Peach and Raspberry Crumble

The smell of peaches reminds me of:

dusty, dirty sneakers.  light coming through peach tree leaves.  shade.  drinking from the hose.  wet jean shorts.  caked mud.  my yellow Sony sport walkman.  that Counting Crows cassette tape i loved.  my sister’s freckled nose.  my dad’s hands.  my mom’s laugh.  sleeping in the sun in the car, half hearing adults talk.  pie.  pie pie pie pie pie.  pie.

My family and I used to go pick peaches during summer months.

We never had fancy fruit during the year.  We didn’t buy containers of raspberries.  There were no pints of blueberries in my fridge.  Those were too much of a luxury.  We had bananas… endless amounts of boring bananas.

But!  In the summer!  We went peach picking.  I remember it like a slow motion, montage movie scene in my head.

I like the keep the peach smell memories tucked away in my crazybrain… you know, to think about awesome things when not so awesome things are happening.  Life tricks.  I got em. I’m so good at life is downright amazing.  Not true.  At all… but I’ve got the peach smell memory situation tucked away in my brain just perfectly… for emergencies.

Fresh fruit crumbles are absolutely the most delicious summer dessert, considering the minimal amount of manpower that goes into their creation.

The better the fruit, the better the dessert.  It’s as simple as that.

Oh!  And don’t try to line up the square colored dots in this photo collage.  Don’t do it.  It’s just not worth it.

There are some rules to enjoying this dessert:

You’re not allowed to eat all the of crunchy, crumble topping off the top.  Unless you live by yourself.. then you totally can.

You must eat this dessert with ice cream.  Vanilla, preferred.

You must take a moment to appreciate the beautiful mauve color that this crisp bakes up into.  It’s really quite lovely.

Lastly, this dish must be considered a breakfast, lunch, and dinner item… good for all occasions.

Fruit sweet.  Oat-y crisp.  Comforting summer.  Ice cream required.  Good(ness).

Oh!  I should also tell you that I’m pretty much obsessed with crumbles.  Here’s proof.

For your summer eatings.

Peach and Raspberry Crumble

makes 1 8×8-inch square baking dish

Print this Recipe!

5-6 medium ripe peaches, sliced

1 cup fresh raspberries (if using frozen, just thaw and drain)

1 cup all-purpose flour

1 cup granulated sugar

3/4 cup old fashioned oats

1 teaspoon ground cinnamon

1/8 teaspoon ground allspice

Pinch of salt

1/2 cup (1 stick) unsalted butter, chilled and cut into small cubes

Place a rack in the center of the oven and preheat to 350 degrees F.  Place sliced peaches and raspberries in a square 8×8-inch baking dish and set aside.

In a medium bowl, whisk together flour, sugar, oats, spices, and salt.  Add the butter and toss the mixture together with your hands.  Break the butter up into the flour mixture until the butter is the size of small pebbles and oat flakes.  This took me about 4 minutes.

Toss a generous handful (about 1 cup) of crumble topping into the peach and raspberry mixture.  Toss loosely with your hands.  Spread fruit evenly in the pan and top with the remaining crumble mixture.  Bake until fruit is juicy and bubbling, and the top of the crumble is slightly browned and crisp, about 30 minutes.

Remove from the oven, let cool slightly, and serve with vanilla ice cream.  Crumble is delicious served warm and can be stored, covered, in the fridge and reheated in the oven or microwave for serving.

  • Love this peach-melba combination! I think every country has their own version of this – my background is German and we ate something similar growing up but called it “kuchen”. What ever you call it I also love anything with a crumble topping! Thanks, Chris

    1) You are totally right that fruit crumbles are one of the most amazing and simple desserts. In fact, I usually keep the sugar to a minimum, because I’m mostly interested in the fruit, not all that added (unnecessary) sweetness!

    B) If it was a cassette, you’re probably talking about August and Everything After, which is to albums as fruit crumbles are to desserts (i.e., the best ever).

  • I am a sucker for crumbles. This one looks extra good. I might make this but might toss in some Jack Daniel’s because last year I made a crumble-topped peach pie in which I threw in some JD, and it was awesome. Just sayin’. I’m all for adding booze to a dessert whenever possible, for the flavor of course ;)

  • I am also a crumble-addict in the summer when fruit is beautiful. (Italian plum is my favorite-favorite, and cherry is really excellent, though after pitting a million cherries last year to make a giant batch, I swore off that particular variation for a long time.) I usually cut the amont of sugar (and I use brown, not white), add almond and flax meal to the oat-y topping, and walnuts or pecans, and then I can feel quite justified in eating it for breakfast every day. Without ice cream, but sometimes with some nice greek yogurt spooned on top. I mean, that’s basically granola, right? (If you ignore all the butter, I mean.) I think I need to make some crumble this weekend…

    I love a good crumble… there is something so homey and rustic and comforting about it. i think its true summer comfort food :) yum. just made one for my husband with gluten free ingredients and mixed stone fruits (peaches, nectarines and plums!) flollowed your general crumble topping recipe tho. hes gunnna love it. i loled at one point because you say to ‘toss loosley with your hands’ i read it as toss lovingly with your hands… i thought ‘aww thats nice’ :) anyways, good crumbles.

    I love any type of crumbles. There is a well known bakery here in Jersey that is known for its extra thick crumb cake. It’s almost all crumb on top and a very thin moist bottom.

    I just made this and it was everything I never knew I always wanted!!!
    I didn’t have enough peaches so I used some nectarines and I also had to use blackberries instead of raspberries. It was so de-lish! I want you to know that I didn’t skimp on the butter, I used the real thing and I didn’t cut back. Thank you, thank you, thank you, you are a magical recipe angel.

  • Oh man, my family also didn’t have fancy fruit in our fridge growing up. (We don’t consider the blueberries fancy, because those containers are super-big, but anything that is in the short containers, like raspberries and blackberries, we did not do with regularity.) A few years ago, my husband would be getting raspberries and the like at the store and then ask me why I wasn’t putting them on my cereal in the morning, and I explained how they were fancy, and I wasn’t accustomed to just tossing fruit like that on ordinary things like cereal and he looked at me like I had another head. I’m glad someone else seems to understand. I can do it now, add fancy fruit to cereal, but it always feels wicked!

    I have a peach tree in the backyard, its branches propped up with 2 x 4′s because of the weight of the fruit. We have picked, I have canned pints upon pints of yummy peach jam. I have frozen gallons of bright, amber-yellow slices. Last night I surrendered, invited 8 friends over with their families to join our 6. The whole mess of us picked peaches, made these yummy, yummy crumbly desserts and ate them with vanilla bean ice cream. It was heaven.

    This morning, as I sit here looking out on that tree…it still seems to have as many peaches. I wonder if this is a miracle tree – like the oil and the flour in the Old Testament?

  • Went to the Playa Vista Farmers Market this morning and got the most vibrant peaches and raspberries. Just put this in the oven– already smells delicious!

When my hubs got home from work he looked at the crisp, looked at the kids and said “you guys must have loved mommy’s dessert!”. Blank stares from them. Ummm… yeah.
