Single Lady Pancake

I sleep in the middle of the bed.  I think I might hog the pillows.  I read a book in bed with a headlamp on my head.  It’s dorky.  Sometimes I fall asleep with the light on… mostly because I’m scared of murderers and not because I just happen to fall asleep with the light on.

I want pancakes for breakfast in the morning… every morning.  But I just want one pancake.  One crazy good, indulgent, morning breakfast for one pancake… with chocolate.  Is that too much to ask?  Heck.  No.

Hush yo mouth.  This mess is good.

… I just wanted to say hushyomouth… you were probably sitting there politely… my bad.

This is one big pancake.  It’s got oats and banana slices and chocolate chips.  Um… amazing.  On top?  More banana slices and toasted pecans.  And heck yes I poured maple syrup all over this sucker.

I scarfed it down in five bites… tops.

Then I went to the gym.  Seriously.  I did.

makes one large pancake

Print this Recipe!

1/3 cup all-purpose flour

1 Tablespoon dried oats (quick cooking or regular)

2 teaspoons sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

pinch of salt

1 Tablespoon plus 2 teaspoons vegetable oil

1/4 cup plus 2 Tablespoons buttermilk (buttermilk is best , but you could also try regular or soy milk.)

dash of vanilla extract

small handful semi sweet chocolate chips

15 banana slices

toasted pecans

In a small bowl, whisk together flour, oats, sugar, baking powder, baking soda and salt.  In a separate bowl whisk together oil, vanilla extract and buttermilk.  Combine the wet and dry ingredients and stir to combine.  The mixture will be thick.  Fold in the chocolate chips and half of the banana slices.

Heat a small frying pan with a teaspoon of oil.  Pour in the pancake batter and spread some with the back of a spoon.  Cook over medium heat until bubbles form and pop on the surface of the pancake.

Flip.  It’s ok if it doesn’t flip perfectly… it’s just you enjoying this pancake, remember!?

Cook until golden brown.  Remove from pan and onto a plate.  Top with the remaining banana slices, toasted pecans and maple syrup.

  • This morning is a “Single Lady Pancake” morning, though I’m not single. It sounds deliciously indulgent, and I can’t wait to teat myself!
    BTW, my husband reads in bed at night with a headlamp too:) It’s a compromise because I can’t sleep with the light on, but I don’t really like the headlamp either.

    Hey Joy, do you think there’s a way to make this healthier? I mean, don’t get me wrong, I LOVE your blog and recipes, and I normally wouldn’t care about any of the fat/sugar/calorie bit but I’m trying to lose weight here and would love to do that without imposing a ban on my baking.

    • This is wrong. I just did the calculations. (And a calorie is already a unit of measure… you wouldn’t quantify it further with grams…)

      It has 374 calories in it (also minus the bananas/chocolate/pecans, though all of which would be natural, healthy additions…). AND if you have time to cook yourself breakfast… it should be a good one… so allot like 500 calories for it, giving room to play with for toppings and stuff. I’m making it for dinner and adding blueberries and topping it with whipped cream :)

  • My best friend is newly single and I’m compiling a book of recipes for her for Christmas. It’s been really tough on her having so many leftovers with all the recipes, so she hasn’t made much to eat. Last time I visited her, her cupboards were bare. Hopefully some stuff like this can help her out!

  • I found this post oh-so wonderful and incredibly appropriate. I’ll admit, the first things to pop into my head every morning go as follows:
    1) I want coffee, and
    2) A pancake would make me the happiest person EVER.
    And although I only follow through with #2 about once a week (I’m trying to think about my waistline here), that pancake better be good. And yes, I only want one–on most days. So thank you for providing such a delicious recipe for those of us singles who enjoy brunching solo on occasion!

  • Joy, Thank you so much for this recipe! I just made one this morning (minus the bananas because I didn’t have any), and it was superb! I’m a college student, and I just moved into my first apartment. After suffering through two years of cafeteria food, I’m ready to cook on my own. I’ve been craving pancakes for awhile now, but I haven’t wanted to make an entire batch for just me. This recipe is perfect! I can’t wait to try this with banana.

  • Thank you, Joy! I have now made this pancake about 5 or 6 times and it is always satisfying! I do sometimes vary things a little–strawberries instead of bananas, holding the chocolate, sour cream and cinnamon on top instead of maple syrup–but that’s the beauty of pancakes: anything goes!

  • Just made this mess and it is SO good! I used self raising flour instead of the all purpose, baking powder and baking soda.. and I cut up a chocolate bar with caramel instead of the choc chips. YUUUM! Who needs a boyfriend when you can have single lady pancakes!? Not me that’s for sure.

  • hi joy, i just made this pancake & it was fantastic! i used what i had on hand – whole wheat pastry flour, cornmeal in place of oats (gave a nice crispness), cranberries, & orange (actually clementine) zest. it was giant, so i made a bit of a mess when i flipped it. but that’s part of the fun right? ;)

    I just tried this recipe and only had Vanilla Coconut milk in my apartment. I tried it in place of buttermilk and reduced the sugar since the coconut milk has some in it. TO DIE FOR!!! Excellent recipe!

I have just been craving pancakes, but didn’t have anyone in town this weekend to go to brunch with and didn’t want a whole batch of pancakes…now I can do this whenever the craving hits me! Have you tried it with sour cream….for some reason, I saw a picture of sour cream pancakes the other day and that’s how this whole craving thing started. I think I’ll make them, eat them in bed, with all the pillows but maybe not the head lamp…although i do have one and have been known to wear it in bed….for reading that is.

This summer I’ve baked handfuls of your treats and raved and come back for seconds and thirds.     I have to leave for an organic chem exam in 5 minutes. But, I just want to tell you I made this pancake (or a cocoa-cinnamon-plum because that was what I had on hand version of this pancake) and it was so delicious and I have never felt better going into an exam!

  • Woah baby this was good. I threw in a pinch of cinnamon and maple extract to the batter and it worked like a charm. I had to use a carving knife when eating this to ward of everyone trying to eat it. True story.
