<p style="text-align: left;">My hair is straight today only because a woman spent about two hours pulling, tugging, blowing, and spraying my hair into this state.</p>
<p style="text-align: left;">It&#8217;s still curly on the bottom.  It&#8217;s also still frizzy on the top.  It would appear as though the outside of my head is as stubborn as my inside brain.  Stubborn!</p>
<p style="text-align: left;">I should just let my hair be how it lives.  Curly with a charming hint of frizz.  But&#8230; sometimes you want a change.  Sometimes you want to toss your bangs like the girls with the long straight hair.  Whatever.   Sometimes you want to bake your brie up into little bite-sized squares so you can eat too many of them without feeling like you&#8217;re eating an entire round of brie.  Again&#8230; whatever.</p>
<p style="text-align: left;">Also&#8230; it&#8217;s raining today.  I don&#8217;t even want to talk about the frizz this will induce.  I&#8217;m probably going to stay inside where the baked cheese is.  Just so you know.  Leave me be.</p>

<p style="text-align: left;">It&#8217;s buttery.  It&#8217;s flaky and light.  It&#8217;s buttery.</p>

<p style="text-align: left;">I cut the sheet of puff pastry into 12 rectangles&#8230; then each rectangle in half.  That means 24 little rectangles that will make 12 little puffs.</p>
<p style="text-align: left;">That was math.  I&#8217;m totally sorry.</p>

<p style="text-align: left;">I brush half of the squares with egg wash, a little nibble of cheese (do not be afraid of the brie rind!), a touch of jam, and more puff pastry.</p>

<p style="text-align: left;">Yes.  I put these little brie bites on sticks.  I stuck a small <a href="http://www.amazon.com/gp/product/B0000CFRBE/ref=as_li_ss_tl?ie=UTF8&amp;tag=joythebak00-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000CFRBE" target="_blank">popsicle stick</a> half way up the puff pastry and then pressed it all together.</p>
<p style="text-align: left;">You don&#8217;t need popsicle sticks.  You totally don&#8217;t.  The sticks just make things more&#8230; sticky.</p>

<p style="text-align: left;">Baked and puffed and sometimes they bleed jam and cheese.  No biggie.</p>
<p style="text-align: left;">These bites are best served warm&#8230; but I sure did eat several of them at room temperature.  Delicious still.</p>
<p style="text-align: left;">It&#8217;s warm cheese baked in buttery crust with sweet jam.  If you need convincing&#8230; I just&#8230; I dunno.</p>

<p style="text-align: left;"><strong>Bite-sized Baked Brie</strong></p>
<p style="text-align: left;">makes 24 squares</p>

<p style="text-align: left;">2 sheets puff pastry, thawed but still cold</p>
<p style="text-align: left;">1/2 wedge of brie, cold</p>
<p style="text-align: left;">1/3 cup cherry jam (or any flavor you fancy!)</p>
<p style="text-align: left;">1 large egg, beaten</p>
<p style="text-align: left;">splash of milk</p>
<p style="text-align: left;">All-butter, store bought puff pastry  usually comes frozen and folded into thirds.  We&#8217;re going to use these folded thirds to our advantage.  Cut the puff pastry into thirds along the creases.  Cut each panel into four pieces.  They&#8217;ll be 2 1/4-inch tall and 3-inches wide.  One sheet of puff pastry will yield 12 rectangles.  Cut each rectangle in half.  You&#8217;ll have 24 little rectangles that will create 12 little rectangle pockets.</p>
<p style="text-align: left;">Combine beaten egg and splash of milk.  Brush 12 of the small rectangles with egg wash.  If you&#8217;d like to make brie bites on sticks, now is the time!  Place a popsicle stick halfway up the puff pastry and press in gently.  Place a small sliver of brie (rind and all) on top of the egg wash (and stick).  Top with about 1/2 teaspoon of cherry jam.  Take another square of puff pastry and press between your fingers to make the rectangle slightly bigger.  Place puff pastry on top of the cheese and jam.  Use a fork to press the edges together.  The egg wash will act as a glue.  Make sure to seal the edges well by crimping with the fork.</p>
<p style="text-align: left;">Place a rack in the center of the oven and preheat oven to 375 degrees F.  Place prepared brie bites on a parchment lined baking sheet.  Brush with egg wash.  Sprinkle with a touch of coarsely ground sea salt.  Bake for 12 to 14 minutes or until golden brown.</p>
<p style="text-align: left;">Remove from the oven and allow to cool slightly before serving.</p>
<p style="text-align: left;">Brie bites are best served warm, but are also delicious at room temperature.  </div></p>

