<p>Imagine what onion rings would taste like if they were made out of apples instead of onions&#8230; and then topped with sugar.</p>
<p>Totally easy to imagine, mostly because it&#8217;s done and done right here.</p>

<p style="text-align: left;">I never seem to have much luck with an apple corer.  God made apple all wonky and crooked.  The core never goes straight down.  I use a small, 1-inch circular biscuit cutter to chop the core out of apples.</p>

<p style="text-align: left;">This is a double battered creation.  The first batter is a milky cinnamon sugar batter.  This lays the base for the second batter&#8230; crispy panko bread crumbs.</p>
<p style="text-align: left;">The milk batter adds sugar, spice and flavor, the panko bread crumbs keep the doughnuts crispy.  Also&#8230; anything double battered is inherently awesome.</p>

<p style="text-align: left;">I love to sprinkle these fried apples with powdered sugar, and serve hot out of the fryer.  The batter is spiced and crunchy, the apple inside is tender with just a hint of crunch.  They&#8217;re cooked but still maintain a bit of crunch.</p>

<p><strong>Crispy Apple Doughnuts</strong></p>
<p>makes about 24 rings</p>

<p>For the Panko:</p>
<p>2 cups panko bread crumbs</p>
<p>2 tablespoons granulated sugar</p>
<p>1/2 teaspoon ground cinnamon</p>
<p>For the Milky Batter:</p>
<p>1 cup flour</p>
<p>2 tablespoons cornstarch</p>
<p>1/2 cup granulated sugar</p>
<p>1 teaspoon ground cinnamon</p>
<p>1/2 teaspoon freshly ground nutmeg</p>
<p>1/2 teaspoon baking powder</p>
<p>1/2 teaspoon salt</p>
<p>3/4 cup milk (I used 2% milk)</p>
<p>1 large egg</p>
<p>4 Fuji or Granny Smith apples</p>
<p>oil for frying</p>
<p>In a medium bowl, whisk together panko crumbs, sugar, and cinnamon.  I like to use my fingers to crush the panko crumbs into a finer breadcrumb.  Set aside.</p>
<p>In a medium bowl, whisk together flour, cornstarch, sugar, cinnamon, nutmeg, baking powder, and salt.  In a small bowl, whisk together milk and egg.  Add the wet mixture to the dry mixture and whisk until no lumps remain.  Set aside to rest while you peel and slice the apples.</p>
<p>Peel the apples and slice into about 1/3-inch thick rings.  Use a small biscuit cutter to cut out the core.  You can also peel the apples and use a apple corer to core the apple before slicing it into rings.</p>
<p>Soak apple slices in milky batter mixture.  Set the panko mixture next to the milky batter.  Heat a heavy bottom sauce pan with 2-inches of oil to 350 degrees F, measuring heat with a candy/fry thermometer.</p>
<p>When oil has reached 350 degrees F, use  pair of tongs to remove a few rings from the milky batter, and coat in panko crumbs.  Once throughly coated in crumbs, use tongs to carefully place rings in hot oil.  Fry about 4 rings at once.  Fry until golden brown, flip over and fry until golden.  Remove from oil, place on a paper towel and fry the rest of the apple rings.  Bring the oil back up to 350 degrees before adding additional apple slices.</p>
<p>Keep the fried apples warm in a 200 degree oven while the others fry.  Sprinkle generously with powdered sugar and serve.</p>

<p>I was reading a website last week, and the writer posted a picture of her nightstand.  Perfectly mundane.  Perfectly innocent.  Except&#8230; the nightstand had three things on it.  Something fancy made by Steve Jobs, something that probably smelled like roses in heaven, and a perfectly placed tube of designer lip gloss.  Perfect layered on perfect, with a dash of perfect. Maybe I freaked out a little on the inside.  Maybe my nightstand is a dusty clutter of books that I&#8217;m currently ignoring.  Maybe I can&#8217;t find my lip gloss&#8230; and if I could it surely would not be designer&#8230; and it surely would have cat hair on it.</p>
<p>I&#8217;m not much for comparing myself with others&#8230; but I am for comparing nightstands apparently.</p>
<p>Mine is not put together.</p>
<p>Also&#8230; while we&#8217;re here&#8230; you should also know that I have to throw my phone in the back seat of my car to keep myself from texting and driving.  All the way in the back.  Otherwise I can&#8217;t help myself.</p>
<p>Oh.  Sometimes I daydream about running into the boy I used to date earlier this year.  In my fantasy, I look fantastic&#8230; like fatally fantastic.  I&#8217;m also with my new (majorly amazingly tall) new boyfriend&#8230;. thus making this dummy dude feel like a total shrimp.  I so so so wish for that to happen.</p>
<p>See?  I&#8217;m fickle, and messy, and texty&#8230; AND I CAN TOTALLY COOK SOME APPLES!!!! So there&#8230;</p>

