<p>Hey Dude (that I&#8217;m currently dating),</p>
<p>We need to talk.  It&#8217;s about your mother.</p>
<p>Mostly&#8230; it&#8217;s about how I need to <em>meet</em> your mother.  We&#8217;ve been carrying on for a while now&#8230; and I need to meet the lady that birthed you, clothed you, slapped you upside the head, and made you the awesome man you are now.  If I don&#8217;t meet her soon, she will surely think me some sort of hussy harlot who was born in a barn and doesn&#8217;t much care for other people&#8217;s mothers.  This is not the case.  I care about most mothers, often.</p>
<p>It&#8217;s a lady thing that perhaps you don&#8217;t understand.  I need to be nervous.  I need to bite off all my nails.  I need to agonize over the perfect outfit that will make me look sophisticated, but sweet and approachable, womanly without being more womanly that her.  I need the outfit that says I can damn well take care of myself, and keep her dear and darling son in line for the rest of his life.  It&#8217;s a fine fine fiiiine line.</p>
<p>I need to let your mother look me up and down in examination.  I need to stand there and let her envision me as her daughter-in-law.  I need to eat her casserole, express my desire for the recipe&#8230; then I need to do her dishes.</p>
<p>I need to let her tell me how to do things that I already know how to do, like make a pie, and pluck my eyebrows.  We need to watch 60 Minutes together.  She in her recliner, me sitting on the floor.  I need to offer to bring dessert.  She&#8217;ll make a face when it&#8217;s being served, and enjoy it despite herself.  It&#8217;s all a dance.  Every moment of it.  It&#8217;s all a test&#8230; because mothers do not let their sons go quietly&#8230; they let them go passive aggressively.</p>
<p>Lastly, she needs to see that I make you happy.  That&#8217;s where you come in.  Don&#8217;t act weird.  Well, don&#8217;t act weirder than you usually act.  Be natural&#8230; and put your arm around me once in a while.  It&#8217;s your job to make sure that no one gets a third glass of wine.  That&#8217;s when things get weird.</p>
<p>It&#8217;s also your job NOT to tell your mother that there are beets in the cake I&#8217;m serving for dessert.  That will be our little secret.  Unless she loves it&#8230; then I&#8217;m taking all the glory.</p>

<p style="text-align: left;">Quite right.  This chocolate cake is chocked full of roasted beets.</p>
<p style="text-align: left;">Beets are trimmed of their greens (which are delicious sauteed) and roasted whole in foil and just a touch of oil.  You know&#8230; like you&#8217;re making a beet salad, but you&#8217;re totally making cake.</p>

<p style="text-align: left;">Besides beets, this cake also has the usual cake- y suspects:  flour, cocoa powder, baking soda, powder, and salt.</p>

<p style="text-align: left;">I love preparing cake pans for baking.  Something about the ritual just calms me.</p>
<p style="text-align: left;">Parchment paper rounds (that are cut by hand) totally ensure that the cake will come out of the pan in one piece.  It&#8217;s an extra bit of work, but I love the insurance.</p>

<p style="text-align: left;">Roasted beets are cooled and peeled (which is easy&#8230; not to worry), and grated on the fine side of a box grater.</p>
<p style="text-align: left;">If you&#8217;re wondering about beet stained hands&#8230; yes, I had two.  They eventually wash clean.</p>
<p style="text-align: left;">Beets add moisture and sweetness to the cake.  Beets do not make the cake taste like a salad.  That&#8217;s an important thing to know.</p>
<p style="text-align: left;">The cake batter will be a purple color, but will bake into a moist chocolate cake with no trace of beets.</p>

<p style="text-align: left;">Let&#8217;s talk about frosting.  Butter and cream cheese are left at room temperature until soft.  They&#8217;re beaten with powdered sugar, vanilla, and a squeeze of lemon.</p>
<p style="text-align: left;">Beets, too!  Beets, shredded and mashed add a slight sweetness and intense color to the frosting.  It&#8217;s all you need for food coloring.  It&#8217;s delightful and delicious.  And again&#8230; it does not taste like salad.</p>

<p style="text-align: left;">The cake itself is moist and chocolate-y.  It&#8217;s not too sweet either!  Bonus.  The frosting is bright pink, speckled with beet bits, and creamy sweet.</p>
<p style="text-align: left;">No one would ever know this cake is chocked full of vegetables.  We can just keep that little bit of information between us.  Secret ingredient power!</p>

<p><strong>Chocolate Beet Cake with Beet Cream Cheese Frosting</strong></p>
<p>Makes one 8 or 9-inch layer cake</p>
<p>adapted from Fine Cooking November 2001</p>