<p style="text-align: left;">The spongy texture comes from eggs.  Egg yolks and egg whites are separated, beaten in a mixer until thick and stiff, then folded back together.</p>

<p style="text-align: left;">Do you see all those cracks in the cake?  Nope&#8230; you don&#8217;t see em at all.  They&#8217;re all folded and rolled up&#8230; and covered in whipped cream and chocolate.  Even when things go cracked&#8230; whipped cream heals most wounds.</p>
<p style="text-align: left;">This cake is such a lovely holiday treat.  It&#8217;s festive and way way impressive.  It&#8217;s so light.  It&#8217;s effortless to eat.  It reminds me of fluffy cake ice cream.  So so dang yummy!</p>
<p style="text-align: left;">Don&#8217;t like peppermint?  Feel free to flavor your whipped cream filling with only pure vanilla, with almond extract, or orange zest and extract.</p>

<p>Makes 1 roll cake, serves about 8</p>

<p>For the Cake:</p>
<p>4 oz semi sweet chocolate, chopped fine</p>
<p>6 large eggs, separated</p>
<p>1/4 cup plus 2 tablespoons granulated sugar</p>
<p>1 teaspoon pure vanilla extract</p>
<p>pinch of salt</p>
<p>3/4 teaspoon cream of tartar</p>
<p>For the Whipped Filling:</p>
<p>1 1/4 cup heavy cream, cold</p>
<p>3 tablespoons granulated sugar</p>
<p>2 teaspoons pure vanilla extract or scrapings from 1 vanilla bean</p>
<p>1-2 teaspoons peppermint extract (start with one teaspoon and add more according to your taste).</p>
<p>For the Ganache:</p>
<p>1 cup semi-sweet chocolate pieces</p>
<p>2/3 cups heavy cream</p>
<p>To make the Cake:</p>
<p>Place a rack in the upper third of the oven and preheat oven to 350 degrees F.  Grease a 17&#215;12-inch baking sheet with butter or vegetable spray.  Line the baking sheet with parchment paper (not foil&#8230; definitely parchment), and grease and flour the paper too.  The parchment should overhand the sides of the pan just an inch or so.  Let the baking sheet aside.</p>
<p>It&#8217;s easiest to separate egg yolks from egg whites when they are cold.  After separating, allow them about 20 minutes to come to room temperature.</p>
<p>In the bowl of an electric stand mixer fitted with a whisk attachment, beat together egg yolks and 1/4 cup granulated sugar.  Beat the eggs until they are thick and pale in color.  This usually takes about 5 to 7 minutes at medium-high speed.  The egg yolk mixture will pour in a thick ribbon from the beater, that&#8217;s how your know they&#8217;ve been beaten enough.</p>
<p>While the eggs are beating, melt the chocolate pieces.  You can melt them in the microwave with low heat for a few seconds, stirring every once in a while as it melts.  I melt chocolate over a double boiler.  Place a few inches of water in a medium pan.  Bring to a simmer.  Place chocolate pieces in a heatproof bowl, and place the bowl over the boiling water.  Stir the chocolate until it is melted completely.  Turn off the heat and carefully remove the bowl from the simmering water.  Allow the chocolate to cool for just a few minutes.</p>
<p>Add the thickened egg yolk mixture to the chocolate mixture.  Gently stir together until just incorporated.  Stir in the vanilla.  The addition of the chocolate to the egg yolk mixture will thicken the egg yolks further, and make the chocolate appear fluffy in texture.  Perfect.  Set aside.</p>
<p>Clean the bowl and whisk attachment of your electric mixer well.  Dry them to insure that no remaining egg yolk is present.  Add the egg whites to the bowl.  Using the whisk attachment, beat on medium speed until frothy, about 2 minutes.  Add the pinch of salt, and gradually add the cream of tartar.  Increase speed to medium-high until soft peaks form.  Gradually add the remaining 2 tablespoons of sugar while beating.  Allow the mixture to beat until stiff peaks form.</p>
