<p style="text-align: left;">You don&#8217;t really need a lot of convincing when it comes to this bread, do you?</p>
<p style="text-align: left;">Three things are working in this loaf&#8217;s favor:   peanut butter, banana and flaxseed meal.  Oh!  Butter too.  That&#8217;s four things.</p>
<p style="text-align: left;">This bread is super moist with a slightly crunchy top and crunchy peanut bits baked in.  Peanut butter and banana are a combination as old as time so this bread just makes sense&#8230; don&#8217;t you think?</p>
<p style="text-align: left;">Now,  if you wanted to add chocolate chips and a splash of bourbon.. I want to marry you.</p>

<p style="text-align: left;"><strong>Peanut Butter Banana Bread</strong></p>
<p style="text-align: left;">Makes: one 9&#215;5-inch loaf</p>
<p style="text-align: left;">recipe adapted from CookingLight</p>

<p style="text-align: left;">1 1/2 cups mashed ripe bananas</p>
<p style="text-align: left;">1/3 cup plain or vanilla fat free yogurt</p>
<p style="text-align: left;">1/3 cup creamy all-natural peanut butter</p>
<p style="text-align: left;">3 tablespoons butter, melted</p>
<p style="text-align: left;">2 large eggs</p>
<p style="text-align: left;">1/2 cup granulated sugar</p>
<p style="text-align: left;">1/2 cup brown sugar</p>
<p style="text-align: left;">1 cup whole wheat flour</p>
<p style="text-align: left;">1/2 cup all-purpose flour</p>
<p style="text-align: left;">1/4 cup ground flaxseed meal (I&#8217;ve also baked this bread without the flaxseed meal&#8230; because I forgot to add it, and the bread was still moist and delicious)</p>
<p style="text-align: left;">3/4 teaspoon baking soda</p>
<p style="text-align: left;">1/2 teaspoon salt</p>
<p style="text-align: left;">1/2 teaspoon ground cinnamon</p>
<p style="text-align: left;">1/8 teaspoon ground allspice</p>
<p style="text-align: left;">1/4 cup chopped dry roasted peanuts</p>
<p style="text-align: left;">Place a rack in the center of the oven and preheat to 350 degrees F.  Grease and flour a 9&#215;5-inch loaf pan.  Set aside.</p>
<p style="text-align: left;">In a large bowl, whisk together flours, flaxseed meal, baking soda, salt, ground cinnamon and ground allspice.</p>
<p style="text-align: left;">In a medium bowl, whisk together  mashed bananas, yogurt, peanut butter and melted butter.  Whisk in eggs and sugars.  Blend mixture until no sugar lumps remain.</p>
<p style="text-align: left;">Pour the wet mixture into the larger bowl with the dry ingredients.  Fold together with a spatula until no more flour bits remain.  Fold in the chopped nuts as well.  Pour the batter into the prepared baking pan and cake for 55 to 65 minutes, or until a skewer inserted into the center of the loaf comes out clean.</p>
<p style="text-align: left;">Remove from the oven and allow to cool in the pan for 20 minutes before running a butter knife along the edges of the pan and inverting the bread onto a wire rack to cool completely.</p>
<p style="text-align: left;">This bread lasts, well wrapped at room temperature,for up to 4 days.  It is also great to store, well wrapped, in the freezer.</p>

<p>You should be thankful I didn&#8217;t reach into my fridge for this recipe.  Cherry Pesto Kale Bread sounds like a big mistake.</p>
<p>Instead I scavenged through my cupboards.  What did I find?  A can of crushed pineapple.  A bag of dried beans.  Shredded coconut and bananas that I had very obviously forgotten about.   So!  Yes!  Bread!  Minus the beans&#8230;. cause&#8230;  that would just be weird.</p>
<p>So, just in case you&#8217;re keeping score&#8230; you could go ahead and call me an &#8216;oh crap I&#8217;m out of eggs and butter and just about every other animal product needed for baking&#8217; type of vegan.  Also&#8230; I totally love bacon. Worst vegan ever.</p>

<p>You would never know that this bread was something I threw together out of cupboard desperation.  It&#8217;s dang good.  With bananas and pineapple, you can afford to add less oil&#8230; meaning less fat.  Of course, all our dreams of low fat banana bread fly out the window when we add sweetened shredded coconut.  It&#8217;s just too good to leave out.</p>
<p>Moist.  Flavorful.  Fruity.  Vegan.  This just proves that we can add just about anything to banana bread and still call it delicious.  Well&#8230; except dried beans.  That will always be weird.</p>

<p><strong>Coconut Pineapple Vegan Banana Bread</strong></p>
<p>makes one 9&#215;5-inch loaf</p>