<p>For the Cake:</p>
<p>2 medium beets, unpeeled but trimmed of their greens</p>
<p>1 teaspoon vegetable oil</p>
<p>6 ounces (3/4 cup) unsalted butter, softened, plus more for greasing the pans</p>
<p>1 cup packed brown sugar</p>
<p>3/4 cup granulated sugar</p>
<p>2 large eggs</p>
<p>1 teaspoon pure vanilla extract</p>
<p>2 cups all-purpose flour, plus more for dusting the pans</p>
<p>2/3 cup unsweetened cocoa powder</p>
<p>1 teaspoon baking soda</p>
<p>1/2 teaspoon baking powder</p>
<p>1 teaspoon salt</p>
<p>1 1/4 cups buttermilk</p>
<p>For the Frosting:</p>
<p>1 cup (2 sticks) unsalted butter, softened</p>
<p>8 ounces (1 brick) cream cheese, softened</p>
<p>4 to 5 cups powdered sugar, sifted</p>
<p>2 tablespoons finely grated beets, mashed with a fork</p>
<p>1 teaspoon pure vanilla extract or scrapings of one vanilla bean pod</p>
<p>1-2 teaspoons milk, depending on desired consistency</p>
<p>1/2 teaspoon fresh lemon juice</p>
<p>pinch of salt</p>
<p>Place a rack in the center and upper third of the oven.  Preheat oven to 375 degrees F.</p>
<p>Thoroughly wash beets under running water, and trim their leaves, leaving about 1/2 inch of stem.  Place clean beets in a piece of foil.  Drizzle with just a bit of vegetable oil.  Seal up foil.  Place on a baking sheet in the oven.  Roast until beets are tender when pierced with a knife, about 1 hour.</p>
<p>Remove the beets from the oven.  Open the foil and allow beets to cool completely.  Beets will be easy to peel (just using a paring knife) once completely cooled.</p>
<p>Using a box grater, grate the peeled beets on the finest grating plane.  Measure 3/4 cup of grated beets for the cake and 2 tablespoons for the frosting.  Set aside.</p>
<p>Reduce the oven temperature to 350 degrees F.  Use butter to grease two 8 or 9-inch round baking pans.  Trace a piece of parchment paper so it is the same size as the bottom of the cake pan.  Cut it out and place inside the cake pan.  Butter the parchment paper.  Add a dusting of flour to coat the pan.  Set pans aside while you prepare the cake.</p>
<p>In the bowl of an electric stand mixer, fitted with a paddle attachment, cream together butter and sugars.  Beat on medium speed until pale and fluffy, about 3 to 5 minutes.  Beat in eggs, one at a time, for one minute after each addition.   Stop the mixer and scrape down the sides of the bowl as necessary.  Once eggs are incorporated, beat in beets and vanilla extract until thoroughly combined.</p>
<p>In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.</p>
<p>Add half of the dry ingredients to the butter and egg mixture.  Beating on low speed , slowly add the buttermilk.  Once just incorporated, add the other half of the dry ingredients.  Beat on medium speed until milk and dry ingredients are just incorporated.  Try not to overmix the batter.  Bowl can be removed from the mixer and mixture folded with a spatula to finish incorporating ingredients.  Cake batter will be on the thick side&#8230; not pourable.</p>
<p>Divide the batter between the two prepared cake pans.  Bake for 23 to 25 minutes (for a 9-inch pan) or 30-32 minutes (for an 8-inch pan).  Cake is done when a skewer inserted in the center comes out clean.  Remove cakes from the oven and allow to rest for 10 minutes.  Invert cakes onto a cooling rack to cool completely before frosting and assembling the cake.</p>
<p>To make the Frosting:</p>
<p>In the bowl of an electric stand mixer, fitted with a paddle attachment, beat cream cheese for 30 seconds, until pliable and smooth.  Add the butter and beat for another 30 seconds, until well combined.  Stop the mixer and scrape down the bowl as necessary.  Beat in the beets.  Add the powdered sugar, vanilla extract, milk, lemon juice, and salt.  Beat on medium speed until smooth and silky.  Refrigerate the frosting for 30 minutes before frosting the cooled cakes.</p>
<p>To assemble the cake, place one layer of cake on a cake stand or cake plate.  Top with a generous amount of pink frosting.  Spread evenly.  Place the other cake on top of the frosting.  Top with frosting.  Work frosting onto the sides of the cake.  You will have extra frosting left over.  Refrigerate for an hour before serving (it will make the cake easier to slice).  Cake will last, well wrapped in the refrigerator, for up to 4 days.</p>

<p style="text-align: left;">True:  Things in life can be simultaneously exciting and terrifying.  Exciting progress.  Exciting growth.  Exciting opportunities&#8230; and at the same time totally bonkers nerve-wracking.  When the road ahead is steep, and full of the promise of adventure&#8230;. and you totally want to be on that crazy road&#8230; but you also appreciate the smooth and steady road you once knew.  That road was safer.  There were more cookies and less adventure.</p>
<p style="text-align: left;">Here&#8217;s another important truth for me:  Always sign up for adventure.  Always say yes.  Even if it&#8217;s terrifying to the core of your soul.  That means you&#8217;re doing the right thing.  You&#8217;re learning and growing and shoving yourself right out of your comfort zone.    Unless&#8230; well, unless there are guns and heists.  In that case&#8230; stay in your comfort zone and away from guns.</p>
<p style="text-align: left;">Also&#8230; before you forge forward.  Have breakfast (preferably with chocolate) and pack cookies.</p>

<p style="text-align: left;">They&#8217;re what you eat after you share runny eggs and buttered toast with your breakfast mate.</p>
<p style="text-align: left;">Breakfast dessert is what comes after breakfast breakfast.  It&#8217;s a sweetly defined &#8216;second breakfast&#8217;.  Proudly, sweetly, specific.</p>

<p style="text-align: left;">They&#8217;re a simple combination of buttermilk, melted butter, chocolate chunks, and fresh raspberries.</p>
<p style="text-align: left;">Oh!  If fresh raspberries are going to break the bank (I totally get it), thawed frozen berries, drained of some of their juices work wonderfully well.</p>
<p style="text-align: left;">Treat yourself&#8230; that&#8217;s what <a href="http://www.shutterbean.com/" target="_blank">Tracy</a> would say.  Treat yourself to sweet pancakes and an adventurous (although excitingly terrifying) life.</p>

<p style="text-align: left;">makes about 10-12 small pancakes</p>

<p style="text-align: left;">1 cup all-purpose flour</p>
<p style="text-align: left;">1 tablespoon brown sugar</p>
<p style="text-align: left;">1 teaspoon baking powder</p>
<p style="text-align: left;">1/2 teaspoon salt</p>
<p style="text-align: left;">dash of ground cinnamon</p>
<p style="text-align: left;">1 cup buttermilk</p>
<p style="text-align: left;">2 tablespoons unsalted butter, melted and slightly cooled</p>
<p style="text-align: left;">1 large egg</p>
<p style="text-align: left;">1 teaspoon pure vanilla extract</p>
<p style="text-align: left;">1/3 cup dark chocolate chunks</p>
<p style="text-align: left;">1/2 cup fresh raspberries</p>
<p style="text-align: left;">maple syrup and powdered sugar for garnish</p>
<p style="text-align: left;">butter for skillet</p>
<p style="text-align: left;">In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon .  Set aside.</p>
<p style="text-align: left;">In a small bowl, whisk together buttermilk, melted butter, egg, and vanilla extract.</p>
<p style="text-align: left;">Add the dry ingredients, all at once to the wet ingredients.  Whisk to combine.  If there are a few lumps in the mixture, that&#8217;s totally fine.  Stir in chocolate chips.  Let the mixture rest for 5 minutes while the skillet heats.</p>
<p style="text-align: left;">Preheat oven to 200 degrees F.  Place a heat-proof plate in the oven to help keep cooked pancakes warm.</p>
<p style="text-align: left;">Over medium-low heat, add about 1/2 tablespoon of butter to the non-stick skillet.  Add 2 tablespoon of batter to the pan for each pancake.  Cook until browned, flip once and cook on the other side until golden brown and cooked through.  Place cooked pancakes on the plate in the oven until all of the pancakes are cooked and ready to serve.</p>
<p style="text-align: left;">To serve, smash raspberries in a small bowl.  Place a few smashed raspberries on a plate.  Top with three or four small pancakes and more raspberries.  Add maple syrup as desired.  Serve warm.  They&#8217;re delicious.</p>