<p>Place the chocolate egg yolk mixture in a large bowl.  Place about 1/3 of the stiff egg whites in the bowl and gently fold.  Use a light hand to sweep the egg whites through the center of the chocolate mixture, up and under.  Fold until just incorporated, but large egg white and chocolate streaks remain.  Add another 1/3 of the egg whites and continue to fold.  The batter will be glossy and fluffy.  This fluff will create the desired sponge texture of the cake, so we want to deflate the egg whites as little as possible.  Fold in the remaining egg whites and gently fold together until just about entirely incorporated.</p>
<p>Immediately transfer the batter to the prepared baking sheet.  Carefully smooth into the pan creating an even thickness.  Don&#8217;t fuss with the batter too much.  The more fussing, the more the cake deflates.  If the cake batter doesn&#8217;t easily each end to end, then just try to make a even rectangle.  Don&#8217;t sweat it.</p>
<p>Bake cake for 15 to 17 minutes.  When done the cake will have a dry top and a spongey, bounce back feel.</p>
<p>Remove from the oven and allow to cool completely.</p>
<p>While the cake cools, prepare the whipped cream and ganache.</p>
<p>To make the Whipped Filling:</p>
<p>Place heavy cream in the bowl of an electric stand mixer with the granulated sugar, vanilla and peppermint extract.  Beat to soft, whipped cream peaks.  The whipped cream should hold its shape but still be velvety and spreadable.  Allow to rest in the refrigerator.</p>
<p>To make the Ganache:</p>
<p>Place chocolate pieces in a medium bowl.  Heat cream in a small sauce pan to almost boiling.  The milk will be steaming hot.  Pour the hot cream over the chocolate pieces.  Allow to stand for one minute before whisking into a smooth and glossy chocolate sauce.  Allow to rest in the fridge until thickened slightly, about 30 minutes.</p>
<p>To Assemble the Cake:</p>
<p>Allow cake to cool completely.  Remove the cake, using the overhang of parchment paper, from the baking sheet.  Spread with a thin layer of whipped cream filling.  This doesn&#8217;t need to be a thick later.  When the cake is rolled, there will be ample filling.</p>
<p>Place the cake so that the 12-inch side is facing you.  We&#8217;re going to roll from the short side.</p>
<p>Use the parchment paper to help you.  Don&#8217;t worry about creating a tight roll.  This isn&#8217;t like rolling cinnamon rolls.  Gently roll the cake, removing the parchment paper as the cake is rolled.  The first roll or two will most likely crack and it&#8217;s being folded.  Don&#8217;t let this stop you.  This cracking is totally normal.  As the cake roll gets larger, the cake will crack less.</p>
<p>Gently lift cake and place on a clean serving board or plate.  Allow the cake to rest for about 30 minutes in the fridge.</p>
<p>Remove cake from the fridge and drizzle with chocolate ganache.  Allow to chill in the fridge until ready to serve.  Just before serving, garnish the cake with crushed candy canes.  Garnishing before will make the candy cane pieces ooze just a bit.</p>
<p>Cake will last, wrapped in the fridge, for up to 3 days.</p>

I just&#8230; I don&#8217;t have that.</p>
<p style="text-align: left;">It&#8217;s cool.  I can&#8217;t be everything.  I don&#8217;t even want to be everything.  You know what I do want to be&#8230;?  I want to be like Nigella Lawson <a href="http://www.dailymail.co.uk/femail/article-2071324/Nigella-Lawson-Erotic-Ms-Lawson-furiously-denies-dishes-food-porn.html?ito=feeds-newsxml" target="_blank">covered in caramel</a>&#8230; because then Christmas trees don&#8217;t really matter at all.</p>

<p style="text-align: left;">These buttery scones are baked up and studded with tart cranberries that turn slightly sweet, and sweet and spicy ginger.  Surprises in every bite.  All you need is a milky cup of tea.</p>

<p><strong>Fresh Cranberry Cream Scones with candied ginger</strong></p>
<p>makes 6 scones</p>
<p>recipe adapted from <a href="http://www.joyofbaking.com/scones.html" target="_blank">joyofcooking.com</a></p>

