<p>I&#8217;m twenty nine years old.  I&#8217;m an adult.  I pay my bills.  I do my taxes.  I go to jury duty.  I stand in line at the post office without heavy sighs.  I floss too!  I totally floss.</p>
<p>And yet.  Somehow.  I thought it would be ok&#8230; not just ok, but reasonable&#8230; not just reasonable&#8230; but a good idea to make chocolate chip cookie dough, freeze it and then dip the balls in melted chocolate.</p>
<p>Now I have a  freezer full of giant cookie dough balls dipped in chocolate and I&#8217;m panicking.  I need an adult.  I&#8217;m about to eat cookie dough for lunch, cookie dough for dinner, cookie dough for dessert, and then cookie dough again for second dinner.</p>

<p style="text-align: left;">Raw cookie dough.  Sooo dang good.</p>
<p style="text-align: left;">Now before anyone starts yelling about raw eggs and poison and disease, let me assure you that this dough has no raw eggs in it.  Instead, I used Greek yogurt as the binder.  You might also use applesauce or peanut butter if you don&#8217;t have thick yogurt on hand.</p>

<p style="text-align: left;">Here&#8217;s how this happened.  I made eggless cookie dough, scooped it up in generous portions on a waxed paper lined cookie sheet, stuck cute plastic forks in the dough and froze those suckers overnight.  The next morning I melted down some chocolate chips, dipped the frozen dough balls and returned them to the freezer.  Serve them right from the freezer&#8230; It&#8217;s sort of the best thing ever.</p>
<p style="text-align: left;">Now if you&#8217;ll excuse me&#8230; I can hear someone calling my name from the freezer.  It must be these dough balls.  It would be rude not to respond.</p>

<p style="text-align: left;">1 stick (1/2 cup or 4 ounces) unsalted butter at room temperature</p>
<p style="text-align: left;">1 cup plus 2 Tablespoons all purpose flour</p>
<p style="text-align: left;">1/2 teaspoon baking soda (i know we&#8217;re not baking them, it&#8217;s for flavor)</p>
<p style="text-align: left;">3/4 teaspoons salt</p>
<p style="text-align: left;">1/2 cup brown sugar</p>
<p style="text-align: left;">1/3 cup granulated sugar</p>
<p style="text-align: left;">1 teaspoon vanilla extract</p>
<p style="text-align: left;">1/3 cup Greek yogurt or applesauce or peanut butter</p>
<p style="text-align: left;">1 cup semi sweet chocolate chips</p>
<p style="text-align: left;">1/2 cup chopped walnuts (optional)</p>
<p style="text-align: left;">1 1/2 cups semi sweet chocolate chips, melted for dipping</p>
<p style="text-align: left;">In the bowl of a stand mixer fit with a paddle attachment (or with a large bowl and a wooden spoon) cream butter and sugars until light and fluffy, about three minutes in the machine.  Beat in yogurt or applesauce or peanut butter along with the vanilla extract and stir to combine.</p>
<p style="text-align: left;">Whisk together the flour, baking soda and salt.  Add all at once to the butter and sugar mixture and stir until incorporated.  Fold in chocolate chips and wanuts.</p>
<p style="text-align: left;">Scoop large spoonfuls or ice cream scoops onto a  waxed paper lined cookie sheet.  Spear each dough ball with a cute plastic fork or a popsicle stick.  Place in the freezer overnight or until frozen, at least three hours.</p>
<p style="text-align: left;">When ready to dip the balls, melt chocolate chips in a small saucepan over a low flame or in the microwave.  Remove balls from the freezer and dip into warm chocolate.  Return to the lined cookie sheet and return to the freezer to harden.  Serve cold from the freezer.</p>

<p style="text-align: left;">To quell your puzzled looks, let me answer a few questions.  Yes&#8230; I just watched Scent of a Woman.  Yes&#8230; it was amazing.  Yes&#8230; I questioned my sanity.</p>

<p style="text-align: left;">Super fudgy chocolate with nuts and campfire style toasted marshmallows.  Pretty perfect to bring to a summer party.  These brownies are an instant friend maker.</p>