<p style="text-align: left;">The spongy texture comes from eggs.  Egg yolks and egg whites are separated, beaten in a mixer until thick and stiff, then folded back together.</p>

<p style="text-align: left;">Do you see all those cracks in the cake?  Nope&#8230; you don&#8217;t see em at all.  They&#8217;re all folded and rolled up&#8230; and covered in whipped cream and chocolate.  Even when things go cracked&#8230; whipped cream heals most wounds.</p>
<p style="text-align: left;">This cake is such a lovely holiday treat.  It&#8217;s festive and way way impressive.  It&#8217;s so light.  It&#8217;s effortless to eat.  It reminds me of fluffy cake ice cream.  So so dang yummy!</p>
<p style="text-align: left;">Don&#8217;t like peppermint?  Feel free to flavor your whipped cream filling with only pure vanilla, with almond extract, or orange zest and extract.</p>

<p><strong>Chocolate Peppermint Roll</strong></p>
<p>Makes 1 roll cake, serves about 8</p>

<p>For the Cake:</p>
<p>4 oz semi sweet chocolate, chopped fine</p>
<p>6 large eggs, separated</p>
<p>1/4 cup plus 2 tablespoons granulated sugar</p>
<p>1 teaspoon pure vanilla extract</p>
<p>pinch of salt</p>
<p>3/4 teaspoon cream of tartar</p>
<p>For the Whipped Filling:</p>
<p>1 1/4 cup heavy cream, cold</p>
<p>3 tablespoons granulated sugar</p>
<p>2 teaspoons pure vanilla extract or scrapings from 1 vanilla bean</p>
<p>1-2 teaspoons peppermint extract (start with one teaspoon and add more according to your taste).</p>
<p>For the Ganache:</p>
<p>1 cup semi-sweet chocolate pieces</p>
<p>2/3 cups heavy cream</p>
<p>To make the Cake:</p>
<p>Place a rack in the upper third of the oven and preheat oven to 350 degrees F.  Grease a 17&#215;12-inch baking sheet with butter or vegetable spray.  Line the baking sheet with parchment paper (not foil&#8230; definitely parchment), and grease and flour the paper too.  The parchment should overhand the sides of the pan just an inch or so.  Let the baking sheet aside.</p>
<p>It&#8217;s easiest to separate egg yolks from egg whites when they are cold.  After separating, allow them about 20 minutes to come to room temperature.</p>
<p>In the bowl of an electric stand mixer fitted with a whisk attachment, beat together egg yolks and 1/4 cup granulated sugar.  Beat the eggs until they are thick and pale in color.  This usually takes about 5 to 7 minutes at medium-high speed.  The egg yolk mixture will pour in a thick ribbon from the beater, that&#8217;s how your know they&#8217;ve been beaten enough.</p>
<p>While the eggs are beating, melt the chocolate pieces.  You can melt them in the microwave with low heat for a few seconds, stirring every once in a while as it melts.  I melt chocolate over a double boiler.  Place a few inches of water in a medium pan.  Bring to a simmer.  Place chocolate pieces in a heatproof bowl, and place the bowl over the boiling water.  Stir the chocolate until it is melted completely.  Turn off the heat and carefully remove the bowl from the simmering water.  Allow the chocolate to cool for just a few minutes.</p>
<p>Add the thickened egg yolk mixture to the chocolate mixture.  Gently stir together until just incorporated.  Stir in the vanilla.  The addition of the chocolate to the egg yolk mixture will thicken the egg yolks further, and make the chocolate appear fluffy in texture.  Perfect.  Set aside.</p>
<p>Clean the bowl and whisk attachment of your electric mixer well.  Dry them to insure that no remaining egg yolk is present.  Add the egg whites to the bowl.  Using the whisk attachment, beat on medium speed until frothy, about 2 minutes.  Add the pinch of salt, and gradually add the cream of tartar.  Increase speed to medium-high until soft peaks form.  Gradually add the remaining 2 tablespoons of sugar while beating.  Allow the mixture to beat until stiff peaks form.</p>
<p>Place the chocolate egg yolk mixture in a large bowl.  Place about 1/3 of the stiff egg whites in the bowl and gently fold.  Use a light hand to sweep the egg whites through the center of the chocolate mixture, up and under.  Fold until just incorporated, but large egg white and chocolate streaks remain.  Add another 1/3 of the egg whites and continue to fold.  The batter will be glossy and fluffy.  This fluff will create the desired sponge texture of the cake, so we want to deflate the egg whites as little as possible.  Fold in the remaining egg whites and gently fold together until just about entirely incorporated.</p>
<p>Immediately transfer the batter to the prepared baking sheet.  Carefully smooth into the pan creating an even thickness.  Don&#8217;t fuss with the batter too much.  The more fussing, the more the cake deflates.  If the cake batter doesn&#8217;t easily each end to end, then just try to make a even rectangle.  Don&#8217;t sweat it.</p>
<p>Bake cake for 15 to 17 minutes.  When done the cake will have a dry top and a spongey, bounce back feel.</p>
<p>Remove from the oven and allow to cool completely.</p>
<p>While the cake cools, prepare the whipped cream and ganache.</p>
<p>To make the Whipped Filling:</p>
<p>Place heavy cream in the bowl of an electric stand mixer with the granulated sugar, vanilla and peppermint extract.  Beat to soft, whipped cream peaks.  The whipped cream should hold its shape but still be velvety and spreadable.  Allow to rest in the refrigerator.</p>
<p>To make the Ganache:</p>
<p>Place chocolate pieces in a medium bowl.  Heat cream in a small sauce pan to almost boiling.  The milk will be steaming hot.  Pour the hot cream over the chocolate pieces.  Allow to stand for one minute before whisking into a smooth and glossy chocolate sauce.  Allow to rest in the fridge until thickened slightly, about 30 minutes.</p>
<p>To Assemble the Cake:</p>
<p>Allow cake to cool completely.  Remove the cake, using the overhang of parchment paper, from the baking sheet.  Spread with a thin layer of whipped cream filling.  This doesn&#8217;t need to be a thick later.  When the cake is rolled, there will be ample filling.</p>
<p>Place the cake so that the 12-inch side is facing you.  We&#8217;re going to roll from the short side.</p>
<p>Use the parchment paper to help you.  Don&#8217;t worry about creating a tight roll.  This isn&#8217;t like rolling cinnamon rolls.  Gently roll the cake, removing the parchment paper as the cake is rolled.  The first roll or two will most likely crack and it&#8217;s being folded.  Don&#8217;t let this stop you.  This cracking is totally normal.  As the cake roll gets larger, the cake will crack less.</p>
<p>Gently lift cake and place on a clean serving board or plate.  Allow the cake to rest for about 30 minutes in the fridge.</p>
<p>Remove cake from the fridge and drizzle with chocolate ganache.  Allow to chill in the fridge until ready to serve.  Just before serving, garnish the cake with crushed candy canes.  Garnishing before will make the candy cane pieces ooze just a bit.</p>
<p>Cake will last, wrapped in the fridge, for up to 3 days.</p>