<p style="text-align: left;">What follows is the most simple recipe for warm, soft, cinnamon-y apples.  I started with crisp Fujis.</p>

<p style="text-align: left;">Essentially, what we&#8217;re going to create is the inside of an apple pie&#8230; without all the hassle of pie crust.</p>
<p style="text-align: left;">One might argue that the crust is the best part of an apple pie.  Fair enough.  Fine.  You&#8217;re not entirely wrong.</p>
<p style="text-align: left;">But pulling these apples out of the oven might change your mind.</p>

<p style="text-align: left;">Why don&#8217;t spas smell like warm cinnamon apples?  Someone really should take this into consideration.</p>
<p style="text-align: left;">I love these apples on yogurt with granola.  I love these warm apples on cold ice cream.  I love these apples on breakfast oatmeal.  I love eating these apples, piping hot, standing over the sheet pan with a fork.</p>

<p style="text-align: left;">4 Fuji apples, peeled and sliced thin</p>
<p style="text-align: left;">1 tablespoon lemon juice</p>
<p style="text-align: left;">3 tablespoons brown sugar</p>
<p style="text-align: left;">1 or 1 1/2 teaspoons cinnamon</p>
<p style="text-align: left;">1 teaspoons cornstarch</p>
<p style="text-align: left;">sprinkling of ground all spice</p>
<p style="text-align: left;">pinch of salt</p>
<p style="text-align: left;">2 tablespoons butter, cut into small cubes</p>
<p style="text-align: left;">Place a rack in the center of the oven and preheat oven to 400 degrees F.  Line a baking sheet with parchment paper.  Spread sliced apples across the baking sheet.  Sprinkle with lemon juice.  Sprinkle with brown sugar, cinnamon, cornstarch, all spice, and salt.  Toss with fingers.  Top with cubes of butter and bake for 15 to 25 minutes, until golden and bubbly to your desired doneness.  Remove from oven.  Allow to cool slightly and serve on top of ice cream or oatmeal.  Store in an airtight container for up to up to 3 days.  Reheat in a small pan over low heat on the stovetop.  </div></p>

<p>I don&#8217;t like New Year&#8217;s Resolutions.  They&#8217;re totally unrealistic, right?  I feel like my best intentions of dieting, cleaning, saving money, and being a better human in the world are all flushed down the toilet when I cut people off in traffic while eating doughnuts and throwing money out the window on January 2nd.  (Was that a run-on sentence?) ((Don&#8217;t answer that.))</p>
<p>Ok.  So I don&#8217;t throw money out the window.  Come on&#8230;</p>
<p>Let me get to the point.</p>
<p>I like to make mini resolutions.  I make a little resolution, in my crazybrain, each season.  Here we are in Autumn&#8230; and it&#8217;s time to rearrange my goals.  I totally nailed my summer goals of wearing bikini tops as bras and keeping my nails done-did.  Now it&#8217;s time to rearrange.</p>

<p style="text-align: left;">The dough is full of eggs and butter, which make if really easy to work with and knead.  It reminds me of a cake/bread hybrid.</p>

<p style="text-align: left;">This spiced, sweet, breakfast cake is a soft and tender play on traditional coffee cake.  It&#8217;s a bit more time consuming, but it&#8217;s pretty simple to roll up two cake rolls, place one on a parchment lined baking sheet to bake, and place the other in the freezer for a breakfast emergency.</p>

