Peanut Butter Banana Smoothie
Some mornings are milkshake mornings. These also tend to be the kind of mornings that also require old-school Mariah Carey blasting into the bathroom while you belt it out in the shower. It’s possible that I’m only speaking for myself here. Surely you’re more refined in the morning with your black coffee and classical music.
I created a smoothie that could best satisfy my morning milkshake craving. Peanut butter helps things feel much more indulgent (so does Mariah Carey).
Chia seeds are my current jam. I love that they’re packed with omegas.
Chia seeds also help to thicken the smoothie. They expand when they touch liquid. You can also leave the chia seeds out of the smoothie. No pressure. That’s cool too.
Ground cinnamon and fresh nutmeg help this smoothie taste like banana bread.
No harm in that.
I should tell you now… tomorrow is going to get a little cat-crazy here on Joy the Baker. Consider yourself warned. … ok, that sort of sounded like a threat. It wasn’t.
Green smoothies are worthwhile. Of course they are. It’s also cool if you need a milkshake. There’s no shame in that game.
I topped my smoothie-milkshake with my current breakfast obsession: Toasted Oat Muesli. Breakfast with a straw and spoon. This just feels right.
Peanut Butter Banana Smoothie
makes 2 small or 1 large smoothie
1 banana, mashed or cut into chunks (frozen bananas will create a colder smoothie)
1/2 cup yogurt (I used Vanilla Goat Yogurt)
¼ cup all-natural peanut butter
¼ teaspoon ground cinnamon
big pinch freshly grated nutmeg
2 tablespoon chia seeds (optional)
1 ½ cups cold almond milk
Combine all ingredients in a blender and blend until smooth. Serve immediately. It’s that easy!

I make one just like that but I add a teaspoon of unsweetened cocoa powder and a raw egg. My 3 year old son loves it too.

yummmmmy! I make a smoothie like this all the time – sometimes I make it a green smoothie and add some greens (you don’t even taste them). I love when you post complex and whimsical recipes, but I really appreciate the easy meals every one in a while. :D

Love the shake and love the chia seed. I have had a tablespoon of them in coconut water for everyday for the last 3 wks and now are so addicted.

Pb & Banana. And a blender. Pretty much the story of my life around here! Cinnamon & almond milk can do no wrong and love chia for thickening. School mornings or midnight snacks, yep, this is pretty much a go-to type of smoothie for us!

I’m a Tennessee girl living in Sweden with my husband….and I sure do wish I could find chia seeds here. I’m also making a breakfast smoothie today(as soon as I’ve had my coffee)and chia seeds would be perfect, but they haven’t really hit over here yet. Shame, huh?
I’m a Los Angeles girl living in London with my husband :) So I guess up until recently, UK was only allowed chia as an ingredient in bread but since this past summer they allowed it to be imported in (although at a very high price at Whole Foods-type stores). So maybe you will get access to it soon too!
p.s. Can’t wait to visit Sweden sometime soon