<p>Apparently we&#8217;re quickly approaching November.  Wait&#8230; what!?  In the blink of an eye we&#8217;ll be eating turkey for Thanksgiving, wrapping holiday gifts, and kissing at midnight&#8230; that&#8217;s how fast this year is going!</p>
<p>What are we going to do about this? Is there some sort of pause button.</p>
<p>The only thing I can think do to do slow things down involves these healthy-ish Pumpkin Millet and Chocolate Muffins, a cup of milky tea, and Food and Wine Magazine.  Did you slow things down this weekend?  Was there pumpkin and chocolate, too?</p>

<p style="text-align: left;">No mixer necessary.  All you need is a few bowls, pureed pumpkin, and crunchy dry millet.</p>
<p style="text-align: left;">The millet adds a tender, healthful crunch to the muffins.  Like nuts&#8230; without being nuts.</p>
<p style="text-align: left;">The muffins are moist and pumpkin-y.  Perfect for the season.</p>
<p style="text-align: left;">Perfect perfect perfect with chocolate.</p>
<p style="text-align: left;">You have to balance out all of that whole wheat flour and millet with chocolate, right?</p>
<p style="text-align: left;">It&#8217;s all about balance.</p>
<p style="text-align: left;">Ps.  I&#8217;m so bad at balance&#8230; that has everything to do with the fact that I&#8217;m a terrible relaxer.</p>

<p style="text-align: left;">1/2 cup vegetable oil</p>
<p style="text-align: left;">3/4 cup brown sugar</p>
<p style="text-align: left;">2 large eggs</p>
<p style="text-align: left;">1 cup pureed pumpkin</p>

<p style="text-align: left;">1 3/4 cup whole wheat flour</p>
<p style="text-align: left;">1/2 teaspoon salt</p>
<p style="text-align: left;">1 teaspoon baking soda</p>
<p style="text-align: left;">1 teaspoon ground cinnamon</p>
<p style="text-align: left;">1/2 teaspoon ground ginger</p>
<p style="text-align: left;">1/4 teaspoon fresh ground nutmeg</p>
<p style="text-align: left;">1/2 cup dry millet</p>
<p style="text-align: left;">1/4 cup buttermilk</p>
<p style="text-align: left;">3/4 cup dark chocolate chips</p>
<p style="text-align: left;">Place a rack in the center of the oven and preheat oven to 325 degrees F.  Line a muffin tin with paper or foil liners and set aside.</p>
<p style="text-align: left;">In a large bowl, whisk together oil, brown sugar, eggs, pureed pumpkin, and vanilla extract.</p>
<p style="text-align: left;">In a medium bowl, whisk together flour, salt, baking soda, spices, and millet.</p>
<p style="text-align: left;">Add the dry ingredients, all at once to the wet ingredients.  Add the butter milk and fold together.  When batter is almost completely mixed, fold in the chocolate chips.</p>
<p style="text-align: left;">Spoon batter into prepared pan.  Fill muffin cups three quarters full.  Bake for 15to 17 minutes, or until a skewer inserted in the center of a muffin comes out clean.  Let rest for at least 15 minutes before serving.  Serve warm or at room temperature.  Muffins will last, well wrapped at room temperature, for up to 3 days.</p>
<p style="text-align: left;">These muffins also freeze really well.  Seal in a freezer-safe bag and store in the freezer.  I like to eat these right from the freezer.  It&#8217;s possible that I am not normal.</p>

<p style="text-align: left;">Let me tell you a little about this cocoa powder.</p>
<p style="text-align: left;">Black Onyx Cocoa Powder has been alkalized to the max.  That means that it&#8217;s acids have been super neutralized.  If you&#8217;re using this cocoa powder in a recipe, you&#8217;ll probably want to pair it with baking powder, as it doesn&#8217;t have the acid to react with the baking soda.</p>
<p style="text-align: left;">Still with me?</p>
<p style="text-align: left;">This cocoa powder has less fat than regular (lighter) cocoa powder, so it may produce a more dry end product.  It&#8217;s been suggested that you use half black cocoa and half regular cocoa.  Black cocoa powder is an intense chocolate flavor.  It smells like crushed up Oreo cookies.  It makes cookies, puddings and cakes as dark as midnight!  I&#8217;m so into it.    It&#8217;s perfect in this pudding because there&#8217;s no worry of over drying.</p>
<p style="text-align: left;">Black Onyx Cocoa Powder is an awesome way for be to act Halloween-y without making slutty witch fingers.</p>