<p><strong>Apple Cinnamon Coffee Cake</strong></p>
<p>makes two loaves</p>

<p>For the Dough:</p>
<p>2 1/4 teaspoon (1 package) active dry yeast</p>
<p>1/4 cup warm water, about 105 to 155 degrees F.</p>
<p>big pinch of sugar</p>
<p>6 tablespoons granulated sugar</p>
<p>3/4 cup (1 1/2 sticks) unsalted butter, at room temperature</p>
<p>1/2 teaspoon ground cardamom</p>
<p>1/2 teaspoon salt</p>
<p>3 large eggs</p>
<p>4 1/2 to 5 cups all-purpose flour</p>
<p>1 cup warm whole milk, 105 to 115 degrees F.</p>
<p>For the Filling:</p>
<p>3 large apples, peeled and cut into small cubes (I used Fuji apples)</p>
<p>2 teaspoons fresh lemon juice</p>
<p>1/4 cup brown sugar</p>
<p>1 teaspoon ground cinnamon</p>
<p>1 teaspoon cornstarch</p>
<p>1/2 teaspoon fresh ground nutmeg</p>
<p>pinch of salt</p>
<p>For the Streusel:</p>
<p>1/2 cup all-purpose flour</p>
<p>1/2 cup brown sugar</p>
<p>1/2 teaspoon cinnamon</p>
<p>pinch of salt</p>
<p>pinch of cardamom</p>
<p>3 tablespoons unsalted butter, at room temperature</p>
<p>1 egg and sugar for brushing and topping the dough before baking</p>
<p>To Make the Dough:  In a small bowl, mix together yeast, warm water and pinch of sugar.  Stir together until yeast is dissolved and set aside for 10 minutes.  Yeast will foam up.  That&#8217;s how you know it&#8217;s alive!</p>
<p>In the bowl of an electric stand mixer, fitted with a paddle attachment, add the sugar, butter, cardamom, and salt.  Blend on medium speed until pale in color and fluffy, about 3 minutes.</p>
<p>Stop the mixer, scrape down the bowl, and add eggs and 1 cup of flour.  Blend on medium speed until thoroughly incorporated and creamy, about 1 minute.  Stop the mixer and add 2 cups more cups of flour, foamy yeast mixture, and warm milk.  Blend in medium speed until the flour disappears.  Mixture will be very wet.</p>
<p>Add 1 1/2 to 2 more cups of flour.  Blend until the flour is almost incorporated.</p>
<p>Dump the dough onto a lightly floured work surface.  Knead for 5 to 8 minutes by hand.  Dough will be glossy and just slightly sticky.  Place dough in an oiled bowl, cover with plastic wrap and a towel and let rest in a warm place for 1 1/2 hours, or until doubled in size.</p>
<p>While the dough rises, make the apple filling and the streusel.</p>
<p>To make the Apple Filling, toss together diced apples, lemon juice, sugar, cinnamon, cornstarch, nutmeg and salt.  Leave at room temperature and set aside until ready to use.</p>
<p>To make the Streusel Filling:</p>
<p>In a small bowl, whisk together flour, sugar, cinnamon, salt, and cardamom.  Add butter and, using your fingers, work the butter into the flour mixture.  Break up the butter into the mixture, until thoroughly incorporated and crumbly.  Set aside.</p>
<p>Continue on with the Dough:</p>
<p>Line two baking sheets with parchment paper and set aside.</p>
<p>When the dough has doubled in size, dump it out onto a lightly floured work surface.   Use a large knife or a bench knife to divide the dough in two.  Roll each dough piece into about a 10&#215;14-inch rectangle.  Sprinkle with half of the streusel mixture.  Add half of the apple mixture over the apples.  Add a bit of the apple juices too.  That&#8217;s fine.</p>
<p>Starting from the longest side, begin to roll the dough.  This isn&#8217;t like a cinnamon roll, you don&#8217;t have to roll it into a super tight swirl.  Fold in about 1 1/2 to 1-inch folds.  Keep the seam on the bottom.</p>
<p>Repeat the same steps for the second piece of dough.</p>
<p>Carefully lift roll onto the prepared baking sheet. **Now is a great time to freeze or refrigerate the coffee cake  dough for later baking.**  Take a pair of clean scissors and slice into the dough leaving about 3/4-inch of dough still attached.  Slice at 1-inch intervals.  Carefully begin to curve the sliced dough into a semi-circle/horseshoe shape.  If some of the apple juices escape, that&#8217;s ok    Cover with a towel and let rest in a warm place for 30 minutes.</p>
<p>Preheat the oven to 375 degrees F.</p>
<p>Brush dough with egg wash and sprinkle with raw or granulated sugar.  Bake for 30 to 35 minutes, until golden brown and cooked through.</p>
<p>Remove from the oven, allow to cool for 15 minutes before serving.  Best served warm with hot coffee.  Coffee cake will last, well wrapped at room temperature, for up to 3 days&#8230; or 3 hours.</p>
<p>**  If you decide to freeze the dough, place it in the fridge to thaw the evening before you&#8217;d like to bake it.  Once it&#8217;s thawed, slice it according to the above directions.  Allow to come to room temperature, and allow to rise for another 30 minutes beyond that.  Wash with egg and sugar, then bake.</p>
<p>**  If you decide to refrigerate the dough, simple take it out of the fridge, slice according to the above directions.  Let come to room temperature, then allow to rise for 30 minutes beyond that.  Brush with egg and sugar, then bake. </div>

<p style="text-align: left;">I&#8217;ve moved past my haphazard Jackie O phase.  I&#8217;m pretty sure that email is the new homework.  I shave my legs, but <em>wow</em>&#8230; the appeal of that pastime is loooong gone.  I stay up as late as I want&#8230; because I&#8217;m grown.  Beverly Hills 90210 has been replaced by Real Housewives of Minnetonka.  I get my hair done did&#8230;. and that feels nice.  I wear a helmet because I&#8217;m totally over trying to look cute.  I&#8217;m totally into trying to look alive.  I realized I don&#8217;t like fire, dictionaries, or sick animals.  I don&#8217;t eat Cheetos for lunch.  If I ate fried chicken and chocolate cake everyday I would be a happy and hefty lady.</p>
<p style="text-align: left;">But!  but but but but but&#8230;.. I can totally have cookies for breakfast.</p>
<p style="text-align: left;">I may have known absolutely nothing about my adult self as a young youth&#8230;. Meh!  At least now there are cookies, and coffee, and iPhones.</p>

