Delicious Hot Chocolate
Clearly you need something milky and chocolatey and warm and delicious to go with those marshmallows that I insisted you make.
Hot chocolate. Made with all those random/open/half empty/spilling all over the cupboards bags of chocolate chips I have in my kitchen.
It only makes sense, don’t you think?
Not rocket science.
Totally just hot chocolate.
Delicious Hot Chocolate
makes one large or two small portions
1 1/2 cups milk (any fat content you fancy)
3 heaping tablespoon bittersweet chocolate chips
2 heaping tablespoons white chocolate chips
In a small saucepan, gently heat milk over low heat. Whisk often so the milk doesn’t burn.
While the milk is heating, bring a medium saucepan with two inches of water to a boil. Place a heat-proof bowl with chocolate pieces over the simmering water. Make sure the bottom of the bowl does not touch the simmering water. You’re creating a double boiler. Cool, right? Stir the chocolate pieces until melted.
Add the melted chocolate to the hot milk. Whisk together until completely blended and super delicious looking. Pour into mugs and top with marshmallows or slightly sweetened whipped cream.

Mmmmm. I ran out of chocolate chips (something about a bad habit of eating handfuls at a time…) but I think this would still be delicious if I just went out and bought more rather than using left overs. And adding marshmallows. And some popcorn…because popcorn and hot chocolate belong together.
Joy, you’re not alone–MY chocolate chip bags are still tipping over on the counter as we speak. I made tons of chocolate-covered pretzels last night…and now I can make hot chocolate.

Would this hot chocolate travel well to a party? Or is it the type that you should make and drink immediately without reheating (cause it gets icky upon reheat)?
Hot chocolate goes best with cookies in December! Yours looks delicious. Now I just need to convince my husband to clean up after my marshmallow mess so I can make the marshmallows too for the perfect cup :)

Ok, so I have to let you in on the hot chocolate that I’ve been obsessed with for the past few weeks. I add some cinnamon, cloves, and lemon zest to the pan while heating the hot chocolate. Then I pour a shot of tequila into each mug and pour the hot chocolate over it. Top with whipped cream. It’s hot chocolate that’s not kidding around.
I am finally getting my husband to drink *real* hot chocolate as opposed to the stuff from a packet. i think he will especially like this version – I know I will! I always used a combo of sugar and cocoa powder but the melted chocolate idea is much more exciting. Thanks!
Oh my gosh, you would make home made hot chocolate with home made marshmallows. I’m going to dazzle my boyfriend with this over Christmas break (he lives 3000 miles away, so it’ll be nice to be able to make something awesome for him) :)
This is just what this 18 degree weather needs, a nice hot cup of hot chocolate.
Man, I so wish it were cold this winter. For some reason the lowest it’s been is around 40 degrees and it makes me sad. But now this hot chocolate gives me more reason to hope for snow and cold weather this winter! :D

a) I super love your blog, the posts are hilarious and the pics look amazing
b) I made the marshmallows with my mom last night (miraculously, without making a mess) but the gelatin had this weird smell…like wet dog? I used fresh knox gelatin, three envelopes, but even after I added vanilla extract there was still this lingering scent that I couldn’t get over. The marshmallows turned out fluffy and beautiful and perfect, but I ended up tossing them because of the off putting smell. What gives? Any ideas/suggestions, or maybe it was a fluke? I’d love to know if this happened to anyone else…

This sounds so good! I love the idea of adding white chocolate chips to the chocolate. I used a bit of a mint chocolate Sulpice Chocolat bar and it turned out amazing!

I’m putting together some gift baskets for family/friends— and so far I’m using two of your quick bread recipes- but wanted some good/not incredibly time consuming cookie recipes (I already work at a bakery- I can’t handle a whole night in the kitchen after haha).

Just made this with semi-sweet and dark chocolate chips (what I had lying around) and it is heavvvenly. Had to do with store-bought marshmallows for present but the chocolate is so delicious I hardly notice :)

The worst blizzard in MN happened on Saturday. I was trapped at home with 18 inches of snow. So I could either shovel…or make hot chocolate. Not a tough choice. Yum!!! You rock, Joy.
Recipe to try…. I wanted to share with you a great recipe. Nobody makes these in the states and they are truly wonderful. I just made a batch and swapped out the currents and lemon rind for craisins and orange rind.
Welsh Cakes

2 cups all-purpose flour
1/3 cup white sugar
2 1/4 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup cold unsalted butter or lard (or a combo of the two)
1/3 cup currants (if they are really dried out, I pour on 2 T of water and plump them in micro for 30 sec)
zest of one lemon
1 large egg, lightly beaten
1/4-1/2 cup milk
Mix the flour, salt and spice into a mixing bowl.
Rub in the fats until the mixture looks like fine breadcrumbs. (I use the food processor.)
Add the sugar, lemon rind and dried fruit. Pour in the beaten egg and stir to make a firm dough. (add milk if needed, but don’t make too sticky)
On a floured board, roll or press the dough to approximately 1/4″/5mm thick. Cut into circles with a smallish biscuit cutter.
Cook the Welsh Cakes on a medium hot griddle, turning once, until golden brown on both sides but still a little soft in the middle. Dust with regular sugar while still hot.
Serve warm or cold. Great with a thin layer of butter over the tops.
