Eggnog Pancakes

You should know that I’m going to capitalize Eggnog in this here post. If that bothers you…. apologies.

My Grandfather is the first person to pull a carton of grocery store branded Eggnog out of the refrigerator every year about this time.  When I see him reaching for the carton on the refrigerator door, I avoid all eye contact.  There is no offering.  There are no questions.  If Papa decides to pour you a glass… and it will be a GIANT glass… then you have to sit there, and drink every last bit… unless you want to be called a goshdarm vegan hippie.  Sure.. being a hippie might not be all that bad… but…well Eggnog shouldn’t be punishment and hippie shouldn’t be a bad word.  Dang!

So!

To avoid cartons of Eggnog coming from my fridge, I’ve created an Eggnog flavored pancake.  Not a dollop of actual Eggnog in sight.  Nothing to worry about here.

Can I tell you something about these pancakes… you know, because you’re here and all… they are crazy/heck yes/ omg good.  Are you thinking what I’m thinking?  Weekend breakfast?  The answer is… yes!

Eggnog Pancakes

I’ve broken down Eggnog into a few simple elements and thrown those elements into pancake batter… not all that genuis, but outta this world delicious.  All you need to rally that spot on Eggnog flavor is a bit of brown sugar, freshly grated nutmeg, eggs, milk and whiskey or rum.  If you don’t want to use the alcohol for your pancakes… well that’s totally understandable.  A good dose of pure vanilla extract will treat you just fine.

Egg Nog Pancakes

This recipe make enough pancakes for two.  Double the recipe to make a family sized portion.

Print this Recipe!

1 cup all-purpose flour

1 tablespoon brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

heaping 1/2 teaspoon freshly grated nutmeg

1/8 teaspoon cinnamon

pinch of ground allspice

3 Tablespoons butter melted until browned

1 egg

1 cup buttermilk

1 Tablespoon whiskey or spiced rum or 2 teaspoons vanilla extract

butter or a lightly colored oil for cooking pancakes

maple syrup for serving

In a small sauce pan, melt butter until much of the water has evaporated and little brown bits appear in the bottom of the pan.  Remove from the flame and add the nutmeg, cinnamon and allspice.  Set aside to cool a bit.

In a small bowl, beat the egg with the buttermilk.  Add the melted butter, being to sure to scrape all the browned bits and spices into the buttermilk and egg.  If the butter seizes up a bit in the cold milk, that’s ok. Add the whiskey/rum or vanilla extract and just whisk it all together.

In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt.  Add the wet ingredients to the dry ingredients and stir to incorporate.  Don’t overmix.  It’s ok if there are a few lumps.

Let the batter rest, untouched for 5 minutes while you heat a griddle or skillet.  Add a tablespoon of canola oil or butter to the hot skillet.  Dollop heaping tablespoonfuls onto heated and oiled skillet and cook until evenly browned, flipping once.  Place cooked pancakes on an oven-proof plate in a warm oven until ready to serve.

YUM!! I adore pancakes. They’re so filling and warm. And eggnog is so wonderfully wintery! I’ll probably take your advice and use the vanilla extract in place of alcohol, since I do think it should be at LEAST noon before the rum comes out!

Yum! Around here, we love eggnog and we love pancakes! In fact I just made a batch of homemade eggnog since we can’t buy it where we’re living. And i was thinking… I wonder if there’s any way to make eggnog pancakes without just replacing the milk with my precious eggnog!!! And here you are to save the day. Thanks!

I do like Eggnog, but only my FIL’s special recipe…which being preggers this yr I can not have. I will def try these out for a weekend breakfast. Do you think I could replce the buttermilk with anything?? My DD can not have dairy..I dont know if non-dairy there is anything as thick as buttermilk.

Oh yum. Who doesn’t want a little alcohol in their pancakes, that’s just crazy talk. Instead of maple syrup I’d serve them with a quick brown sugar bourbon (or whiskey) sauce to bring the flavors home.

This sounds fabulous. I can’t wait to make them. My husband just bought spiced rum too! Every Saturday morning in our home we have what we call special breakfast. It consists of either pancakes or waffles, bacon and eggs. Oh and we have one of those whip cream dispensers like at Starbucks. So when we use that it makes it extra special. I can’t wait for Saturday!

Aw man, Joy, you know I just recently tried your Chai Spiced pancakes and loved them, so today I went to the store and I was all looking forward to trying another of your pancake recipes, and here this one is, and I love eggnog, but… the store had no buttermilk! Well it had buttermilk that expires in two days and I want pancakes Christmas morning. Fail. I’ll try these as soon as I can get my hands on that coveted dairy product.

I am not the biggest eggnog fan in the world, mainly because it is so thick that it makes me feel sick after a few sips. These pancakes are the solution to this because I can get the delicious flavor without the texture!

Hi Joy,

I know you had the cupcake picnic this summer but I’m thinking with your love of pancakes (and so many others of us that just love those warm circles of joy) the next event you do should be a pancake breakfast. Maybe not even during breakfast hours…perhaps an evening pancake breakfast to keep everyone on their toes!

Mmmmm…I am not a fan of eggnog but I just might have to try these. I know I will be making the oatmeal cookie pancakes for Christmas breakfast!!!

Yum! Yesterday I was in Williams-Sonoma and they were giving samples of eggnog waffles and pancakes. Nice and nutmeggy, but no real whisky flavor. So, they could not possibly be as good good as this. Who doesn’t want some booze with their breakfast for the holidays?

I just enjoyed these for breakfast – yum! Unfortunately, I forgot the rum/whiskey! DUH! I also used skim + a dash of vinegar instead of buttermilk, but they ended up a bit thin. I should have nixed the baking soda in favor of a full teaspoon or two of baking powder. Oh well – the flavor was still fabulous!

I second Kristen D’s motion about the plates; they are always gorgeous! You should mention the plate in your post… :)

I’m so intrigued by these. You always have the most interesting creations on here. Like the root beer float cake from a few months ago (huge hit with my friends and their family, by the way), I can’t resist making some kind of food inspired by a favorite beverage. You rock!!