<p style="text-align: left;">I didn&#8217;t say any words like butter, chocolate, peanut butter, cupcake, nutella, marshmallows.  I didn&#8217;t say aaaany of those words!  It sorta made me twitch a little.</p>
<p style="text-align: left;">These breakfast cookies are entirely wholesome and totally delicious.  They&#8217;re moist, soft, and cakey&#8230; like carrot cake with a crunch.  They have just a hint of coconut flavor (from the oil), a little zip from the ginger, and a perfect tartness from the dried cherries.  I am totally obsessed!</p>
<p style="text-align: left;">If you eat one whole rushing out of the house, into your car, into traffic, spilling your coffee, forgetting your cell phone, trying to get to work&#8230; I assure you, you&#8217;ll feel like a real-life grown-up.  For better or worse.</p>

<p><strong>Carrot Millet Breakfast Cookies</strong></p>
<p>makes about 2 dozen cookies</p>

<p>1 1/2 cups whole wheat pastry flour (or all-purpose flour)</p>
<p>1 cup old-fashioned oats</p>
<p>3 tablespoons dry millet</p>
<p>1 teaspoon ground cinnamon</p>
<p>1 teaspoon baking powder</p>
<p>1/2 teaspoon salt</p>
<p>1/2 cup coconut oil, melted</p>
<p>1/2 cup real maple syrup</p>
<p>heaping 1 cup shredded carrots</p>
<p>1/2 cup dried cherries, coarsely chopped</p>
<p>2 teaspoons fresh grated ginger</p>
<p>Place racks in the center and upper third of the oven and preheat oven to 350 degrees F.  Line two baking sheets with parchment paper and set aside.</p>
<p>In a medium bowl, whisk together flour, oats, millet, cinnamon, baking powder, and salt.  Set aside.</p>
<p>In another medium bowl, whisk together coconut oil, maple syrup, shredded carrots, dried cherries, and ginger.  Add the wet ingredients, all at once to the dry ingredients.  Fold together until thoroughly incorporated.  Let dough stand for 5 minutes before spooning by the tablespoonful onto the prepared baking sheets.</p>
<p>Bake for 10 minutes, or until just slightly browned and cooked through.  I like these cookies a bit underdone.  Remove from the oven, allow to cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.  Store in an airtight container at room temperature for up to 4 days.  The fresher the cookies are, the better the are&#8230; obviously.</p>

<p style="text-align: left;">Once upon a time, as a young youth with frizzy hair and giant teeth, I went to Disneyland with my family.</p>
<p style="text-align: left;">We went on rides.  I saw Michael Jackson as Captain EO, and tried to replicate his dance moves for the rest of the day.  We got popcorn, I secretly made faces at other children standing in line (I was not trying to make friends&#8230; I was simply being a major weirdo), and I remember some sort of parade.  There&#8217;s always a parade at Disneyland.</p>
<p style="text-align: left;">We watched the Abraham Lincoln show, which&#8230; as a young youth&#8230; is the most boring thing I could possibly experience.  We stood there as a statue of President Lincoln was illuminated and some prerecorded speech about freedom was played.  I think&#8230; maybe I don&#8217;t remember this correctly.  Since I was not shoveling sour candies into my face, I was sure that this show was going to make my eyes bleed from boredom. I was sure it was possible.</p>
<p style="text-align: left;">Just after the show, as we were exiting, my aunt (who has always been the pillar of clumsiness) stumbled down the stairs and sprained her ankle.  Good grief, I thought&#8230;. I totally should make my mom buy me sour balls for having to endure this inconvenience to my funtime awesomeday.</p>
<p style="text-align: left;">Do you know what happens when you fall at Disneyland (back in the 1980&#8242;s before everyone sued everyone else)??  I&#8217;ll tell you&#8230; it&#8217;s awesome:</p>
<p style="text-align: left;">They take you to the backstage/secret/red alert/ what&#8217;s even back there anyway/ Disneyland area.  The place where Goofy walks around without his head on, and Snow Whites could care less, and Tinkerbell is smoking a cigarette (ok&#8230; that didn&#8217;t happen&#8230; but I SO wish it did)!!! They take you and your family backstage, and sit you down, and give you juice, and ask you if you&#8217;re ok, and bring you medical attention&#8230; AND YOU GET TO SEE GOOFY WITHOUT HIS HEAD ON!!! Clearly this left a lasting impression on me&#8230;. as a young youth.</p>
<p style="text-align: left;">What do kids have these days?  Lawsuits and Disney cruises.  Pffft.  Weak.</p>
<p style="text-align: left;">Anyway&#8230; Um.</p>
<p style="text-align: left;">Churros remind me of Disneyland.</p>
<p style="text-align: left;">So&#8230;. yea.</p>

