Chocolate Coconut Almond Scones
14 of the 1,000,000,000,000,000,000 thoughts going through my brainscape:
- I’m 30. I can’t shop at Forever 21. First of all, I’m a Large…. and the shorts are still waay too tiny. Secondly, I look much better in Anthropologie clothes.
- I’m worth it.
- Yea. So I just stress-ate a bag of potato chips. At least I just bought the small bag and not the giant bag… even though the giant bag was on sale. I’m alright!
- I wish I had claws so I could scratch my cat back.
- At least I have scissors to give my cat awkward hair cuts when he’s sleeping.
- I can’t sing, unless I’m alone and I’m pretending like I’m Adele… and then I still can’t sing.
- No, sir. Laundromat flirting is not my thing. I see you trying to find an ‘in’. Also… the fact that you’re wearing a bluetooth and that you brought your own wooden hangers to the laundromat makes it clear to me that you’re a serial killer. I’ve seen CSI. I’ve seen Dexter. COME ON!
- Well, if Hoarders weren’t such a mind-bending show, I wouldn’t have to watch it. It’s really not my fault.
- I’ll write that email… but first I’ll eat this cold burrito.
- I’m looking at you and secretly wondering if you’re an extreme couponer.
- Can I deep fry cupcakes? No.
- Some girls cry when they’re sad. I cry when I’m bonkers angry. That must be really creepy to people. Like… killer creepy.
- When did girls start wearing fake hair and fake eyelashes!? Ladies… come on. Can we all just work on the same playing field? Geez. You’re really making my hair look mousy.
- What kind of scones should I make? I know… sweet everything bagels… Everything Scones! I’m a genius.
Toasted coconut is one of my favorite smells.
I wish my hair could smell like this all the time.
Scones. Why not just throw in everything!? By the handful… with buttermilk.
Come on! This is how we should live everyday.

Toasty, buttery, and soft. Studded with almonds, chocolate and coconut. A mouthful of breakfast goodness! Add a big dollop of cherry jam and shut.it.up! The best breakfast everyday.
Chocolate Coconut Almond Scones
makes about 8 to 10 scones
3 cups all-purpose flour
2 tablespoons raw or granulated sugar
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, cold and cut into cubes
1 large egg
3/4 cup plus 2 tablespoons buttermilk
1/3 cup shredded coconut (sweetened or unsweetened)
1/3 cup slivered almonds
1/2 cup semi-sweet chocolate chips
buttermilk and sugar for topping before baking
Place a rack in the center of the oven and preheat oven to 350 degrees F. Place shredded coconut and slivered almonds on a baking sheet and toast in the oven for about 8 to 10 minutes. Keep your eye on the coconut. It browns quickly. Remove from the oven when toasted and allow to cool. Heat oven to 400 degrees F. Line two baking sheets with parchment paper and set aside.
In a large bowl, whisk together flour sugar, baking powder, baking soda, and salt.
Toss the cold butter cubes into the flour mixture. Using your hands, quickly work in the butter into the flour mixture, breaking it up with your fingers. Some butter bits will be the size of small pebbles, and some will be the size of oat flakes. Set in the fridge for a few minutes.
Whisk together buttermilk and egg.
Remove the flour and butter mixture from the fridge and add coconut, almonds, and chocolate chips. Whisk together and create a well in the center of the mixture. Add the buttermilk mixture all at once to the well. Use a fork to bring the wet and the dry ingredients together. Mixture will be shaggy. Lightly flour a work surface and dump the shaggy dough mixture out onto the counter. Bring together the dough with your hands into a 1 1/2-inch thick disk . Use a 2 1/2-inch round biscuit cutter to cut out biscuits. Flour the biscuit cutter if it starts to stick to the dough.
Place biscuits, about 1 inch apart, on the prepared baking sheets. Brush with a bit of buttermilk and a few pinches of raw or granulated sugar. Bake biscuits for 14-18 minutes, until golden brown and cooked through. Remove from the oven and serve warm, with jam.

I love Anthro and Forever 21 but I think Anthro is better for us all.
Anthro has pretty dishes and every time I’m there I think “This plate is pretty. I’m going to buy it. Joy has pretty plates”. I kid you not.

You crack me up. I echo your sentiments about bluetooth-wearing people…like, seriously…are you really so important that you need to have a bluetooth in your ear 24/7? Why can’t you just answer your cell phone like us normal people?!

I know what you mean about toasted coconut. When I was a culinary school student, some days I would go home smelling divine. Of course, there were other days, too. Especially when we fried!

My sister and I often share how much you’ve nailed these thoughts that we also have on your website. And yes, I’m typing this while have a slice of your low fat wholemeal banana bread. I’m almost 30 and I shop in Forever 21! I feel I must since the one in London has just opened! But I agree anthropolgie clothes are way more grown up and pretty in that vintagey way. And i’m totally with you on the fake hair and eyelashes…girls didn’t do that when I was a youngster…i mean we’d dress up – but that meant fitted jeans and a nice top. nowadays my hair never feels big enough and my eyelashes are positively stumpy even with mascara… :)
If your hair smelt like that you’d have people chasing you down the street. For real.

As for toasted coconut hair, I buy Desert Organics coconut shampoo and conditioner from Whole Foods. It’s the most coconutty smelling brand I could find. And it makes your hair shiny–bonus.
You coils also just use coconut oil I think. I’ve never tried it though…I’m afraid I might start sucking on my hair if I did.
Don’t mourn Forever 21. Being 30 (and shaped like a woman) is awesome (although for those my hip-less sisters, rock on… I don’t hate.)

Lovely Joy, I saw so much of myself in this post. I love Anthropologie. Hate forever21 but mostly because I look god-awful in their clothes, even at 25. I’m a teacher and I totally stress eat at my desk when the kids drive my bonkers; except it doesn’t involve chips but rather a jar of reduced-fat peanut butter and a plastic spoon. And once marshmallows. I totally tried to give my dog a haircut last weekend while he was sleeping. Terrible idea. He looks quite unfortunate. And this Sunday while my husband was at work I was also pretending to be Adele. It’s nice to read other’s confessions and say, “Hey, I do that too!!!”
Anthro is, indeed, way more acceptable for people our age, but way expensive! Sigh.

I, too, cry when I am angry. Which makes me even MORE furious, which, in turn, makes me cry more. I do not understand myself sometimes. Also, I cry when I’m extremely happy, when I am sad and at certain sentimental cat food commercials, the drop of some hats, etc. But I STILL laugh more and that is what matters! - Angry cry – YES. I haven’t been able to explain this to other people. I almost never cry. But as soon as things get heated, the tears flow.
Also, I often thing that scones are a dime a dozen, but really, these look DELICIOUS. My stomach is rumbling.

I TOTALLY think this about myself too! Every time I get their emails, I look but am always left wondering, “Why can’t the skirts and shorts go to the knee???” :( I’ve never been to an Anthropologie store. I think if I go, I may never come out.

These were crazy good! Everyone in the house scarfed them down (with the exception of my insanely picky 7yo daughter who wouldn’t try them after hearing the words coconut and almond. More for me!:) I’m plotting another opportunity to make them soon! The day I made them ended up being a bit of a “Joy the Baker” binge; I also made ginger syrup that day (I like to use it to make a kind of hot ginger lemonade), and for lunch ate some ginger lentil soup I had made the day before. And probably listened to your podcast as I baked. Can’t quite remember, I’m still in a scone-induced haze…

What I do about Forever 21 is cry. No, I mean, I buy big objects, like maxi dresses, and then cut them down into something that makes sense, like a skirt. You can’t buy fabric as cheap as their clothes, isn’t that weird?