<p><strong>Midnight Black Chocolate Pudding</strong></p>
<p>makes 4 servings</p>

<p>2 1/2 cups whole milk</p>
<p>1/2 cup plus 2 tablespoons granulated sugar (just 1/2 cup sugar if using regular cocoa powder)</p>
<p>1/3 cup black onyx cocoa powder</p>
<p>4 teaspoons cornstarch</p>
<p>1/4 teaspoon salt</p>
<p>3 large egg yolks</p>
<p>2 teaspoons vanilla extract or 1/2 vanilla bean</p>
<p>1 cup heavy cream</p>
<p>2 1/2 tablespoons granulated sugar</p>
<p>1/2 vanilla bean</p>
<p>pinch of salt</p>
<p>Place 2 cups milk in a medium saucepan with  sugar and cocoa powder.  Heat over medium heat until steaming and warm.  You don&#8217;t necessarily have to boil the mixture, just heat it up and whisk it together.</p>
<p>In a medium bowl, whisk together remaining 1/2 cup milk, cornstarch, salt, egg yolks, and vanilla extract.  Drizzle about half of the steaming hot chocolate milk into the egg mixture, whisking constantly.  This will temper the eggs, making them a bit warm before they&#8217;re cooked over a flame.  Return all of the chocolate, milk, egg mixture back to the saucepan.  Heat over medium heat, whisking nearly constantly.  Make sure the get into the corners of the pan where the pudding might stick and overcook.</p>
<p>When pudding starts to boil, continue to whisk and boil for about 2 to 3 minutes.  Pudding will thicken.  Remove from heat and spoon into 4 ramekins or jars.  Cover with plastic wrap (on the surface of the pudding if you want to avoid pudding skin).  Refrigerate for 4 hours or overnight.</p>
<p>For the whipped cream, whip together heavy cream, sugar, vanilla bean, and a pinch of salt.  Dollop over cold pudding and serve. </div>

<p style="text-align: left;">3/4 cup (1 1/2 sticks) unsalted butter, cold and cut into cubes</p>
<p style="text-align: left;">1 large egg</p>
<p style="text-align: left;">3/4 cup plus 2 tablespoons buttermilk</p>
<p style="text-align: left;">1/3 cup shredded coconut (sweetened or unsweetened)</p>
<p style="text-align: left;">1/3 cup slivered almonds</p>
<p style="text-align: left;">1/2 cup semi-sweet chocolate chips</p>
<p style="text-align: left;">buttermilk and sugar for topping before baking</p>
<p style="text-align: left;">Place a rack in the center of the oven and preheat oven to 350 degrees F.  Place shredded coconut and slivered almonds on a baking sheet and toast in the oven for about 8 to 10 minutes.  Keep your eye on the coconut.  It browns quickly.  Remove from the oven when toasted and allow to cool.  Heat oven to 400 degrees F.  Line two baking sheets with parchment paper and set aside.</p>
<p style="text-align: left;">In a large bowl, whisk together flour sugar, baking powder, baking soda, and salt.</p>
<p style="text-align: left;">Toss the cold butter cubes into the flour mixture.  Using your hands, quickly work in the butter into the flour mixture, breaking it up with your fingers.  Some butter bits will be the size of small pebbles, and some will be the size of oat flakes.  Set in the fridge for a few minutes.</p>
<p style="text-align: left;">Whisk together buttermilk and egg.</p>
<p style="text-align: left;">Remove the flour and butter mixture from the fridge and add coconut, almonds, and chocolate chips.  Whisk together and create a well in the center of the mixture.  Add the buttermilk mixture all at once to the well.  Use a fork to bring the wet and the dry ingredients together.  Mixture will be shaggy.  Lightly flour a work surface and dump the shaggy dough mixture out onto the counter.  Bring together the dough with your hands into a 1 1/2-inch thick disk .  Use a 2 1/2-inch round biscuit cutter to cut out biscuits.  Flour the biscuit cutter if it starts to stick to the dough.</p>
<p style="text-align: left;">Place biscuits, about 1 inch apart, on the prepared baking sheets.  Brush with a bit of buttermilk and a few pinches of raw or granulated sugar.  Bake biscuits for 14-18 minutes, until golden brown and cooked through.  Remove from the oven and serve warm, with jam.</p>

<p style="text-align: left;">I need to make some decisions.  I know&#8230; welcome to everyday living.</p>
<p style="text-align: left;">Who do you turn to when it&#8217;s time to make big decisions?</p>
<p style="text-align: left;">Mama and Dad?  Bestest girlfriends?  Awesome boyfriends?  Husband?  Wifey?  God?  Bottle of beer?  Giant stack of doughnuts?</p>
<p style="text-align: left;">When it comes to making decisions, I make lists&#8230; and stare at them.  I take hot showers and try to figure out my life.  I chip my manicure off. I stop blinking.</p>
<p style="text-align: left;">I ask friends for advice&#8230; and wait for them to give me the answer I want.  Are you guilty of this too!?  Be real.  Bad habit.</p>
<p style="text-align: left;">I ask God&#8230; I listen and then I try to figure out how I&#8217;m going to hear his answer.</p>
<p style="text-align: left;">I think.  I make more lists.  I stare.</p>

<p style="text-align: left;">I&#8217;ve found that tremendous amounts of fried food also help the decision making process.  Well&#8230; they help pass the time during the quiet list making/staring phase of the decision making process.</p>
<p style="text-align: left;">Do people actually make decisions while running around like maniacs?  Is that something that works?  Is there a lot of yelling involved?  That sounds like chaos.  I prefer the sitting, staring, fried food eat, and listening method&#8230; but really, that&#8217;s just my own personal crazybrain.</p>
<p style="text-align: left;">Oh wait!  Are you one of those people that makes important decisions while working out?!  Ugh.  Why can&#8217;t I be you!?</p>