<p style="text-align: left;">This churros recipe might be different than anything you&#8217;ve ever made.</p>
<p style="text-align: left;">These are my notes&#8230; I know, a little kooky.</p>
<p style="text-align: left;">There will be several point throughout this recipe where you might curse my name, and insist that I&#8217;ve made you mess up a recipe and waste ingredients.</p>
<p style="text-align: left;">Don&#8217;t yell.  I can&#8217;t hear you.</p>
<p style="text-align: left;">We can get through this together.  Promise.</p>

<p style="text-align: left;">We start by boiling water, butter, sugar, and salt.</p>
<p style="text-align: left;">If this feels weird&#8230; that&#8217;s because it is.  Melt down these ingredients, whisk em up, and turn the heat to low.</p>

<p style="text-align: left;">Over low heat, stir the flour into the hot butter mixture.  Stir it up with a spatula.  Do not freak out.</p>
<p style="text-align: left;">Stir through the lumps.  Keep the pan over low heat.  Trust in the process.  After about 30 to 45 seconds, the mixture will form a loose ball, like the one pictured above.</p>
<p style="text-align: left;">Phew!  You did it!</p>

<p style="text-align: left;">Place the dough into a large bowl.  Let rest for 5 minutes. Add the eggs one at a time, stirring in with a spatula.</p>

<p style="text-align: left;">I like these dipped in warm chocolate sauce&#8230; but I like everything dipped in warm chocolate sauce.  So. Yea.</p>

<p><strong>Homemade Churros and Hot Dark Chocolate</strong></p>
<p>makes about 20 small churros</p>

<p>For the Churros:</p>
<p>canola or vegetable oil, for frying</p>
<p>1/2 cup, plus 1 tablespoon granulated sugar</p>
<p>1 teaspoon ground cinnamon</p>
<p>1/2 cup unsalted butter</p>
<p>1 cup water</p>
<p>1/4 teaspoon salt</p>
<p>1 cup all-purpose flour</p>
<p>3 large eggs</p>
<p>For the Chocolate Sauce:</p>
<p>1/2 cup dark chocolate chunks</p>
<p>scant 1 cup heavy cream</p>
<p>pinch of salt</p>
<p>1/2 teaspoon espresso powder (optional)</p>
<p>Add enough oil to a large saucepan or deep skillet to measure 2-inches deep.  Attach a candy/deep fry thermometer to to side of the pan.</p>
<p>In a medium bowl, whisk together 1/2 cups sugar and 1 teaspoon cinnamon.  Set aside.</p>
<p>In a medium saucepan, over medium heat, melt butter, water, 1 tablespoon of sugar and salt.  Bring to a boil.  Reduce heat to low and add flour all at once.  Quickly stir together with a spatula until no lumps remain, and the mixture begins to form a ball.  This will take about 30 to 45 seconds.  Remove from heat and place loose dough ball in a large bowl.</p>
<p>With a spatula, beat the eggs into the dough one egg at a time.  The mixture may appear to be a broken mess, but keep stirring.  Keep the faith.</p>
<p>After the eggs are added, the mixture will be slightly gummy and slightly thick.  That&#8217;s perfect.</p>
<p>Spoon batter into a large pastry, or strong Ziplock bag with a Aceto 829 (large open star) tip attached.</p>
<p>Heat the oil, over medium heat,  to 350 degrees F.</p>
<p>Carefully pipe about 4 inch long dough segments into the hot oil.  Use a pair of kitchen sheers to cut the dough from the star tip.  It&#8217;s hard not to splash yourself with hot oil, just be  as careful as possible.</p>
<p>Fry dough for 5 to 7 minutes.  This might seem like a long time, but the dough through the center needs to cook through.  The churros will be a deep golden brown, and may split slightly when cooked.  Keep an eye on the timer.  Remove churros from hot oil and place on a paper towel.  After slightly degreased, toss in cinnamon sugar mixture and place on a plate to serve.</p>
<p>To make the chocolate sauce:</p>
<p>Place chocolate chunks, pinch of salt, and espresso powder (if using) in a medium bowl.  In a small saucepan, bring the heavy cream to a boil.  Pour the heavy cream over the chocolate pieces.  Let rest for 1 minute before whisking.  Whisk until chocolate is completely melted.  Serve warm with warm churros.</p>
<p>Churros are best served just after they are fried.  So much yum.</p>