<p>2 large or 3 small very ripe bananas<br />
1/4 cup crushed pineapple, drained<br />
1/4 cup canola oil<br />
1/2 cup plus 2 tablespoons sugar<br />
1 cup all-purpose flour<br />
1 cup white whole wheat flour<br />
1 teaspoon baking soda<br />
1 teaspoon ground cinnamon<br />
1/2 teaspoon salt<br />
generous pinch of ground ginger<br />
pinch of allspice<br />
1/2 cup sweetened shredded coconut</p>
<p>Preheat the oven to 350 degrees F. Lightly grease and flour a 9 x 5-inch loaf pan.</p>
<p>In a large mixing bowl, mash the bananas really well. Add the sugar, pineapple, and oil and whisk briskly to incorporate.</p>
<p>Sift in the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined.  Fold in the coconut.</p>
<p>Transfer the batter to the prepared pan and sprinkle with extra sugar if you&#8217;d like.  Bake for 45 to 50 minutes. The top should be lightly browned and a knife inserted through the center should come out clean.</p>
<p>Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely.</p>

<p>Not every morning in my life is filled with <a href="http://www.joythebaker.com/blog/2008/12/milk-chocolate-chip-buttermilk-pancakes/" target="_blank">Chocolate Chip Buttermilk Pancakes</a> and <a href="http://www.joythebaker.com/blog/2008/05/chocolate-chocolate-chip-banana-bread/" target="_blank">Chocolate Chocolate Chip Banana Bread</a>&#8230; not when things like my ten year class reunion and bathing suit season loom just around the corner.  For real friends, those are two scary things.  At least I don&#8217;t have to go to my ten year reunion in my bathing suit.  Can you imagine the horror!?   Yea&#8230; so there&#8217;s always a silver lining.</p>
<p>I&#8217;d like to introduce you to Low Fat Oatmeal Banana Bread.  If this bread were one of your dear friends from high school, it would be that friend who wore old lady shoes because they were the most practical, and played the trombone, and was the super smart editor of the school newspaper.  This bread would be the friend that was super sensible, and sweet and just downright made you feel good about your day.</p>
<p>Go ahead, think of this Low Fat Oatmeal Banana Bread as your friend&#8230; and then it eat.  No, there&#8217;s nothing weird about that.</p>

<p>This bread is packed full of happy, heart-healthy oats, cinnamon spice and crazy ripe bananas.  It&#8217;s just the thing to throw together over the weekend, slice up, wrap individually, and freeze for breakfast for the entire week.  I just grab a slice from the freezer as I&#8217;m running out the door, and by the time I have a chance to eat it, it&#8217;s perfectly defrosted.  Of course the microwave and toaster oven work wonders too.</p>

<p><strong>Low Fat Oatmeal Banana Bread</strong></p>

<p>makes 1 loaf  of  10 slices, 4 points per slice</p>
<p><strong><span style="font-weight: normal;">- 1 1/4 cup all-purpose flour<br />
- 1/2 cup packed brown sugar<br />
- 1/2 tsp  salt<br />
- 1/2 tsp baking soda<br />
- 1/4 tsp baking powder<br />
- 1/2 tsp cinnamon<br />
- 3 tsp canola or walnut  oil<br />
- 1 large egg, beaten<br />
- 2 medium egg whites, beaten<br />
- 3 large bananas, ripe<br />
- 1 cup uncooked old fashioned oats</span></strong></p>
<p><strong><span style="font-weight: normal;">Preheat oven to 350°F.  Grease and flour a loaf pan and set aside. In a large bowl, stir together dry ingredients including the oats and cinnamon. </span></strong></p>
<p><strong><span style="font-weight: normal;">In a smaller bowl, mash bananas with a potato masher or fork. Add oil and whole egg and mix thoroughly. </span></strong></p>
<p>Add the wet ingredients to the dry and mix well.  Batter will be fairly thick.</p>
<p><strong><span style="font-weight: normal;">In a medium sized bowl, with an electric hand mixer, beat the egg whites until medium stiff peaks form.  Fold the egg whites into the batter in three additions. </span></strong></p>
<p><strong><span style="font-weight: normal;">Pour batter into pan and bake until top of loaf is firm to touch, 45 to 50 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.</span></strong></p>

<p>I remember when I was a kid, I used to entice my little sister into the kitchen to cook with me. That sounds sweet and cozy, right? Well&#8230; I had slightly more selfish intentions. I had plans for my sister once we hit the kitchen: I would do all the fun stuff like measuring out sugar and chocolate, and she would do all of the not so fun stuff, like getting the flour containers out of the pantry, reaching for bowls, and doing all the dirty dishes. Baking always seemed like more fun if I had someone to do all the grunt work for me.</p>
<p>That sort of fun in the kitchen with my sister didn&#8217;t last long. Lauren very quickly caught on to my tricks, and before long we were sharing the dirty dish responsibilities.</p>
<p>Since then, I&#8217;d like to think I&#8217;ve become a much more accommodating kitchen partner. Ask Simon. You know Simon, he&#8217;s that crazy kid fromFoodproof. We made Almond Banana Bread together. It went swimmingly, and I don&#8217;t think I made him do the dishes.</p>

