Coffee Smoothie

I have a stubborn brain.  My stubborn brain doesn’t like to buy things that it knows my hands can make at  home.

Wait… maybe that’s my cheap brain.  I get the two confused sometimes.

Strangely enough, my stubborn and cheap brain will easily talk me out of buying a $4 coffee drink, but they’re somehow strangely silent when it comes to the $200 pair of shoes that I “need”.  Hm…. I’ll look into that.

Coffee Smoothie

Let’s keep it simple with these coffee smoothies.  Strongly brewed coffee.  Milk.  A dash of sugar. A few tablespoons of instant vanilla pudding (to sweeten and slightly thicken).

Oh!  Ice!  We’ll need a few cups of ice… and a big fat blender.

serves 4

Print this Recipe!

1 cup strongly brewed coffee,  cooled

1 cup milk, cold (whole, 2 percent or skim, whatever you fancy)

2 heaping tablespoons instant vanilla pudding

1-3 teaspoons of sugar, depending on how sweet you like your coffee

2 cups of small ice cubes (feel free to add more to further thicken the smoothie)

Add all of the ingredients to the blender and blend until no ice chunks remain.  It’s not rocket science.

Coffee Smoothie Boosters

The Coffee Smoothie Base is all sorts of yummy on it’s own, but why not add a little something extra?

You could add:

Half a frozen banana (this will thicken the smoothie up even further)

2 Tablespoons of chocolate syrup

a dash of ground cinnamon

1 teaspoon instant coffee (for super coffee flavor)

1/4 teaspoon almond extract

1/4 teaspoon coconut extract

whipped cream on top

  • Frozen bananas are a must in my smoothies! I love them for texture. I actually have a coffee smoothie everyday and add some protein powder – it’s like a cappuccino. :)

  • I happen to have that exact instant vanilla pudding from TJ’s in my pantry… waiting to be used. I think it was waiting for this recipe! Once the weather turns hot for the season, I switch over to iced coffee, and these smoothies sound like a fun & delicious way to enjoy the cold caffeinated beverage.

  • About 50% of the blog I normally read on a daily basis are for some reason talking about coffee. I like your take on the smoothie with the added vanilla pudding.

    I usually have a batch of my go-to iced coffee waiting for me in the freezer. I take some out, zhuzz it up with my stick blender, take a sip, sit back and let the cool, creamy wonderfulness of it flow over me from the inside.

    6-8 cups strong coffee
    1 (14 ounce) can sweetened condensed milk

    Combine brewed coffee and sweetened condensed milk in a large pitcher.
    Refrigerate until chilled.
    Serve over ice.
    TIP- Use leftover coffee to make coffee ice cubes with.
    Then you have the chill without getting watered down.

  • I love adding vanilla pudding powder to all my smoothies. It gives them that ‘store-bought’ flavour – without the price tag! Perfect!

  • That Trader Joe’s instant pudding is quite possibly the best thing in the store! Okay, not really, but it is fabulous. I’ve always got it on hand to squelch the late night sugar craving. Maybe add the chocolate one to the coffee for a mocha. Mmmm…

  • i make these all the time in the summer, because although i work at a coffee shop and could sip $4 versions all day– they are so incredibly bad for you. of course, i still drink them, but i try to balance it out with homemade ones (where i can pronounce the ingredients).

    for all the gluten free bakers out there, try adding a tiny bit of guar gum and xanthan gum to the smoothies. it makes them super thick and frothy.

  • Oh I think I love you! First, shoes, yes, LOVE people who love shoes! Second, coffee, mine is brewing right now! Yum. Third, smoothies…need I say more!? I like mine with caramel…or since I’m in Texas, duce de leche. Ahhh….that’s bliss!

    Btw, buy those shoes! Your monetary restraints in some areas are for that very purpose of making up for more important splurges! ;)

  • Haha! I have drinking glasses that are very similar, except mine are chickens, cows and sheeps. Got them from the junk bin at Rite Aid. You just reminded me that I should probably give them a starring role in some of my own blog posts.

    These smoothies look decadent! Definitely a great way to enjoy coffee in warmer weather!

  • I’ll definitely be trying this. I’m addicted to all the frozen blended coffees everyone seems to have out right now. I have a cheat version I make using Ice, Hill Brothers cappuccino mix and vanilla yogurt for thickness. I use the Hills Brothers when I don’t have brewed coffee on hand or I’m to lazy or it’s to hot to brew coffee.

  • This is the perfect dessert to toss together when making dinner for friends in the summer! You know what’s up joy, and I never thought of adding pudding to thicken a milkshake. I’m excited about this.

    + I’m the same way about $4 coffee and pricey shoes. I get it.

  • I love “iced lattes” (that’s what we call ‘em). We use espresso shots — delicious! Instant pudding, eh? Sounds good.

  • This is great – I have the same issue with paying $4 for an ice-coffee drink. Then again, I have the same lack-of-issue with paying $200 for “shoes I need”, but I chalk that up to the fact that it’s a lot harder to make shoes than it is to make coffee drinks.