<p style="text-align: left;">These are cake doughnuts.  They&#8217;re more dense than yeasty doughnuts.  The outside has just a bit of crunch.</p>
<p style="text-align: left;">It all starts with just a bit of flour and sugar.</p>

<p style="text-align: left;">These cake doughnuts don&#8217;t need that pesky yeast rise time.  They&#8217;re crisp, but soft and dense.  They&#8217;re doughnuts with chocolate glaze&#8230; so clearly they&#8217;re delicious.  How much convincing do you really need?</p>
<p style="text-align: left;">Should I teach my kitten to speak so he can tell you how much he enjoyed stealing one off the counter and leaving half a kitten eaten doughnut on the floor for me to step in with my bare feet?  Would that finally convince you that doughnuts are delicious!?  Geez.</p>

<p style="text-align: left;"><strong>Old Fashioned Doughnuts with Chocolate Glaze</strong></p>
<p style="text-align: left;">makes between 6 and 10 doughnuts (I got 8 out of this batch)</p>

<p style="text-align: left;">1 1/4 cup all-purpose flour</p>
<p style="text-align: left;">1 teaspoon baking soda</p>
<p style="text-align: left;">1/4 teaspoon fresh grated nutmeg</p>
<p style="text-align: left;">pinch of salt</p>
<p style="text-align: left;">1/3 cup granulated sugar</p>
<p style="text-align: left;">1/4 cup plain yogurt or sour cream</p>
<p style="text-align: left;">1 large egg</p>
<p style="text-align: left;">1 tablespoon unsalted butter, melted</p>
<p style="text-align: left;">vegetable oil for frying</p>
<p style="text-align: left;">In a medium bowl, sift together flour, baking soda, nutmeg, salt, and sugar.</p>
<p style="text-align: left;">In a separate small bowl, whisk together yogurt (or sour cream), egg, and melted butter.  Add the wet ingredients to the dry ingredients and fold together until well incorporated.  The dough will take some smooshing to gather into a dish.  It will be like a slightly more moist biscuit dough.  Wrap bowl in plastic wrap and place in the fridge to rest for 15 minutes.</p>
<p style="text-align: left;">Place a candy/fry thermometer in a medium saucepan.  Pour oil into the pan until it is about 2-inches deep.  Heat oil over medium-low heat.</p>
<p style="text-align: left;">On a lightly floured work surface, roll bough to a 1/2-inch thickness.  Cut doughnuts with a 2 1/2-inch round cutter, and cut a hole with a smaller circle cutter.</p>
<p style="text-align: left;">When oil reaches 360 degrees F, fry 2 or 3 doughnuts at a time for about 1 minute on each side.  Doughnuts will be golden brown.  Carefully pull out, drain, and let rest on towel paper.</p>
<p style="text-align: left;"><strong>Chocolate Glaze</strong></p>
<p style="text-align: left;">1 1/2 cups powdered sugar</p>
<p style="text-align: left;">4 tablespoons unsweetened cocoa powder</p>
<p style="text-align: left;">3 tablespoons milk or water</p>
<p style="text-align: left;">2 teaspoons pure vanilla extract.</p>
<p style="text-align: left;">In a medium bowl, whisk together powdered sugar and cocoa powder.  Slowly stir in milk and vanilla extract.  Whisk until silky and smooth.  If you need a touch more milk to make this a dippable glaze, add a bit more.</p>
<p style="text-align: left;">Dip doughnuts in chocolate glaze and let rest to harden slightly.</p>
<p style="text-align: left;">Doughnuts are best served the day they&#8217;re made.  They also freeze just fine!</div></p>

<p>3/4 cup granulated sugar</p>
<p>1 1/2 cup plus 3 Tablespoons all-purpose flour</p>
<p>3/4 cup plus 1 Tablespoon unsweetened cocoa powder</p>
<p>1/2 teaspoon baking soda</p>
<p>1/2 teaspoons salt</p>
<p>15 Tablespoons (7 1/2 ounces) unsalted butter, but into 3/4-inch cubes, at room temperature (this is important)</p>
<p>Position the racks in the lower and upper thirds of the oven and preheat the oven to 350 degrees F.  Line two baking sheets with parchment paper.</p>
<p>In the bowl of a stand mixer fitted with a paddle attachment, combine the sugar, flour, cocoa powder, baking soda and salt and mix on low speed.  With the mixer running, add the butter a few pieces at a time.  The mixture will have a sandy texture at first and then will begin to form peddle-size pieces.  As soon as the dough starts to come together, stop the mixer.  Make sure all the butter is well incorporated.  If there are large butter pockets, mix for a few seconds more.</p>
<p>Form and roll the dough straight from the mixer.  The dough becomes hard to work with if chilled.</p>
<p>Transfer the dough to a board, and knead together.  Use the heel of your hand or a pastry scraper to shape the dough into a block about 5 by 7 inches.  Cut the block into two pieces.</p>
<p>One at a time, roll each block of dough between two pieces of parchment or waxed paper until about 1/8-inch thick.  Use a ruler and pizza slicer to slice the dough into 2&#215;2-inch squares.  Place 1/2 to 1 inch apart on the prepared baking sheet.  Form excess scraps into the second half of dough, and roll again.</p>
<p>Bake for 12-15 minutes, rotating the sheets halfway through the baking.  Remove from the oven and cool on the sheets for 2 to 5 minutes.  They’ll be too soft to move straight from the oven.  Transfer the cookies to a cooling rack and let cool completely.</p>
<p>Once cookies are baked and cooled, melt chocolate in a double boiler or in the microwave for 30-45 seconds on 50% power.  Toast marshmallows over the stove flame, or on a cookie sheet under the oven broiler.  If you use the broiler, keep a close eye on the marshmallows.  They toast very quickly.</p>
<p>Spread melted chocolate on underside of cookie.  Top with warm, toasted marshmallow, and top with another cookie.  Eat em up!</p>