<p style="text-align: left;">Homemade Cashew Oat Milk is my new favorite&#8230; oh-my-goodness-I&#8217;m-totally-obsessed&#8230; thing.</p>
<p style="text-align: left;">Raw cashews are soaked, rinsed and blended with ground oats, fresh ground cinnamon, agave, and filtered water.  The result is a surprisingly creamy, slightly sweet, dairy-free drink.</p>
<p style="text-align: left;">It&#8217;s delicious is coffee.  I poured it in my tea.  I drank it straight from the bottle.  I dunked about 12 of these <strong><a href="http://www.joythebaker.com/blog/2011/03/soft-vegan-ginger-cookies/" target="_blank">Vegan Ginger Cookies</a></strong> in this milk.  I let my cat drink some.    I thought about brushing my teeth with it.  I thought about dating it.  I thought about knitting it a shawl.  I think I might be losing it.</p>
<p style="text-align: left;">&#8230; but I made milk.  And I&#8217;m not a cow.  And I&#8217;m pretty excited.</p>

<p style="text-align: left;">Cashews are full of all sorts of healthy fats.  They&#8217;ve got copper.  They help eliminate free radicals.  They&#8217;re full of magnesium.  They&#8217;re dang good for you.</p>
<p style="text-align: left;">Oatmeal is great for the heart.  It&#8217;s full of fiber and helps to thicken the milk and makes the belly feel full.</p>
<p style="text-align: left;">I used a spice grinder (it&#8217;s actually my old coffee grinder cleaned out) to pulverize two cinnamon sticks and the old fashioned oats.  If you don&#8217;t have a spice grinder, you can surely use ground cinnamon and a blender to pulverize the oats.</p>
<p style="text-align: left;">If you don&#8217;t have a blender&#8230; I think you should totally get one.</p>

<p style="text-align: left;">After blending the nuts, oats, cinnamon agave and water, I strained it through this fine mesh strainer.  I pressed hard to release all the milk, and got a fair amount of nut, oat, and cinnamon bits in my milk.  I loved it.  But!  If you want a smoother milk&#8230; line the fine mesh strainer with cheese cloth for straining, and strain the milk several times.  Smooth milk.</p>

<p style="text-align: left;">And tomorrow&#8230; you&#8217;ll most likely find me with a stick of butter in my hand.  I&#8217;m complicated.</p>

<p style="text-align: left;"><strong>Cashew Oat Milk with cinnamon and agave</strong></p>
<p style="text-align: left;">Makes just under one quart of milk</p>
<p style="text-align: left;"><p><a href="#" onClick="window.print(); return false;" alt="Print this Recipe!" class="dco_print_button printthis">Print this Recipe!</a></p></p>
<p style="text-align: left;">1 1/2 cups raw cashews</p>
<p style="text-align: left;">3 cups of water for soaking</p>
<p style="text-align: left;">1/2 cup old-fashioned oats, ground to a powder</p>
<p style="text-align: left;">2 cinnamon sticks ground to a powder or 1 1/2 teaspoons ground cinnamon</p>
<p style="text-align: left;">3 cups filtered water</p>
<p style="text-align: left;">2 tablespoons agave</p>
<p style="text-align: left;">Place raw cashews in a clean bowl and top with 3 cups of water.  Cover with plastic wrap and let sit overnight, or for 8 to 12 hours.  Once soaked, place the cashews in a fine mesh strainer and run the softened cashews under cool water until clean and the water runs clear.  Set aside.</p>
<p style="text-align: left;">In a spice blender (mine is a clean coffee grinder), grind cinnamon sticks, one at a time, to a fine powder.  Place in a small bowl and set aside.  If you don&#8217;t have a spice grinder, measure 1 1/2 teaspoons ground cinnamon into a small bowl and set aside.</p>
<p style="text-align: left;">Grind oats in two batches in the spice grinder until oats turn into a fine powder.  Pour into the same bowl as the ground cinnamon.  If you don&#8217;t have a spice grinder, you can also grind oats in the blender.</p>
<p style="text-align: left;">Combine oats, cinnamon, cashews, filtered water, and agave in the bowl of a blender.  Cover tightly and blend on low speed, increasing to high speed, until smooth.</p>
<p style="text-align: left;">Place a fine mesh strainer over a large bowl.  Pour half of the cashew mixture into the fine mesh strainer.  With a spatula, work the liquid through the strainer.  The harder you press the cashew and oat mixture, the more liquid you&#8217;ll release, and the more cashew and oat bits you&#8217;ll get in your milk.  I happen to like this milk to be thick and slightly chunky.  Continue to strain the milk until all of the liquid has passed through the strainer.  Place cashew and oat meat mixture in a bowl and set aside.</p>
<p style="text-align: left;">If you&#8217;d like a smoother milk, feel free to pass it through the strainer once more.</p>
<p style="text-align: left;">Store in an airtight container (I used an old one-quart milk jar) and place in the fridge.  Shake well before enjoying.</p>
<p style="text-align: left;">Milk lasts, in the refrigerator, for up to 4 days.</p>
<p style="text-align: left;">Oh!  I used the cashew and oat meat as a face scrub for a few days.</p>