<p>2 cups all-purpose flour</p>
<p>1/4 cup raw (turbinado) sugar (you can also use brown sugar or granulated if you have that on hand)</p>
<p>2 teaspoons baking powder</p>
<p>1/4 teaspoon salt</p>
<p>1/2 cup (1 stick) unsalted butter, cold and cut into cubes</p>
<p>1 heaping cup coarsely chopped fresh cranberries</p>
<p>1/2 cup coarsely chopped candied ginger</p>
<p>1 large egg</p>
<p>1 teaspoon pure vanilla extract</p>
<p>1/2 cup heavy cream, cold</p>
<p>cream and sugar for topping</p>
<p>Place a rack in the center of the oven and preheat oven to 375 degrees R.  Line a baking sheet with parchment paper and set aside.</p>
<p>In a large bowl, whisk together  flour, sugar, baking powder, and salt.  Add the cold butter and quickly work the butter into the flour mixture.  Break up the butter until well incorporated into the flour.  Some butter bits will be the size of peas, others will be as small as oat flakes.  Toss in the cranberries and ginger and set aside.</p>
<p>In a small bowl, whisk together egg, vanilla extract, and heavy cream.  Add the cream mixture all at once to the flour mixture.  Stir quickly to ensure that all of the flour mixture is moistened by the cream mixture.  Dump the shaggy dough mixture out onto a lightly floured work surface and work together, kneading lightly, into a 1 1/2-inch thick disk.</p>
<p>Cut the disk into 6 wedges.</p>
<p>Place 2-inches apart on baking sheet and brush with cream and sprinkle generously with sugar.</p>
<p>Bake for 15 minutes until just cooked through.  Remove from the oven and allow to cool slightly before serving.  Serve warm or at room temperature.  Scones are best served the day they are made, but these scones will last well wrapped at room temperature for up to 3 days. </div>

<p style="text-align: left;">This is a double battered creation.  The first batter is a milky cinnamon sugar batter.  This lays the base for the second batter&#8230; crispy panko bread crumbs.</p>

<p style="text-align: left;">I love to sprinkle these fried apples with powdered sugar, and serve hot out of the fryer.  The batter is spiced and crunchy, the apple inside is tender with just a hint of crunch.  They&#8217;re cooked but still maintain a bit of crunch.</p>

<p><strong>Crispy Apple Doughnuts</strong></p>
<p>makes about 24 rings</p>

<p>For the Panko:</p>
<p>2 cups panko bread crumbs</p>
<p>2 tablespoons granulated sugar</p>
<p>1/2 teaspoon ground cinnamon</p>
<p>For the Milky Batter:</p>
<p>1 cup flour</p>
<p>2 tablespoons cornstarch</p>
<p>1/2 cup granulated sugar</p>
<p>1 teaspoon ground cinnamon</p>
<p>1/2 teaspoon freshly ground nutmeg</p>
<p>1/2 teaspoon baking powder</p>
<p>1/2 teaspoon salt</p>
<p>3/4 cup milk (I used 2% milk)</p>
<p>1 large egg</p>
<p>4 Fuji or Granny Smith apples</p>
<p>oil for frying</p>
<p>In a medium bowl, whisk together panko crumbs, sugar, and cinnamon.  I like to use my fingers to crush the panko crumbs into a finer breadcrumb.  Set aside.</p>
<p>In a medium bowl, whisk together flour, cornstarch, sugar, cinnamon, nutmeg, baking powder, and salt.  In a small bowl, whisk together milk and egg.  Add the wet mixture to the dry mixture and whisk until no lumps remain.  Set aside to rest while you peel and slice the apples.</p>
<p>Peel the apples and slice into about 1/3-inch thick rings.  Use a small biscuit cutter to cut out the core.  You can also peel the apples and use a apple corer to core the apple before slicing it into rings.</p>
<p>Soak apple slices in milky batter mixture.  Set the panko mixture next to the milky batter.  Heat a heavy bottom sauce pan with 2-inches of oil to 350 degrees F, measuring heat with a candy/fry thermometer.</p>
<p>When oil has reached 350 degrees F, use  pair of tongs to remove a few rings from the milky batter, and coat in panko crumbs.  Once throughly coated in crumbs, use tongs to carefully place rings in hot oil.  Fry about 4 rings at once.  Fry until golden brown, flip over and fry until golden.  Remove from oil, place on a paper towel and fry the rest of the apple rings.  Bring the oil back up to 350 degrees before adding additional apple slices.</p>
<p>Keep the fried apples warm in a 200 degree oven while the others fry.  Sprinkle generously with powdered sugar and serve.</p>