<p style="text-align: left;">Once upon a time, as a young youth with frizzy hair and giant teeth, I went to Disneyland with my family.</p>
<p style="text-align: left;">We went on rides.  I saw Michael Jackson as Captain EO, and tried to replicate his dance moves for the rest of the day.  We got popcorn, I secretly made faces at other children standing in line (I was not trying to make friends&#8230; I was simply being a major weirdo), and I remember some sort of parade.  There&#8217;s always a parade at Disneyland.</p>
<p style="text-align: left;">We watched the Abraham Lincoln show, which&#8230; as a young youth&#8230; is the most boring thing I could possibly experience.  We stood there as a statue of President Lincoln was illuminated and some prerecorded speech about freedom was played.  I think&#8230; maybe I don&#8217;t remember this correctly.  Since I was not shoveling sour candies into my face, I was sure that this show was going to make my eyes bleed from boredom. I was sure it was possible.</p>
<p style="text-align: left;">Just after the show, as we were exiting, my aunt (who has always been the pillar of clumsiness) stumbled down the stairs and sprained her ankle.  Good grief, I thought&#8230;. I totally should make my mom buy me sour balls for having to endure this inconvenience to my funtime awesomeday.</p>
<p style="text-align: left;">Do you know what happens when you fall at Disneyland (back in the 1980&#8242;s before everyone sued everyone else)??  I&#8217;ll tell you&#8230; it&#8217;s awesome:</p>
<p style="text-align: left;">They take you to the backstage/secret/red alert/ what&#8217;s even back there anyway/ Disneyland area.  The place where Goofy walks around without his head on, and Snow Whites could care less, and Tinkerbell is smoking a cigarette (ok&#8230; that didn&#8217;t happen&#8230; but I SO wish it did)!!! They take you and your family backstage, and sit you down, and give you juice, and ask you if you&#8217;re ok, and bring you medical attention&#8230; AND YOU GET TO SEE GOOFY WITHOUT HIS HEAD ON!!! Clearly this left a lasting impression on me&#8230;. as a young youth.</p>
<p style="text-align: left;">What do kids have these days?  Lawsuits and Disney cruises.  Pffft.  Weak.</p>

<p style="text-align: left;">This churros recipe might be different than anything you&#8217;ve ever made.</p>
<p style="text-align: left;">These are my notes&#8230; I know, a little kooky.</p>
<p style="text-align: left;">There will be several point throughout this recipe where you might curse my name, and insist that I&#8217;ve made you mess up a recipe and waste ingredients.</p>
<p style="text-align: left;">Don&#8217;t yell.  I can&#8217;t hear you.</p>
<p style="text-align: left;">We can get through this together.  Promise.</p>

<p style="text-align: left;">We start by boiling water, butter, sugar, and salt.</p>
<p style="text-align: left;">If this feels weird&#8230; that&#8217;s because it is.  Melt down these ingredients, whisk em up, and turn the heat to low.</p>

<p style="text-align: left;">Over low heat, stir the flour into the hot butter mixture.  Stir it up with a spatula.  Do not freak out.</p>
<p style="text-align: left;">Stir through the lumps.  Keep the pan over low heat.  Trust in the process.  After about 30 to 45 seconds, the mixture will form a loose ball, like the one pictured above.</p>
<p style="text-align: left;">Phew!  You did it!</p>

<p style="text-align: left;">Place the dough into a large bowl.  Let rest for 5 minutes. Add the eggs one at a time, stirring in with a spatula.</p>

<p style="text-align: left;">I like these dipped in warm chocolate sauce&#8230; but I like everything dipped in warm chocolate sauce.  So. Yea.</p>

<p><strong>Homemade Churros and Hot Dark Chocolate</strong></p>
<p>makes about 20 small churros</p>

<p>For the Churros:</p>
<p>canola or vegetable oil, for frying</p>
<p>1/2 cup, plus 1 tablespoon granulated sugar</p>
<p>1 teaspoon ground cinnamon</p>
<p>1/2 cup unsalted butter</p>
<p>1 cup water</p>
<p>1/4 teaspoon salt</p>
<p>1 cup all-purpose flour</p>
<p>3 large eggs</p>
<p>For the Chocolate Sauce:</p>
<p>1/2 cup dark chocolate chunks</p>
<p>scant 1 cup heavy cream</p>
<p>pinch of salt</p>
<p>1/2 teaspoon espresso powder (optional)</p>
<p>Add enough oil to a large saucepan or deep skillet to measure 2-inches deep.  Attach a candy/deep fry thermometer to to side of the pan.</p>
<p>In a medium bowl, whisk together 1/2 cups sugar and 1 teaspoon cinnamon.  Set aside.</p>
<p>In a medium saucepan, over medium heat, melt butter, water, 1 tablespoon of sugar and salt.  Bring to a boil.  Reduce heat to low and add flour all at once.  Quickly stir together with a spatula until no lumps remain, and the mixture begins to form a ball.  This will take about 30 to 45 seconds.  Remove from heat and place loose dough ball in a large bowl.</p>
<p>With a spatula, beat the eggs into the dough one egg at a time.  The mixture may appear to be a broken mess, but keep stirring.  Keep the faith.</p>
<p>After the eggs are added, the mixture will be slightly gummy and slightly thick.  That&#8217;s perfect.</p>
<p>Spoon batter into a large pastry, or strong Ziplock bag with a Aceto 829 (large open star) tip attached.</p>
<p>Heat the oil, over medium heat,  to 350 degrees F.</p>
<p>Carefully pipe about 4 inch long dough segments into the hot oil.  Use a pair of kitchen sheers to cut the dough from the star tip.  It&#8217;s hard not to splash yourself with hot oil, just be  as careful as possible.</p>
<p>Fry dough for 5 to 7 minutes.  This might seem like a long time, but the dough through the center needs to cook through.  The churros will be a deep golden brown, and may split slightly when cooked.  Keep an eye on the timer.  Remove churros from hot oil and place on a paper towel.  After slightly degreased, toss in cinnamon sugar mixture and place on a plate to serve.</p>
<p>To make the chocolate sauce:</p>
<p>Place chocolate chunks, pinch of salt, and espresso powder (if using) in a medium bowl.  In a small saucepan, bring the heavy cream to a boil.  Pour the heavy cream over the chocolate pieces.  Let rest for 1 minute before whisking.  Whisk until chocolate is completely melted.  Serve warm with warm churros.</p>
<p>Churros are best served just after they are fried.  So much yum.</p>

