Are you one of those people who perfectly toasts their marshmallows to a golden brown?
How on earth do you do that!? I don’t get it. You must have the patience of a marshmallow saint.
I’m a burn-and-blow kind of girl. Turn the marshmallow into a torch… blow it out… repeat.
The patience technique baffles me. In fact… I secretly looooove to brush my marshmallow torch against the slow rollers and set their marshmallows on fire. They totally hate that.
Marshmallow meets open flame… it’s important in this recipe.
I had no idea that this whole Toasted Marshmallow Milkshake was a thing. Amazing. Spike Mendelsohn… that cute dude with the hat from Top Chef invented this thing. Nice work. High five.
Now! I’m going to need you to super toast your marshmallows. Don’t be afraid of a little black char. In fact… I say welcome the char. It’s those itty bitty burny bits that really make this Toasted Marshmallow Milkshake taste like…. you know… a TOASTED Marshmallow Milkshake.
Incidentally… this shake is so good… SO GOOD… that I’ve made it twice in one day. In fact, I’m drinking one now… I also have the heater on in my house. This totally makes sense.
Ps. I know I’m supposed to be making cranberry and pumpkin recipes right now… I just needed to make this happen. So do you.
Toasted Marshmallow Milkshake
adapted just slightly from Spike Mendelsohn’s recipe
makes two small or one large milkshake (about 2 1/2 cups)
8-10 large marshmallows
3 large scoops vanilla ice cream or a heaping 1-cup of vanilla ice cream
1/2 cup of milk
1/2 teaspoon vanilla extract
Place marshmallows on skewer and toast until slightly charred over a gas flame. If you don’t have skewers or a gas range, you can toast the marshmallows on a sheet tray in the broiler for 2 or 3 minutes. Keep an eye on the marshmallows as they’re in the oven. They’re liable to burst into marshmallow flames pretty quick. Place on a plate to cool slightly.
In a blender mix together ice cream, milk, vanilla extract and toasted marshmallows. Save one or two toasted marshmallows to top the milkshake(s). Blend well. For a thinner milkshake add more milk. If you’d like it a bit thicker… add more ice cream. Pour into glasses and top with toasted marshmallows. Enjoy on the quick.

Joy, I made this today finally….I’ve had my eye on them forever, and it was a fitting treat for my 30th Joy recipe!!! woot woot. I thought that the proportions were weird though…like the drink was very thin but very, very sweet so there was no choice but to add more milk to make it less painfully sweet. Would it be possible to reduce the marshmallows in the drink to say 4-5 to lessen the sweetness and then be able to add more ice cream instead? I don’t know, but the drink as listed here really only makes sense for one person too…I did split it ( to halve the calories haha) but it was a very small, excessively sweet portion. I do love the idea behind this though…maybe there’s a way of thickening milkshakes without adding sweetness that I’m not aware of?

I hate it when a recipe doesn’t include how many servings it yields. There are four main components to a good recipe: title, yield, ingredients, instruction. And if the writer wanted to go above-and-beyond, cook time. But I guess your point-and-shoot pictures make up for your lack of technical writing skills…

Averie just posted a link to this on her site the other day. Oh-my-holy marshmallow! I had to adapt it to make it dairy free, so I used vanilla coconut milk in place of the milk and coconut milk ice cream (half of it was chocolate because we ran out of vanilla). My kids have deemed this the best shake ever. I think I might be in heaven. I have been enjoying the rest of your site as well! This is weird yes I know….but have you ever taken the tiny marshmallows put them on a piece of tin foil and roast them in the oven until they are hard and crunchy? HOLY MOLY those things are good…I’m a burn’em’ till they’re black as sin marshmallow person, but these turn out pretty golden brown and crunchy, its heaven on tinfoil…..then you could totally chop them up and stick them as a topping on anything!

Hi Joy….I was so thrilled when I read this recipe to making the milkshake cause I actually saw the show Spike was on, “My Favorite Things” where he went to this little place where they make the shakes and they use a “secret” ingredient and he sat there and drank I believe 4 in a row in large old fashion soda glasses. wow- i make milkshakes way too often -dont judge- so i was super excited to read this posting and try to concoct my own toasted marshmallow shake. we toasted the marshmallows over the stove and didn’t use vanilla, added a few (or a lot) more marshmallows to your recipe, and only blended it for a bit so we could drink up the gooey, flavorful pieces of roasted mallows. yum! thanks joy!