<p style="text-align: left;">This cocktail is simple, uncomplicated, refreshing, easy to drink, and a really lovely celebration of mid-spring.</p>
<p style="text-align: left;">You know it&#8217;s going to be summer soon, right?  There are short dresses and summer heels in my future. Oh man.  I need tan lotion and tea.</p>

<p><strong>Sweet Tea Bourbon Cocktail with fresh mint and orange</strong></p>

<p>6 cups water</p>
<p>4 or 5 black tea bags</p>
<p>1/4 cup agave syrup (honey will do too)</p>
<p>1/4 to 1/2 cup bourbon (depending on how strong you want your cocktail)</p>
<p>4  to 6 sliced orange rounds</p>
<p>6 sprigs fresh mint</p>
<p>lots of ice</p>
<p>Bring water to a boil.  Turn off water and add black tea bags.  Steep tea for 3 to 5 minutes.  Remove the tea bags, place the tea in a large pitcher and let rest in the refrigerator until cold.</p>
<p>Place agave, bourbon, orange slices and fresh mint in a medium bowl.  It the back of a spoon, begin to muddle (or press together) the ingredients.  The oranges will release come juice, the mint will become fragrant, and the bourbon will tickle your nose.  It&#8217;ll smell delicious.  Once the mixture is pressed together, and the flavors are extracted, add the mixture to the pitcher of tea.  Stir well.  ((Feel free to strain the orange wedges and the mint leaves before pouring into the pitcher of tea, if you&#8217;d like.))</p>
<p>Fill glasses with ice cubes.  Pour sweet, boozy tea over ice.  Enjoy.  Drink it up.</p>

<p style="text-align: left;">Oh!  And this is what I&#8217;m having for dessert.</p>
<p style="text-align: left;">It&#8217;s a banana stuffed with dark chocolate and white chocolate and salted peanuts and shredded coconut. I wrapped it in foil and baked it in the oven.  When I was a kid we would pull this sort of stunt while at sleep away camp, but we&#8217;d cook the foil covered bananas in the campfire.  That&#8217;s livin.</p>
<p style="text-align: left;">Also&#8230; don&#8217;t be alarmed that the baked banana peel will be black.  That&#8217;s what happens when bananas peels are baked.  The inside will be a warm baked banana topped with melted chocolate, et al. But&#8230; it&#8217;s not like this is a fancy show piece dessert.  It&#8217;s more of a dessert-for-one sort of situation.</p>
<p style="text-align: left;">Now this is the part where I give you instructions on how to make a sandwich&#8230;. as if you don&#8217;t already know&#8230;. forgive me.</p>

<p style="text-align: left;"><strong>Spinach Goat Cheese Ham Sandwich</strong></p>

