Banana Bourbon Bread Pudding

Banana Bourbon Bread Pudding

Imagine how glorious your day would be if you took plain old, super soft white bread and baked it with milk and sugar, bananas and bourbon.

Seriously… what are you doing right now?  Unless you’re shoe shopping or naked with someone you like… I think you should stop what you’re doing and at least think about making some bread pudding.

Or you could watch this video.

Bake Out with Jill and Joy.  We’re at it again.  We do a fair amount of giggling.  We eat piping hot bread pudding and try to pretend that we’re not burning our freaking faces off.  I also announce myself as the winner of the game of life… cause yea.

Banana Bourbon Bread Pudding

Are you one of those people who thinks that they don’t like bread pudding?  Would it make you feel any better if I called this Baked French Toast?  Would you feel even better still if I told you that you can totally get away with bourbon at breakfast?  Yea.  Sneak it in with milk, eggs and bread and no one will think you a lush…. or at least I won’t.

Banana Bourbon Bread Pudding

This bread pudding is unique.  It’s not a completely soggy mushfest.  The bottom layer of cooked bread and custard is soft and flavorful.  The top layer of bread pudding is crispy, buttered toasted topped with a good helping of cinnamon sugar.  It’s the best of both worlds and you know it.

Banana Bourbon Bread Pudding

Plus banana (including a dash of banana extract), plus bourbon… plus awesome.

Banana Bourbon Bread Pudding

Fresh bananas are fine indeed.  I like kicking the banana flavor up with a touch of banana extract.  If this offends you, go heavy on the banana slices and throw in some vanilla extract.

Banana Bourbon Bread Pudding

adapted heavily from Sweets

serves 8 in a 9×13-inch pan

Print this Recipe!

10 slices of white bread, toasted and sliced in half diagonally

1/2 stick (4 Tablespoons) unsalted butter, softened

3 eggs

2 cups whole milk

1/2 cup granulated sugar (brown sugar would also be great)

generous pinch of salt

3 Tablespoons bourbon

1/2 teaspoon banana extract

2 bananas, sliced

2 Tablespoon granulated sugar, for topping

1 Tablespoon ground cinnamon, for topping

Preheat oven to 350 degrees F.  Butter a 9×13-inch pan and set aside.

Lightly toast 10 slices of white bread and butter each slice.  Cut each slice of bread in half diagonally.  Layer bread slices in pan, butter side up so that the bread tips are pointing upwards.

In a small sauce pan, heat the milk and sugar just until the sugar is dissolved.

Whip the eggs and pour the warmed milk mixture over the eggs while whisking the eggs thoroughly.

Add bourbon and banana extract.  Pour the custard over the bread slices.  Add banana slices to the bread pudding, placing them in between the bread slices and deep into the custard.  Bake for 30-40 minutes or until the custard is set.  Remove from the oven and sprinkle generously with cinnamon sugar.  Let cool to room temperature before serving.

Hi Joy

What brand of Banana Extract did you use and where did you purchase it. Also, you say you can also use brown sugar in the bread pudding, how much would you use and is this in addition to the white sugar or is it in place of the white sugar.

joythebaker July 21, 2010 at 8:27 pm

i’m still in Seattle, and away from my banana extract, so I can’t tell you the brand right now.

if you’d like to use brown sugar just substitute it for the white sugar. easy as pie.

I can’t wait to try this! It sounds amazing! Maybe I can make this as a side dish to some of my cupcakes. It’s ok to eat an entire meal of baked goods, isn’t it?!

Oh yes, I should really be making bread pudding right now – because what I am actually doing is not at all fun, and bread pudding is as fun as it gets. My mom’s favorite dessert is banana bread pudding and since her birthday is this weekend, I’ll have to make this for her!

Um yes. We will make this. And eat it quickly. Bananas? Bourbon (with a bow!!)? Bread? Wait, those might be our favorite foods. Combined! Hurrah!

YOU’RE PRETTY LIKE SNOW WHITE!!! i think you should be snow white for halloween or everyday :)

y’know what would be good too? 99 bananas (banana schnapps, i think?) if you(me) can’t find banana extract. then you(i) would have a bottle of banana schnapps to add to sangria or banana daiquiris or even banana bread… i mean, if you’re already adding burbon right?

Sarah from 20somethingcupcakes July 21, 2010 at 9:03 am

The bananas make me want this for breakfast. And the fact that the bread is cut into diagonals like that…And, calling it French Toast just might make it seem more okay. I think this will make an appearance this weekend.

Vicki B July 21, 2010 at 9:23 am

Alrighty then! I have a bunch of red bananas leftover from Rose Levy Berenbaum’s new Rose’s Heavenly Cakes. Perfect for this! Bread pudding is divine made with leftover croissants only who has leftover croissants? It means buying day old croissants for bread pudding because it is TOTALLY worth it.

Menollie July 21, 2010 at 9:33 am

This looks absolutely delicious! However… I am not a banana fan. :-( Any suggestions for banana substitutions?

I see a bourbon purchase being part of my weekend errands! And I still need to find blueberries for your Blueberry Black & White cookies. Those looked so amazing as to be unreal!

Bourbon for breakfast! I mean, really, what’s better? :)
So, maybe I’m a lush. And maybe I don’t actually have any bourbon, but one day – when I have money to go and get some bourb – we will have a wonderful reunion. And all will be well with the world. Hahaha.

Joy- you’re great! Thanks for making booze for breakfast become more socially acceptable. :D

Love the alliteration. Bananas Bread Bourbon….beautiful! I think pecans would be AWESOME…too bad it couldn’t be Brazilnuts…but that B wouldn’t taste so great.

Love the video. Keep ‘em coming. My two sons recognized ya’ll from the chocolate pudding video. :) You’re famous! haha.

Reply

I used to be in the no-like bread pudding group, I think it was a texture thing(I didn’t like mush bread pieces). But recently had something similar to this and loved it! I’ll have to add in the bourbon next time!