<p style="text-align: left;">These cookies have crisp edges, hearty oats and walnuts and tender apple bits.  A dash of cinnamon sprinkled on top brings cinnamon right to your nose.  It&#8217;s delicious.  Don&#8217;t argue with me on this one.</p>

<p style="text-align: left;"><strong>Apple Cinnamon Oatmeal Cookies</strong></p>
<p style="text-align: left;">makes about 18 cookies to 24 cookies</p>

<p style="text-align: left;">1/2 cup (1 stick) unsalted butter , softened</p>
<p style="text-align: left;">1/2 cup granulated sugar</p>
<p style="text-align: left;">1/2 cup brown sugar, packed</p>
<p style="text-align: left;">1 large egg</p>
<p style="text-align: left;">1 teaspoon vanilla extract</p>
<p style="text-align: left;">1 cup all-purpose flour</p>
<p style="text-align: left;">1 1/4 cup oats, old fashioned or quick cooking</p>
<p style="text-align: left;">1/2 teaspoon baking powder</p>
<p style="text-align: left;">1/2 teaspoon baking soda</p>
<p style="text-align: left;">scant 1/2 teaspoon salt</p>
<p style="text-align: left;">1 teaspoon ground cinnamon</p>
<p style="text-align: left;">generous pinch fresh grated nutmeg</p>
<p style="text-align: left;">3/4 cup coarsely chopped walnuts</p>
<p style="text-align: left;">1 medium apple, peeled, diced small (i used a granny smith apple)</p>
<p style="text-align: left;">1 teaspoon fresh lemon juice</p>
<p style="text-align: left;">Place a rack in the center and upper third of the oven and preheat to 350 degrees F.  Line two baking sheets with parchment paper and set aside.</p>
<p style="text-align: left;">Peel and dice the apple and toss with lemon juice.  Set aside.</p>
<p style="margin-top: 0px; margin-right: 0px; margin-bottom: 1.571em; margin-left: 0px; text-align: left; padding: 0px;">Beat the sugar and butter in the bowl of a stand mixer fit with a paddle attachment.  Beat until creamy, about 3 to 4 minutes.  Add egg one,  beating for 1 minute..  Add the vanilla extract and beat until blended.</p>
<p style="margin-top: 0px; margin-right: 0px; margin-bottom: 1.571em; margin-left: 0px; text-align: left; padding: 0px;">Whisk together the oats, flour, baking powder, baking soda, spices and salt.  Add to the butter and egg mixture slowly beating on low speed until just incorporated.  Stir in the walnuts and apple chunks last.</p>
<p style="margin-top: 0px; margin-right: 0px; margin-bottom: 1.571em; margin-left: 0px; text-align: left; padding: 0px;">Bake at 350 degrees F for 10 to 13 minutes or until they’ve reached your desired doneness.  I like mine a little underdone and cook them for 10 minutes.  Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.  Or you could just eat them warm.  That’s probably the best idea.  Makes about 2 dozen cookies.</p>

<p style="text-align: left;">I love when sweet treats are also filled with things like whole wheat, and walnuts and flax seeds.  It&#8217;s full of health, despite the butter and sugar.  This bread is tastes like home&#8230; if your home were in, say&#8230; rural Oregon.</p>
<p style="text-align: left;">I like the combination of grated and coarsely chopped apples in this recipe.  You get all the flavor and moisture of the apples combined with big ol&#8217; chunks too.  Delightful.  Walnuts are great in this recipe and flax seeds add all kinds of health.  If you don&#8217;t happen to have flax seeds on hand.  No worries.  You can leave them out.</p>

<p><strong>Apple Walnut Flax Seed Bread</strong></p>
<p>makes one 9&#215;5-inch loaf</p>