<p>This banana bread was an excuse to accomplish two things: to watch Simon use a spatula and to experiment with Almond Oil. Do you bake with nut oils? I was surprised at how mild, if nonexistent the nut flavor was. We used a bit of oil, and a bit of melted butter. The oil definitely made for a more dense and moist banana bread experience. Tossed together with toasted, coarsely chopped almonds, this nutty banana bread was pretty delicious.</p>

<p>3 to 4 ripe bananas, smashed<br />
1/3 cup melted salted butter (or in a 1/3 measuring cup measure out half almond oil and half melted butter)<br />
3/4-1 cup light brown sugar, depending on the level of sweetness you prefer<br />
1 egg, beaten<br />
1 teaspoon vanilla<br />
1 tablespoon bourbon<br />
1 teaspoon baking soda<br />
Pinch of salt<br />
1 teaspoon cinnamon<br />
1/2 teaspoon nutmeg<br />
Pinch of ground cloves<br />
1 1/2 cup of flour</p>
<p>3/4 cup coursely chopped almonds</p>
<p>No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter and almond oil into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and bourbon, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix. Add the almonds, and stir until just incorporated. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.</p>

<p>I always have the best of intentions when I buy barely yellow bananas at the grocery store.  I have visions of healthy breakfast shakes, peanut butter and banana sandwiches, and healthy mid afternoon snacks.  Without fail the bananas turn brown and speckled.  They start to mush and sink into themselves.  They just become all around unsexy.  They threaten to spread they&#8217;re over exposure to the unsuspecting apples and oranges in the same bowl, and we simply can&#8217;t tolerate that!</p>
<p>I should just come to terms with the real reason that I buy bananas- so that I can mix them with chocolate and try to pass them off as breakfast.  This Chocolate Chocolate Chip Banana Bread is attempt to do just that-  eat loads of chocolate and say yes!  Yes, I ate a glorious breakfast!</p>
<p>There is satisfaction in that, to be sure!</p>

<p style="text-align: left;">2 cups all-purpose flour</p>
<p style="text-align: left;">1 cup unsweetened cocoa powder</p>
<p style="text-align: left;">1 1/2 teaspoons baking powder</p>
<p style="text-align: left;">1/2 teaspoon salt</p>
<p style="text-align: left;">1/4 teaspoon baking soda</p>
<p style="text-align: left;">1 stick (8 Tablespoons) unsalted butter, at room temperature</p>
<p style="text-align: left;">3/4 cup sugar</p>
<p style="text-align: left;">1/2 cup (packed) light brown sugar</p>
<p style="text-align: left;">2 large eggs</p>
<p style="text-align: left;">2 ripe bananas, mashed</p>
<p style="text-align: left;">3/4 cup buttermilk</p>
<p style="text-align: left;">3 ounces bittersweet chocolate, coarsely chopped</p>
<p style="text-align: left;">Center a rack in the oven and preheat the oven to 350 degrees F.  Butter a 9&#215;5 inch loaf pan and place it on an insulated baking sheet or on two regular baking sheets one on top of the other.  This extra insulation will keep the bottom of the bread from overbaking.</p>
<p style="text-align: left;">Sift together the flour, cocoa, baking powder, salt ad baking soda.</p>
<p style="text-align: left;">Working with a stand mixer with a paddle attachment, or with a hand mixer in a large bowl, beat the butter at medium speed for about a minute  until soft.  Add the sugars and beat for 2 minutes more.  Add the egs one at a time, beating for a minute after each addition.  At this point , the batter may look a little curdled- it&#8217;s ok.  Reduce the mixer speed to low and mix in the mashed bananas.  Add the dry ingredients in three additions, mixing only until they disappear into the batter.  Still on low sweep, add the buttermilk, mixing until it is incorporated.  Stir in the chopped chocolate.  Scrape batter into prepared pan.</p>
<p style="text-align: left;">Bake for 3o minutes.  Cover the bread loosely with a foil tend to keep the top from getting too dark, and continue to bake for another 40-45 minutes (total baking time is between 70 and 75 minutes), or until a thin knife inserted into the center comes out clean.  Transfer the pan to a rack and cool for at least 20 minutes before running a knife around the edges of the bread and unmolding it.  Invert and cool to room temperature right side up.</p>
