Vanilla Cupcakes:

from The Hummingbird Bakery Cookbook

makes 12 cupcakes

Print this Recipe!

1 cup all-purpose flour

a scant 3/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

pinch of salt

3 tablespoons unsalted butter, at room temperature

1/2 cup whole milk

1 egg

1/2 teaspoon vanilla extract

Preheat oven to 350 degrees F.

Put the flour, sugar, baking powder, baking soda and butter into the bowl of a stand mixer fitted with a paddle attachment, or use a handheld beater and beat on slow speed until the mixture is a sandy consistency and everything is combined. Gradually pour in half of the milk and beat until the milk is just incorporated.

Whisk the egg, vanilla and remaining milk together in a separate bowl for a few seconds, then pour into the flour mixture and continue beating until just incorporated. Scrape any unmixed ingredients from the side or the bottom of the bowl with a rubber spatula. Continue mixing until the batter is smooth. Just a few minutes. Do not overmix.

Spoon the batter into paper lined muffin tins, dividing between the 12 cups. Bake for 20-25 minutes or until light golden and a skewer inserted in the center comes out clean. Let the cupcakes cool slightly in the pan, then turn them out onto a wire rack to cool completely before frosting.

Chocolate Ganache:

3/4 cup mini semisweet chocolate chips (I used chocolate chunks)

1/4 cup heavy cream

Put chocolate chips in a small bowl.  Bring cream to a simmer in a small heavy saucepan.  Pour cream evenly over chocolate.  Let stand for one minute to soften, then stir until smooth.  If frosting is too loose to spread, let it sit at room temperature for 10 to 30 minutes, stirring occasionally, frosting will continue to thicken as it stands.

Top vanilla cupcakes with chocolate ganache, slightly sweetened whipped cream, slivered almonds and a cherry.

Serve immediately.

    1. Hello Maya! Normally I would say, sure use skim but it really does benefit from the full fat content in whole milk!

  1. Gorgeous! I’ve been eying these for some time. I will finally make them this weekend as the centerpiece of my daughter’s first birthday. Thanks! As always, you are the greatest, no hyperbole.

  2. I’m still learning from you, but I’m trying to achieve my goals. I absolutely liked reading all that is written on your website.Keep the tips coming. I loved it!

  3. I want to make these for my daughter’s birthday party, but I’m concerned about the “serve immediately” part. I’d rather have them made ahead of time, rather than trying to assemble them at the party. I wonder what would happen if I assemble them early and refrigerate them.

  4. Joy, I just wanna let you know that we made these! They were so cute though of course yours are prettier- we had red sprinkles and I think the pink is a lot cuter. They only took around 15 mins in my oven. Also, I think it would be a good idea to put some ganache inside the cupcake- like a chocolate filling, cause I think, while yummy, I could only really eat the top of the cupcake that had the toppings. The cupcake needs the flavors of the toppings to complement it. Also, this was the very first time that I made my own ganache and whipped cream from heavy whipping cream, and I can’t believe how accomplished I feel to have made these cupcakes entirely from scratch, haha.

Yay, for making another Joy recipe:)

  5. How do you make your cupcakes come out so flat and perfect on top? The tops of mine always come out misshaped and lumpy! I can fill them halfway and they still have a mountain on top. What am I doing wrong?

  6. Hi Joy,
I made these yesterday. The batter tasted delicious. They baked buttery golden brown. And they sunk in the middle. I mean SUNK! I am an avid baker and i haven’t failed in the kitchen for a while. So i wanted to thank you for the humbling experience. Not sure what went wrong. The batter was yummy enough to try again.

  7. I’ve just been for a run and despite leaving this page up on my laptop, these lovely cupcakes were completely conspicuous by their absence on my return. What’s up with that? Anyone would think my family can’t cook or something.

  8. joy, no words can explain how AMAZING this cupcake is. i made it last night for my friends birthday and EVERYONEE loved them! i even added some chocolate ganache in the middle so they all got a little surprise when the took a big bite!

work is never to dreadful when i’m reading your blogs!! thank youuu!

  9. These look so yummy! I think these will be perfect for my daughter’s sweet shoppe birthday party! Thanks!

  10. I LOVE THESE CUPCAKES. Seriously, there better than sliced bread. I made them a few weeks ago (but I made a pack with myself to make something new once-twice a week) So I haven’t had time to make them sense, but I’m craving them and making them again tonight. Absolutly amazing.

  17. i love your hot fudge post before this… I wasn’t convinced at first that hot fudge is the answer to all questions, but now i’m a believer!!!! This hot fudge sundae cupcake is so divine!!! =) love love love your blog =)

  18. JOY! I have a question for you!!! I have two sons, no girls. But we have four girls in our congregation. So, since my sweet boys won’t wear pink, dresses, ribbons in their hair, etc. I have decided to have a Pink Pajama Party! Saturday they are coming to my house and we’re eating pink cupcakes, drinking pink lemon aid and pink milk, and doing mani-pedis and other fun girly things.

Sooo, Oh Diva of The Bakery! What cupcake do YOU recommend!?!? Any cupcake could have pink-tinted frosting. But I need something that will be scrumptious where I won’t be left with a couple dozen left-overs to add to my tummy. ;)

TIA and LOVE your blog and these cutie-patootie cuppy cakes! So sweet.

Btw…you are invited too. It’s 12:30-4:30 on Saturday. I live in Texas, book your flight early. *wink*

  19. How do you influence the final shape of the cupcake? These are really flat (maybe even a little concave), perfect for the topping, but some cupcakes are rounded or domed.

Looks good as always, no matter what the shape!

  20. What I wouldn’t do for one of these right now! So gorgeous – and delicious too, I bet.

Unfortunately, I’m just too busy at the moment for these…but I’ll keep them in my back pocket!

  24. We’re satisfied with you too Joy. Especially because you call sprinkles “jimmies”! My husband calls them “hundreds and thousands” it’s a U.K. thing apparently…

    1. ooohh, i almost forgot… i meant to ask you, how do you generate traffic to your blog? (which i absolutely love btw!) i mean when you started off, what did you do so people would find out about your blog? you see i’m a total newbie at all this and just started my own blog and i was just wondering how will people ever know it exists at all?!

  25. Wow! I hope I can get my cupcakes to bake with the ‘cup dent’ in the middle, more room for all the chocolatey goodness on top! *Love*

  26. Dude, you should’ve seen the ridiculous face I just made when I saw that first picture. Holy freakin’ yum. I’m going to make them and not tell anyone so I can eat them all myself.

  27. Amazing…I’m in love with this blog :)

  29. Perfect! I was planning on making cupcakes for my son’s 2-year birthday this weekend… what a cute idea, to let everyone top their own cupcakes (this could get a little messy, but fun with kids is almost always messy)!

    Thanks for the perfect idea!
