Vegan Mango Banana Bread
Was it you who spent last Friday night with a bottle of white wine and a truly GIANT bowl of salty, sweet popcorn.
Did you find yourself 4 hours into a Say Yes to the Dress marathon? Wait… did you cry a little bit?
Was it you who glanced at the random pair of scissors on your coffee table, then took a quick glance at the sleeping cat sitting to your left? Was it you who again glanced at the scissors… then back at the unsuspecting cat? Scissors. Cat. Scissors. Cat.
Wait… was it you who decided to give your poor, helpless cat a summer hair cut?
Was it you who found out that trimming a cat’s hair is actually waaaay harder than it seems?
Was it you left with the kinda silly, lopsided looking cat?
Was that you? Oh. Wait. No.
I guess that was ME. My bad. Honest mistake.
I can’t show you a picture of the cat. It’s downright embarrassing.
Ps. You should also know that I made some fruity, vegan banana bread.
I’m definitely sure that it was me who made it. I’m definitely sure it was me who ate just about the entire loaf.
Oh… also.. the cat licked a slice. He’s a sneaky creature.
Banana bread is a super awesome vegan treat.
It has enough banana, mango, and vegetable fat to keep this bread moist and flavorful, without anything animal-y in it.
I also love the flavor of ground ginger in this bread. The warm spice is nothing but right!
mmm hmm. Bake it.
Vegan Mango Banana Bread
makes one 9×5-inch loaf
3 medium or 2 large ripe bananas
1/4 cup vegetable oil
1/2 cup brown sugar
2 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 ripe mango, sliced into chunks
granulated sugar for topping
Preheat the oven to 350 degrees F. Lightly grease and flour a 9 x 5-inch loaf pan.
In a large mixing bowl, mash the bananas well. Add the sugar, oil, and vanilla extract, and whisk briskly to incorporate.
Sift in the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined. Fold in mango chunks.
Transfer the batter to the prepared pan and sprinkle with extra sugar if you’d like. Bake for 45 to 50 minutes. The top should be lightly browned and a knife inserted through the center should come out clean, or with just a few crumbs.
Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely.
Banana bread will last, wrapped at room temperature, for up to 5 days… but it’s super delicious eaten within a few days.

My cat got attacked by dogs and when we took her to the vet, they needed to put an IV in her front leg, so they shaved it from wrist to elbow and then couldn’t find a vein, so they shaved the other one the same way and put it there. My kitty survived the attack just fine (and a second one, and a refreshment of antifreeze-no kidding about having 9 lives), but she sulked about her poodle legs for months.
Oh, I too had a kitty who was hospitalized and had to have the “poodle cut”on his front legs. I could’t stop laughing when they brought him to the exam room. He didn’t seem to care…he was just happy to be going home.
CLARIFICATION REQUEST – Hi Joy, this bread sounds delicious and I love that you have vegan recipes to your fantastic blog. With your next vegan recipe could you say a little about the sugar you use? I was taught that most white sugars and brown sugars are not vegan because they are filtered through animal bone char. Beet sugar, unbleached cane sugar, or dehydrated and granulated cane juice (and the brown sugar versions of those) are often vegan. I have far less cooking experience than you so if I’m wrong, of course, ignore me. Lastly and most importantly, you are awesome. Please remain so.

If you live nearby a Whole Foods, they do have a Vegan (don’t remember if it’s cane sugar) White Sugar, any 365 Organic Sugar is vegan (I’ve asked Whole Foods).
You can also make your own brown sugar by mixing molasses with white sugar.

Thanks for the advice. I don’t have a Whole Foods nearby but it warrants a bus trip. I used agave nectar instead of the other sugars and it worked out really well.
when i first started reading this post i thought it was going to be a murder mystery..but thankfully the scissors were only for fur pruning..love the look of the cake but i will have to wait a while cause it’s winter here..jane

I had to laugh out loud when I read about your cat! Lucky for all the cat’s I’ve owned they’ve all had short enough hair that couldn’t happen to them. Oh, and believe me it would have. BUT a certain ginormous golden retriever I owned just may have had all his hair buzzed off with a pouf left on the end of his tail. Not even kidding. He looked like a young lion. I wanna see your cat. I wouldn’t judge. Really. In fact you should take the opportunity to print out a poster and post it on the wall so whenever you need a laugh you can just look up! :D
Joy, Joy, Joy… I love when you post vegan. I’m just such tragic case over here recently developing a latex-fruit allergy. Say what? I know. Bananas make my stomach ache like no other ache. Sadness. But I love it, nonetheless, I will dream of the bread, and please keep vegan baked goods coming.

This bread looks gorgeous! I love bananas and mangos. I also have an endless supply of mangos as we kinda went crazy over here, bought, and froze like 3 crates of mangos.

I’s okay Joy-I triedx to shave my dog and he has a horrible bowl-like cut on top of his head and a stripe down the side of his body where I managed to get him cut before he totally freaked out…
Oh Well. Cats do need a change in hairstyle once in a while, … don’t they? ;-)

I have just made this and it is positively scrumptious!! Don’t have any vegan pals but I’m going to make this for all my silly friends who are concerned about saturated fat/cholesterol etc etc. Now stop trimming your cat.

Why don’t I bake with mango more often? I have no idea. This looks wonderful. And why don’t I have a cat? Well, that is an easier question… because they do things like lick your yummy bread!

Made this bread last night after joyously (love how I use your name like that? wink, wink) came across a beautiful mango in my fridge. My 2 year 13 year old daughters went BESERK over the final product…it was amazing! Moist and flavorful as predicted. You are the bomb….

Suprisingly yes, I have cut a cats hair before. And it was not even my cat. :) My best friend and I were extremely bored one day and just like you we looked from cat to scissors from scissors to cat and then at each other and both we like yes…no…YES! We tried giving it one of those show poodle cuts…you know the one where they have the balls at the feet and tail and then shaved everywhere else. Yeah. NOT cute on a cat. Her parents weren’t to happy either. But, her we had fun…that’s all that matters, right?
Hahaha oh no, the poor car! It happens to the best of us… Anything seems like a good idea 4 hours into a SYTTD marathon, midway through a kettlecorn coma. I have to admit, I wanna see a picture of the cat. But back to the bread: sounds awesome! Especially with a hefty scoop of cinnamon and ginger.

OH Joy the Baker, I made this and while it was baking I made Tracy’s banana bread and I’m having a taste off with myself and I honestly can’t decide. LOVE the mangos and can’t choose a winner because you are both amazing.
