loaf pans (so I could share with a nice neighbor). It was not quite enough batter for two cakes, so they are a little short, but the taste is great! I used nonfat vanilla Greek yogurt (Trader Joe's) and it was delicious! What a great consistency - such a light cake, but the apples give it a little heft. Delicious!