<p style="text-align: left;">Makes:  one sandwich</p>
<p style="text-align: left;">2 slices whole wheat or sourdough bread</p>
<p style="text-align: left;">2 tablespoons goat cheese, softened</p>
<p style="text-align: left;">handful of fresh spinach leaves</p>
<p style="text-align: left;">4 slices thin sliced ham</p>
<p style="text-align: left;">whole grain mustard</p>
<p style="text-align: left;">fresh ground black pepper</p>
<p style="text-align: left;">scant 1 tablespoon butter for the skillet</p>
<p style="text-align: left;">Place a skillet over medium low heat and melt butter.</p>
<p style="text-align: left;">Spread one tablespoon of goat cheese on each slice of bread.  Top one slice with spinach and the other slice with ham.  Spread a bit of whole grain mustard atop the ham and smush the two pieces of bread together.  Grill on either side until golden brown and delicious.  Remove from skillet.  Allow to cool for two or three minutes before cutting in half.  Enjoy with olives and wine.</p>
<p style="text-align: left;"><strong>Baked Bananas</strong></p>
<p style="text-align: left;">Makes:  one banana</p>
<p style="text-align: left;">1 banana</p>
<p style="text-align: left;">2 tablespoons dark chocolate chips</p>
<p style="text-align: left;">1 tablespoons white chocolate chips</p>
<p style="text-align: left;">1 tablespoon sweetened shredded coconut</p>
<p style="text-align: left;">1 tablespoon roasted and salted peanuts</p>
<p style="text-align: left;">Place a rack in the center of the oven and place a baking sheet on the rack.  Preheat the oven to 375 degrees F.</p>
<p style="text-align: left;">Cut the head and butt of of a whole banana.  Slice lengthwise down the peel (not through the entire banana, just the peel) and open the peel, revealing just the top of the banana.</p>
<p style="text-align: left;">Stuff banana with chocolate chips, coconut  and cuts.  Wrap loosely in foil and place on baking sheet to cook for 15 minutes.  Remove from the oven and allow to cool for 5 minutes before unwrapping and enjoying straight from the peel.  Get in there.</p>

<p>Maybe you can sorta tell how I feel about Valentine&#8217;s Day.  Maybe you can sorta tell I&#8217;m not that into it.  I&#8217;m not angry or bitter&#8230; it&#8217;s just never been a day that&#8217;s bowled me over.  Wait&#8230; is that an expression?</p>
<p>When I was 17, my first boyfriend made me something from his pottery class for Valentine&#8217;s Day&#8230; that he then took back and gave to another girl.  It sounds way more upsetting than it actually was.  I remember <em>totally</em> not caring.  Aaaannnnddd&#8230;that&#8217;s that.  Moving on.</p>

<p>Let me tell you about these cookies.  They&#8217;re certainly not your typical rolled out sugar cookie.</p>
<p>These cookies are loaded with good quality cocoa powder and stone ground whole wheat flour.  I like them quite a lot.  They&#8217;re slightly crisp around the edges and soft in the center.  The cocoa adds&#8230; you know&#8230; lots of yumyum.  The whole wheat flour adds a nuttiness and makes the cookies more of a mouthful than plain old all-purpose flour.  I love the combination.</p>
<p>I topped these cookies with a generous sprinkling of granulated sugar and thought they were just divine.</p>

<p>The <strong><a href="http://www.amazon.com/Jamie-Home-Cook-Your-Good/dp/1401322425/ref=sr_1_1?s=books&amp;ie=UTF8&amp;qid=1297238575&amp;sr=1-1" target="_blank">Jamie at Home</a></strong> cookbook.  So beautiful!  I mean&#8230; swooooon!  I can&#8217;t wait to dive into this book.</p>
<p>And, of course, <strong><a href="http://www.amazon.com/Pioneer-Woman-Black-Tractor-Wheels/dp/0061997161" target="_blank">Ree&#8217;s new book</a></strong>.  And she signed it.  And all is well.</p>