<p>A small hole is carved out of the top of the cupcake.  A walnut sized ball of Peanut Butter Chocolate Chip Cookie dough is placed in the center of the cupcake.</p>
<p>Cupcake is topped with glossy meringue frosting.  Cupcakes are torched under the broiler&#8230; toasting the marshmallow frosting.</p>
<p>What I&#8217;m trying to tell you is that I&#8217;ve made the best cupcake ever.  Cake meets cookie dough meets toasted marshmallows.</p>

<p>For the Cupcakes:</p>
<p>(if you don&#8217;t want to use all organic ingredients&#8230; this recipe will still turn out wonderfully)</p>
<p>2 1/4 cups organic all-purpose flour</p>
<p>2 cups organic cane sugar</p>
<p>1 cup organic unsweetened cocoa powder</p>
<p>2 teaspoons baking soda</p>
<p>1/2 teaspoon salt</p>
<p>1 tablespoon organic vanilla extract</p>
<p>2/3 cup organic canola oil</p>
<p>2 teaspoons organic white vinegar</p>
<p>2 cups cold water</p>
<p>&nbsp;</p>
<p>For the Cookie Dough Balls:</p>
<p>1 stick (1/2 cup or 4 ounces) unsalted butter at room temperature</p>
<p>1 cup plus 2 Tablespoons all purpose flour</p>
<p>1/2 teaspoon baking soda (i know we’re not baking them, it’s for flavor)</p>
<p>3/4 teaspoons salt</p>
<p>1/2 cup brown sugar</p>
<p>1/3 cup granulated sugar</p>
<p>1 teaspoon vanilla extract</p>
<p>2-3 tablespoons natural peanut butter (if you have a nut allergy, 2 tablespoons of yogurt will work as a binder as well)</p>
<p>1 cup semi sweet chocolate chips</p>
<p>&nbsp;</p>
<p>For the Meringue:</p>
<p>4 large egg whites</p>
<p>1 1/2 cups granulated sugar</p>
<p>1/2 cup light corn syrup</p>
<p>large pinch of salt</p>
<p>2 teaspoons pure vanilla extract</p>
<p>&nbsp;</p>
<p>For the Cupcakes:</p>
<p>Preheat oven to 350 degrees F.  Line two cupcake pans with paper liners and set aside.</p>
<p>In a large bowl, sift the dry ingredients together.  Set aside.</p>
<p>In a medium bowl, whisk together the oil, water, vanilla extract and vinegar.</p>
<p>Slowly whisk the wet ingredients into the dry ingredients being careful not to overmix.  The mixture will be quite wet, but that’s ok.</p>
<p>Pour the batter until the cups are two thirds full and place in the oven for 20-24 minutes or until a toothpick inserted into the center of the cup comes out clean.</p>
<p>Cool in the pan for 10 minutes then place on a wire rack until completely cool before topping with cookie dough ball.</p>
<p>&nbsp;</p>
<p>For the Cookie Dough Balls:</p>
<p>In the bowl of a stand mixer fit with a paddle attachment (or with a large bowl and a wooden spoon) cream butter and sugars until light and fluffy, about three minutes in the machine.  Beat in peanut butter (or yogurt if using) along with the vanilla extract and stir to combine.</p>
<p>Whisk together the flour, baking soda and salt.  Add all at once to the butter and sugar mixture and stir until incorporated.  Fold in chocolate chips.</p>
<p>Spoon a scant tablespoons size amount of dough in your hand.  Roll into a ball and place on a cookie sheet.  Make 24 little cookie dough balls, and refrigerate until ready to top the cupcakes.</p>
<p>&nbsp;</p>
<p>For the Meringue:</p>
<p>In a large pot, bring about 2 inches of water to a simmer.</p>
<p>In a large, heat-proof bowl, whisk together egg whites, sugar, corn syrup and salt.  The mixture will be grainy, because of the sugar.</p>
<p>Place bowl over simmering water and whisk as it heats.  The sugar will dissolve after about 5 minutes.  Keep and eye on the mixture, it shouldn&#8217;t get warm enough to cook the eggs.  Yucky.</p>
<p>Transfer the egg white and sugar mixture to the bowl of an electric stand mixer.  With a whisk attachment, beat the egg whites, on high, until stiff peaks form (about 5 minutes)  The mixture will be fluffy and glossy and look like melted marshmallows.  It&#8217;ll be sticky too.  Beat in the vanilla extract last.   Cover, and set aside until ready to frost cupcakes.</p>
<p>&nbsp;</p>
<p>To Assemble Cupcakes:</p>
<p>Use a small paring knife to cut a 3/4-inch whole out of the top/center of the cupcakes.  Don&#8217;t cut the whole center of the cupcake out&#8230; just make a little hole for the dough ball to rest without rolling off.</p>
<p>Place dough balls on top of cupcakes.</p>
<p>Place meringue frosting in a pastry bag (or large Ziplock bag) fitted with a medium-large tip.  Use your instincts for the size of the tip.  Any size (star or round) medium tip will do for frosting these cupcakes.  Pipe frosting around the edges of the cupcake and over the dough ball in a circular motion.  Frost all cupcakes.</p>
<p>Turn on oven broiler.  Yea&#8230; it&#8217;s about to get real.</p>
<p>Place 12 cupcakes on a baking sheet.  Place cupcakes under the broiler for about 1 minute.  Don&#8217;t even close the broiler door.  Keep an eye on them as they toast.  You may need to remove the cupcakes and rotate the pan to ensure that they cook evenly.  Once toasted, remove cupcakes, and toast the remaining 12 in the same fashion.</p>
<p>Serve cupcakes!</p>
<p>Cupcakes will last, in an airtight container in the refrigerator, for up to 4 days.  They&#8217;re delicious.</p>