<p style="text-align: left;">I do have a few pro-tips when it comes to this recipe.  Can I share them with you?</p>
<p style="text-align: left;">-  So you&#8217;ve baked the brownies, loaded the warm brownies up with marshmallows, turned on your broiler and you&#8217;re ready to toast your marshmallows?  Put them in the oven and stand there.  Do.  Not.  Walk.  Away.  Your brownies will set on fire before you know it.  It&#8217;s scary when you have to pull a pan that&#8217;s on fire out of the oven.  It&#8217;s really scary.</p>
<p style="text-align: left;">-  You&#8217;re going to need a sharp knife and hot running water to cut through these brownies.  The marshmallows might have a tendency to stick to the knife.  Run the blade under hot water until it&#8217;s clean after every slice you make.  That&#8217;ll ensure that your marshmallows stay where they belong.</p>

<p style="text-align: left;">1 2/3 cup granulated sugar</p>
<p style="text-align: left;">3/4 cup cocoa powder</p>
<p style="text-align: left;">3/4 cup butter</p>
<p style="text-align: left;">2 Tablespoons strong coffee or water</p>
<p style="text-align: left;">2 large eggs</p>
<p style="text-align: left;">2 teaspoons vanilla extract</p>
<p style="text-align: left;">1 1/3 cup all-purpose flour</p>
<p style="text-align: left;">1/2 teaspoon baking powder</p>
<p style="text-align: left;">1/4 teaspoon salt</p>
<p style="text-align: left;">3/4 cup chopped walnuts</p>
<p style="text-align: left;">2 cups miniature marshmallows</p>
<p style="text-align: left;">1/4 cup milk chocolate chips (optional but yumtown)</p>
<p style="text-align: left;">Preheat oven to 350 degrees.  Grease and flour a 9 or 10-inch square baking pan.  Set aside</p>
<p style="text-align: left;">Combine butter and cocoa powder in a small bowl, and place over a pot of simmering water.  Make sure that the simmering water down not touch the bottom of the bowl.  Add the coffee or water and stir to melt the ingredients.</p>
<p style="text-align: left;">In a medium sized bowl whisk together the eggs and the sugar.  Add the vanilla extract.  When the butter and chocolate have melted and come together, slowly stir the chocolate mixture into the sugar mixture.</p>
<p style="text-align: left;">Add the flour, baking powder and salt.  Stir to combine.  Fold in the nuts.</p>
<p style="text-align: left;">Pour the batter in the pan, sprinkle with chocolate chips or chocolate chunks.  Bake for 18-25 minutes.  Remove from the oven and set the oven to broiler.  Sprinkle the top of the hot brownies with miniature marshmallows.  Once the broiler is heated, place the brownies on an upper shelf close to the broiler heat.  Stand there.  Don&#8217;t move.  The marshmallows will brown within 1 to 2 minutes.  I mean quick.   Remove from the oven and let cool to room temperature before cutting.</p>
<p style="text-align: left;">Use hot running water to clean the knife blade after each slice into the cooled brownie.  This should help the marshmallow not stick to the knife blade.</p>

<p>Great job with all the tulips.  Excellent work with all the sweet peas.  Don&#8217;t even get me started on the asparagus&#8230;. wow!</p>
<p>There&#8217;s just a few things I thought you might consider&#8230; just in the interest of being the best season ever, and kicking every other season right in the backside.</p>
<p>First, your color palette.  Have you ever considered switching it up?  All the pastels remind me of bad baby shower party games.  Plus, you&#8217;re edgier than that Spring.  Show those other seasons what&#8217;s what.  Have you considered a fresh neon palate?  It might work wonders for your image.</p>
<p>Second,  can you please work on making purple the new grey this season?</p>
<p>Lastly,  every year when you come to town, I end up in the candy aisle at the grocery store buying giant bags of chocolate egg-shaped candies.  After I&#8217;ve mistakenly make these chocolate goodies a meal, I&#8217;m forced the throw the remainder in the trash and pour dish soap on them, keeping myself from sleep-eating them in the middle of the night.  While this may seem like more of a personal issue, your attention to this matter would still be much appreciated.</p>