<p><strong>Whole Wheat Chocolate Brown Sugar Sugar Cookies</strong></p>
<p>Makes:  about three dozen cookies</p>
<p><p><a href="#" onClick="window.print(); return false;" alt="Print this Recipe!" class="dco_print_button printthis">Print this Recipe!</a></p></p>
<p>1 cup whole wheat flour</p>
<p>1/4 cup plus 2 tablespoons all-purpose flour</p>
<p>1/4 cup plus 2 tablespoons cocoa powder</p>
<p>1/4 teaspoon salt</p>
<p>1/2 teaspoon baking powder</p>
<p>1/2 cup (1 stick) unsalted butter, at room temperature</p>
<p>1/2 cup brown sugar</p>
<p>1/4 cup granulated sugar</p>
<p>1 large egg</p>
<p>Place a rack in the upper third of the oven and preheat oven to 350 degrees F.  Line two baking sheets with parchment paper and set aside.</p>
<p>In a medium bowl, whisk together flours, cocoa powder, salt and baking powder.  Set aside.</p>
<p>In the bowl of an electric stand mixer, fit with a paddle attachment, beat together butter and sugars.  Beat until well incorporated.  Stop the mixer and scrape down the bowl.  Add the egg.  Beat on medium speed until mixture is glossy and fluffy, about 2 to 3 minutes.</p>
<p>Stop mixer and add the dry ingredients all at once.  Mix on low speed until all of the flour is incorporated  Stop mixer and finish incorporating ingredients with a spatula.  Spoon batter out onto a sheet of waxed paper, and form loosely into a log.  Roll and seal cookie dough and chill in the fridge for at least 2 hours.</p>
<p>Once chilled, divide dough in half and place one half on a lightly floured counter surface.  Lightly flour a rolling pin and roll out dough to a 1/4-inch thickness.  Use a heart shaped (or whatever) cookie cutter to cut out cookies and place dough on prepared baking sheet.  Very lightly brush cookies with water and sprinkle with granulated or turbinado sugar.</p>
<p>Bake for 10 to 12 minutes.  Remove from the oven, allow to rest on the baking sheet for 10 minutes before removing to a wire rack to cool completely.</p>
<p>Roll and cut cookies, re-rolling the dough once or twice, until all cookies are cut and baked.</p>
<p>Cookies will last, in an airtight container at room temperature, for up to five days.</p>

<p>Here&#8217;s some things to avoid doing on Christmas morning.</p>
<p>Don&#8217;t haphazardly put the casserole your aunt made  in a bag.</p>
<p>Don&#8217;t drive that casserole across town.</p>
<p>Don&#8217;t carry that casserole into a home with tile floors.</p>
<p>Don&#8217;t accidentally drop the stupid bag with the broken handle on the tile floor.</p>
<p>If you do that&#8230; everything will break.</p>
<p>If you drop the casserole and break the dish  you&#8217;ll surely have to throw everything away&#8230; no one wants to eat glass.</p>
<p>If you throw every broken thing away, you&#8217;ll make your aunt cry.</p>
<p>Don&#8217;t make your aunt cry on Christmas.  That would be totally stupid.  Do Not Do That.</p>
<p>And if you do&#8230; make your aunt a new casserole.  Duh.</p>
<p>Sigh.</p>

<p style="text-align: left;">This is my Aunt Judy&#8217;s Mom&#8217;s old school casserole recipe.</p>
<p style="text-align: left;">Old school casseroles have like&#8230; four ingredients in them&#8230;. with potato chips on top.   They&#8217;re delicious.  It&#8217;s weird.</p>

<p style="text-align: left;">This recipe makes two casseroles.  I think ti&#8217;s classy to make one for yourself and take one to a friend.  I dunno&#8230;. maybe I&#8217;m weird.</p>

<p style="text-align: left;">2 cups cooked white rice</p>
<p style="text-align: left;">2 cups diced celery</p>
<p style="text-align: left;">1/4 cup diced onions</p>
<p style="text-align: left;">1 tablespoon olive oil</p>
<p style="text-align: left;">1 rotisserie chicken</p>
<p style="text-align: left;">1 15-ounce can cream of mushroom soup</p>
<p style="text-align: left;">1 1/2 cup mayonnaise</p>
<p style="text-align: left;">salt and fresh ground pepper to taste</p>
<p style="text-align: left;">3/4 cup slivered almonds</p>
<p style="text-align: left;">3/4 cup crushed potato chips</p>
<p style="text-align: left;">Preheat oven to 300 degrees F.</p>
<p style="text-align: left;">Cook rice and place in a large bowl.</p>
<p style="text-align: left;">Saute celery and onions with 1 tablespoon of olive oil until onions are cooked and browned.  Place mixture in a large bowl with the rice.</p>
<p style="text-align: left;">Stip meat from rotisserie chicken and place in the bowl.  Add cream of mushroom soup, mayonnaise, a few pinches of salt and a few turns of fresh ground pepper.  Stir well to incorporate all of the ingredients.  Spoon mixture into two 8-inch baking dishes and top with slivered almonds and crushed potato chips.  Bake at 300 degrees F for 1 hour.</p>
<p style="text-align: left;">If you&#8217;d like, you can freeze an unbaked casserole in the casserole dish.  When ready to bake, let it thaw in the fridge overnight, top with almonds and crushed potato chips and bake.</p>
