No-Bake Peanut Butter Tart

Mine seriously sucks.
No joke.
Here I am in a house with a a box of Oreo cookies in the pantry, Raspberry Yogurt Popsicles in the freezer…. and a giant slice of this No-Bake Peanut Butter Tart in the fridge.
I probably shouldn’t tell you that I’m thinking of cooking up some bacon and accidentally dropping it on top of the peanut butter tart.
Good heavens. Send help.
The way I see it, I have to solutions to my will power problem.
1. I should move out of my house… since my space seems to be filled with cookies , sweets and bacon.
or
2. …Um. Read a book about will power? Maybe listen to a book on tape? Maybe while eating a few Oreo cookies… just a few… to test myself.
Or maybe I should have let my Dad eat the last piece of Peanut Butter Tart instead of pretending I didn’t have a giant slice stashed away in the fridge.
It’s just that peanut butter…
and sweetened condensed milk…
aaaaand whipped cream are SO dang delicious together.
I got a little selfish.

I love this pie. This pie is certainly easy to love.
No oven required. Bonus!
Creamy peanut butter filling encased in a crisp and buttery graham cracker crust. Topped with whipped cream and mixed nuts.
Get outta town.
It’s seriously decadent and makes me feel like I want to skip dinner just so I have room for an extra slice.
Pot luck dessert? Yes. Labor Day holiday dessert? Duh.
Crazy freakin’ delicious? Clearly.
No-Bake Peanut Butter Tart
adapted from Martha Stewart
makes one 9-inch round tart
For the Crust:
12 double graham crackers (the kind that measure about 5 x 2 1/2-inches)
6 Tablespoons unsalted butter, melted
pinch of salt
For the Filling:
1 3/4 cups heavy cream, divided
1 cup natural peanut butter
3/4 (6 ounces) cup cream cheese, softened
1/3 cup plus 2 Tablespoons sweetened condensed milk
Crust the graham crackers in a food processor, in a plastic back with a rolling pin or with your hands in a bowl. Make sure they are very well crumbled with no large chunks remaining. Add the melted butter and stir thoroughly, making sure all of the crumbs receive some butter love. Pour the graham cracker and butter mixture into a 9-inch tart shell with a removable bottom. Press the mixture along the sides of the tart pan and along the bottom until evenly coated. Carefully place the tart pan in the freezer while you prepare the filling.
To make the filling combine the peanut butter, softened cream cheese and sweetened condensed milk in the bowl of an electric mixer fit with a paddle attachment. You can also use the food processor if you’d like.
Blend the three ingredients until thoroughly incorporated, but don’t over blend or some liquids will separate.
In a separate bowl, whip 3/4 cup of heavy cream to soft peaks. Add the whipped cream to the peanut butter mixture and fold together until well incorporated.
Remove the tart pan from the freezer and spoon in the peanut butter filling. Spread evenly.
Whip up the remaining cup of heavy cream to stiff peaks and add to the top of the peanut butter filling. Refrigerate for at least two hours, or overnight. Top with salted mixed nuts and serve in giant slices. Seriously.

I think I’d have used those oreo cookies as the crust for this Peanut Butter tart. But dang, it still looks really good. And I might have mixed some chocolate chips into the peanut butter mixture.

Joy, could you do me a flavour and list the weight of graham crackers required for this recipe? We don’t have double graham crackers in Ireland so I’ll be subbing with digestive biscuits, but haven’t a clue how many to use (US graham crackers are rectangular, and the Irish equivalent is round). Hey! I’m in America but I studied abroad in Dublin and I miss your digestive biscuits! Tesco brand, woo hoo! Just in case Joy doesn’t reply (though she seems awesome so she probably will) I would guess you would need enough biscuits to make 2 1/2 cups of crumbs. The biscuits are a little more dense, so if the mixture seems too dry with the butter, try adding another tablespoon (1/8 of a stick) or so. Good luck!h

I made Peanut Butter Pie n(from “Baked”) yesterday, must be the heat that’s causing the craving! I haven’t tried this version yet, but I will next time maybe with a milk chocolate ganache topping?

I’m on a temporary limited/no-sweets diet. This is absolute 100% food porn. And will be the 2nd thing I eat once I get the green light to eat sweets again.. preceded by cinnamon rolls.
Do you think this would be good with some cream cheese mixed in? The process reminds me of this blueberry cream pie I found on A Cozy Kitchen and it’s so amazing I can’t get over it… Therefore, I think it would be delicious to add a little cream cheese to this mix to get a creamy-peanut butter-cheesecake-deliciousness thing going on.

I just made this. I had my doubts before I folded in the whipped cream. I admit it. But as soon as that cream got folded in and I was scooping it into the shell only one phrase came to mind.
“It’s so fluffy!!!!” Seriously, I did not think it would actually get fluffy. Who knew?
Plus it’s super delicious. It really is. Now I am just waiting the “appropriate” amount of fridge time. We’ll see how that turns out.

ok, this post may just cost us our friendship. you see, I have no willpower. none. zip. zero. zilch. you get it. normally, I simply rationalize that requires way too much effort, knowing full well that as soon as I make it, I’m just going to shove it in my face. herein lies the problem, this pb tart looks WAY too easy for that rationale, hence I have no good excuse standing between me and a facefull of yummy peanut butter deliciousness. thanks alot.

Help! I so want to make this but my tart pan is packed away in storage for the next few months. Do you think mini ones in a muffin tin would work? Might be tough to remove for serving… hmmm…
I baked this pie yesterday, and it was so delicious! If you don’t mind store-bought baked goods, you could just buy a graham cracker pie shell from the grocery store. The ones I’ve bought are actually pretty good, and the filling in this pie is so good and rich it’s mainly what you taste anyway. Or you could make the filling and serve it in little bowls with graham crackers sprinkled on top. That sounds really good.

I might just have to bake the crust next time, it was too crumbly for my textural pleasure but the filling…oh that filling…totally made up for it.
I actually threw my crust in the oven for a few minutes because I suspected I wouldn’t like it crumbly. And yeah, that filling is so so good.