<p>Meringues are a super easy way to show Spring that you&#8217;re glad it&#8217;s come to town&#8230; or you could write Spring a letter like I did.</p>
<p>With only three egg whites, a bit of granulated sugar and some flavoring, you&#8217;ll be able to make a sheet full of three different types of tiny meringues:  chocolate, vanilla and raspberry. All you&#8217;ll need now is some small, clear gift bags, some pretty ribbon and you&#8217;ll have precious Easter gifts on lock-down.  Sweet, right!?</p>
<p>This recipe makes vanilla meringues with a dash of vanilla extract, chocolate meringues with unsweetened cocoa powder, and raspberry meringues with <a href="http://www.lepicerie.com/catalog/product_706100_Dehydrated_Raspberry_Powder.html" target="_blank">dehydrated raspberry powder</a> (made from freeze dried and super ground raspberries).  Feel free to play around with almond or coffee meringues using extracts too!</p>

<li>3 large egg whites</li>
<li>3/4 cup sugar</li>
<li>1/2 teaspoon pure vanilla extract</li>
<li>1 teaspoon unsweetened cocoa powder</li>
<li>1 1/2 teaspoons <a href="http://www.lepicerie.com/catalog/product_706100_Dehydrated_Raspberry_Powder.html" target="_blank">dehydrated raspberry powder</a></li>

<ol>
<li><span>Preheat oven to 175 degrees. Line 2 baking sheets with parchment paper; secure corners with masking tape. Fit three pastry bags with a small open-star tip or round tips (such as Ateco #22).  If you don&#8217;t have three pastry bags you can use just one bag and wash and dry it between flavors.   Set aside.</span></li>
<li><span>Make meringues: Put egg whites and sugar in the heatproof bowl of an electric mixer. Set bowl over a pan of simmering water, and stir gently until sugar has dissolved and mixture is warm to the touch, 2 to 3 minutes.</span></li>
<li><span>Transfer bowl to an electric mixer fitted with the whisk attachment. Mix on medium-high speed until stiff peaks form. </span></li>
<li>Divide egg whites between three clean bowls.  In one bowl mix in vanilla extract.  In second bowl, mix in cocoa powder.  In third bowl mix in raspberry powder.  Stir all until well combined.</li>
<li><span>Fill each bag with separate meringue flavors. Pipe small (3/4-inch-high) star shapes or round shapes (depending on your tip) onto prepared baking sheets. </span></li>
<li><span>Bake cookies until crisp but not brown, about 1 hour 40 minutes.  Turn the oven off and let the meringues cool in the oven.  Transfer from pans to an airtight container for storage.</span></li>

<p>Double Chocolate Peppermint Cookies. In some words: chocolatey, chewy and bright with peppermint.</p>
<p>What I love about these cookies is that there loaded with all sorts of chocolate. There&#8217;s the cocoa powder which intensely flavors the whole cookie, then there&#8217;s the milk chocolate chips and semi sweet chocolate chips. How many different kinds of chocolate do you need in a cookie? As much as possible. You might even try throwing white chocolate chips in these beauties.</p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span>2 sticks (8 ounces) unsalted butter, at room temperature</span></p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span>2/3 cup (packed) light brown sugar</span></p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span>Whisk together the flour, cocoa, salt and baking soda and keep close at hand.</span></p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span>Working in a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter on medium speed for about 1 minute, until smooth.Add the sugars and beat for another 2 minutes or so, until well blended.Beat in the peppermint.Add the eggs, one at a time, and beat for 1 minute after each egg goes in.Reduce the mixer speed to low and add the dry ingredients in 3 portions, mixing only until each addition is incorporated.On low speed, or by hand with a rubber spatula, mix in the chocolate pieces.(The dough can be covered and refrigerated for up to 3 days or frozen.If you’d like, you can freeze rounded tablespoons of dough, ready for baking.There’s no need to defrost before baking – just add another minute or two to the baking time.)</span></p>

<p class="MsoNormal" style="margin: 0in 0in 0pt;"><span>Bake the cookies – one sheet at a time and rotating the sheet at the midway point – for 10 to 12 minutes, or until they are set around the edges; they may still be a little soft in the middle, and that&#8217;s just fine.Pull the sheet from the oven and allow the cookies to rest for 1 minute, then carefully, using a wide metal spatula, transfer them to racks to cool to room temperature.</span></p>