The glasses look like regular canning jars (for canning jam, etc). In the US we have canning jars by the name of Mason, Ker, Ball, etc. Not sure if they ship internationally, though.

If your are looking for a rich and creamy flan here’s is my grandmothers recipe. It is delicious :)
9 egg yolks
1 can of sweetened condensed milk
1 can of evaporated milk
1 tsp. vanilla
1/2 tsp. ground cinnamon
1-16 oz. can pumpkin puree
1 cup sugar for caramel
Preheat oven to 350*F
1. Caramalize sugar in saucepan. Make enough sugar to cover bottom of a round or rectangular cake pan. Set aside
2. Mix all remaining ingredients in blender until smooth.
4. Make sure sugar has hardened and add flan mixture over the caramalized sugar. Cover with aluminum foil.
5. Bake flan in a water bath. [Set baking pan in a larger pan filled with hot water. Make sure there is enough water to cover about half of the cake pan.]
6. Bake for about 45minutes to an 1 1/2 hrs. or until toothpick comes out clean when inserted in the center.
7. Allow the flan to cool to room temperature, and then chill in the refrigerator for at least 3 hours. Unmold the flan by first running a NON-serrated knife along the inside edge of the baking dish. Invert the flan onto serving platter. The caramelized sugar syrup will cascade over the flan.

I’ve had this question on my mind and I thought that you may be able to answer it. (Yes, I’ve been reading your blog for awhile now. No, I’ve never commented. I hope you don’t find that odd. Or creepy.) Is it necessary when making a pound cake to use a bundt pan? Every recipe I’ve came across requires you to use a bundt pan. I don’t own a bundt pan, but I want to make pound cake – hence my dilemma.

I’m a totally weirdo when it comes to roasted marshmallows… if we have a campfire and marshmallows, I’d better be having smores. Don’t just give me a marshmallow, I want the smores. When I make smores, I don’t just heat the marshmallow, I wrap the whole assembled smores into heavy duty aluminum foil and cook over the coals (not the fire). So lately I haven’t really roasted marshmallows… but I if I were to roast one, I’d be a golden toasted (or like my sister in law – toast it, eat the outer edge, toast, eat, repeat…)

I worked at a summer camp for many summers and one year my job was to teach kids wilderness skills, including building a fire. Their treat at the end was to roast a couple of marshmallows. The kids each got two, leaving about half a bag for me. Which I would eat. With each group. It was a fat summer.

I LOVE the charred taste but I like the whole marshmallow to be soft so I perfectly roast it first…. and then I stick that sucker into the fire and let it burn!

I actually taught myself to perfectly brown my marshmallows for two reasons
1) I hate when the outer skin of the marshmallow sloughs off and leaves me with (you guessed it) less marshmallow.
2) To totally cheese off those who cannot toast their marshmallows to a perfect golden brown.
Joy, if we are ever at a camp-fire together, I hope we don’t sullenly glare at each other over marshmallow related issues. You’d be all cranky ‘cuz I’m toastin’ em all brown and golden and immaculate, and I’d be giving you the stink eye after you set my perfect golden S’More component on fire.

You could even take this one a step further by adding chocolate syrup to the shake and sprinkling graham cracker crumbs on top for a s’mores inspired shake.
(But I’d be happy with the toasted marshmallow version)

I love toasted marshmallow, and yes, bring on the char. Usually, if not drinking caramel lattes, I get toasted marshmallow and wow, with coffee, this is an amazing treat.

I’m not patient with marshmallows either. I just put them in my toaster oven (for smores purposes) until they are a nice blackened brown and then blow to cool and then down it goes!

…..I’ve had this shake befor at “Stand” in New York. This is also the same restaurant that Spike had this shake on the Food Network. They are SO incredibly good that I skip getting the burger now and just order the shake! I purposely did not search for the recipe online because I knew it would be the end of me.