<p>1 cup all-purpose flour</p>
<p>3/4 cup whole wheat flour</p>
<p>3/4 cup brown sugar, packed</p>
<p>2 teaspoons baking powder</p>
<p>1 teaspoon baking soda</p>
<p>1/2 teaspoon salt</p>
<p>1 teaspoon ground cinnamon</p>
<p>generous pinch freshly ground nutmeg</p>
<p>2/3 cup buttermilk (if you don&#8217;t have buttermilk, try these<a href="http://www.joythebaker.com/blog/2009/10/the-best-buttermilk-substitutions/" target="_blank"> substitutions</a>)</p>
<p>1/3 cup unsalted butter, melted and slightly cooled</p>
<p>1 teaspoon vanilla extract</p>
<p>2 large eggs, lightly beaten</p>
<p>1 cup grated apples</p>
<p>1/2 cup coarsely chopped apples</p>
<p>1 tablespoon flax seeds</p>
<p>3/4 cup coarsely chopped walnuts, divided</p>
<p>cinnamon and sugar for sprinkling</p>
<p>Preheat oven to 350 degrees F.</p>
<p>Grease and flour a 9x5x3-inch loaf pan and set aside.</p>
<p>In a medium bowl, whisk together flours, sugar, salt, baking powder, baking soda, cinnamon and nutmeg.</p>
<p>In a small bowl, whisk together buttermilk, eggs, melted butter and vanilla extract.</p>
<p>Mix the wet ingredients into the dry ingredients.  Add the grated apples, chopped apples flax seeds and half of the chopped walnuts.  Fold to incorporate thoroughly.</p>
<p>Spoon batter into prepared pan and top with granulated sugar, cinnamon and the rest of the walnuts.</p>
<p>Bake for 40 to 50 minutes or until a skewer inserted in the center of the loaf comes out clean.</p>
<p>Let cool in the pan for 15 minutes then invert onto a cooling rack to cool before wrapping.</p>
<p>Serve slightly toasted with butter. Yumtastic.</p>

<p>Well&#8230; obviously you yell at your little sister who remembered to call your grandmother on her 80th birthday, and didn&#8217;t remind <em>you</em> to call your grandmother on her 80th birthday.  Some nerve.</p>
<p>See&#8230; forgetting to call your grandmother on her 80th birthday is just about as bad as kicking your dear and darling 80 year old grandmother in the shin.  It&#8217;s not cool.  There&#8217;s no going back.  You&#8217;re a real jerk if you don&#8217;t call your grandmother on her 80th birthday.</p>
<p>Ok.  Here&#8217;s the deal universe.  I hope I live to be 80.  Please.  That would be great.  I think&#8230;. I hope.</p>

<p>Cinnamon toast was the first thing I taught myself to make in the kitchen.  White bread.  Inconceivable amounts of softened and salted butter, too much sugar and lots and lots of cinnamon.  Starch?  Sugar and spice!?  It&#8217;s perfect.  God bless it.</p>
<p>Cinnamon Sugar Biscotti are the crisp version of cinnamon sugar toast.  Crunchy, loads of sweet cinnamon flavor.  Perfect with a cup of coffee or tea.  And!  These are nut free biscotti!  That&#8217;s exciting for me&#8230; I don&#8217;t really like giant almonds in my cookie.  So&#8230; success!</p>

<p><strong>Cinnamon Sugar Biscotti</strong></p>

<p>makes about 24 cookies</p>

<p>2 cups flour</p>
<p>1 1/2 teaspoons ground cinnamon</p>
<p>1 teaspoon baking powder</p>
<p>1/4 teaspoon salt</p>
<p>1 cup granulated sugar</p>
<p>6 Tablespoons (3/4 stick) unsalted butter, at room temperature</p>
<p>1 egg</p>
<p>1 egg yolk</p>
<p>1 teaspoon vanilla</p>
<p>For Topping:</p>
<p>1/4 cup granulated sugar</p>
<p>1 teaspoon ground cinnamon</p>
<p>1 beaten egg (for brushing biscotti before baking)</p>
<p>Preheat oven to 325 degrees F and arrange two baking racks in the upper portion of the oven.  Line two baking sheets with parchment paper and set aside.</p>
<p>In a medium bowl, whisk together flour, cinnamon, baking powder and salt.  Set aside.</p>
<p>Also whisk together the cinnamon and sugar for the topping and set aside.</p>
<p>In the bowl of a stand mixer, fit with a paddle attachment, cream the butter and sugar until light and fluffy, about 4 minutes.  Scrape down the down and beat in the egg followed by the egg yolk.  Beat in the vanilla extract.</p>
<p>Add the dry ingredients to the creamed butter all at once.  With the mixer or just with a spatula, bring all of the ingredients together until a somewhat stiff dough is formed.</p>
<p>Divide the dough in two on the two making sheets.  Shape each half of dough into a 9-inch long and 1 1/2-inch wide log.  Brush with the beaten egg and sprinkle very generously with cinnamon sugar.  Bake the two sheets on two different racks in the oven for 20 minutes.  Rotate the cookie sheets for even baking and bake for 20-25 more minutes until golden and firm to the touch.</p>
<p>Remove from the oven but keep the oven on.  Let biscotti cool until able to handle.  Using a serrated knife, cut logs into 1/2-inch wide diagonal slices.  Place biscotti cut side down on baking sheet and sprinkle with more cinnamon sugar.  Bake again until pale golden, about 10-15 minutes.</p>
<p>Store in an airtight container for up to one week.</p>
