<p>Dear New Year,</p>
<p>Here&#8217;s the deal!  I like carrot sticks.  I&#8217;m going to keep eating those.  I like oatmeal cookies.  I&#8217;m going to continue to consider them a <a href="http://www.joythebaker.com/blog/2011/08/vegan-carrot-cherry-breakfast-cookies/" target="_blank">breakfast cookie</a>.  I&#8217;ll drink green juices.  I&#8217;ll even like it.</p>
<p>Also&#8230; I&#8217;m going to continue to follow 3 people on Facebook that I don&#8217;t actually like.  It&#8217;s that &#8216;keep your enemies close&#8217; thing.</p>
<p>I&#8217;m going to drink tea, but I&#8217;ll always love coffee more.</p>
<p>I&#8217;ll go to church.  I&#8217;ll volunteer&#8230; and I&#8217;ll try to be better all the time.  I&#8217;ll try most sincerely.  I&#8217;ll try to love more and text less.</p>
<p>I&#8217;m going to find a new bourbon to appreciate.  That should be bonkers fun.</p>
<p>I&#8217;m going to eat real dinners, unless eating cold cereal while reading Food and Wine magazine makes more sense.</p>

<p style="text-align: left;">There is such beauty in the simplicity of this recipe.  Beef roast is combined with broth, lots of raw garlic, onion, fresh sage and fresh thyme.  I used a large Dutch oven&#8230; but a slow cooker (crock pot) also works well too!  Beef is slooooooow cooked to tender perfection.  This takes hoooouuuurrrsss.  You can do all sorts of things in the time it takes for this roast to simmer, cook, and make your home smell amazing.</p>
<p style="text-align: left;">Errands.  Emails.  Closet organizing.  Nail painting.  Cookbook browsing.  Facebook stalking&#8230; imagine the things you could do.</p>
<p style="text-align: left;">After cooking the meat is removed from the liquid and shredded with two forks.  It falls apart, really.  It is a perfect thing.</p>

<p style="text-align: left;">serves 12</p>
<p style="text-align: left;">recipe adapted from Everyday Food</p>

<p style="text-align: left;">3 pounds beef chuck shoulder roast, cut into 1 pound pieces</p>
<p style="text-align: left;">4 cups low sodium beef broth</p>
<p style="text-align: left;">1 head garlic, cloves smashed and peeled</p>
<p style="text-align: left;">small handful of flat leaf Italian parsley and stems</p>
<p style="text-align: left;">1 thick slice red onion</p>
<p style="text-align: left;">3 fresh sage leaves</p>
<p style="text-align: left;">1 1/2 tablespoons fresh thyme leaves, and a few fresh stems as well</p>
<p style="text-align: left;">coarse sea salt and fresh ground black pepper</p>
<p style="text-align: left;">For the Horseradish Mayonnaise</p>
<p style="text-align: left;">1/2 cup mayonnaise</p>
<p style="text-align: left;">1-2 tablespoons prepared horseradish</p>
<p style="text-align: left;">1 tablespoon chopped chives</p>
<p style="text-align: left;">1 tablespoon chopped parsley</p>
<p style="text-align: left;">pinch of salt and fresh ground pepper to taste</p>
<p style="text-align: left;">brioche buns, red onion slices, and dijon mustard for serving</p>
<p style="text-align: left;">Oven Method:  Preheat oven to 275 degrees F.  In a large Dutch oven with a tight fitting lid, combine beef, broth, garlic, parsley leaves and stems, and onion.  Sprinkle salt and pepper over the meat pieces.  Cover the Dutch oven and place in the oven.  Bake until beef is tender and can be easily pulled apart with two forks. , 5 to 6 hours.</p>
<p style="text-align: left;">Slow-Cooker Method:  In a 6 or 6 quart slow cooker, combine beef, broth, garlic, parsley leaves and stems, and onion.  Sprinkle salt and pepper over the meat pieces.  Cover and cook on high until beef is tender and can easily be pulled apart with a fork, about 6 hours.</p>
<p style="text-align: left;">To serve:  with a slotted spoon transfer beef to a large bowl.  Using two forks, pull the meet apart into shreds.  Remove and discard and large fat pieces.  Moisten meat with up to 1 cup of cooking broth.  Reserve some of the remaining liquid for dipping.  Beef can be refrigerated, in an airtight container in the fridge, for up to 5 days.</p>
<p style="text-align: left;">To make the Horseradish Sauce:  combine mayonnaise, prepared horseradish, chives, parsley, salt and pepper.  Spread on bread as desired.</p>
<p style="text-align: left;">Serve sandwich with horseradish mayonnaise, Dijon mustard, and fresh red onion on toasted brioche buns.  </div></p>

<p style="text-align: left;">Grilled ham and cheese is easy .  I don&#8217;t have to convince you that it&#8217;s a simple and delicious sandwich.  Adding pickles and potato chips is a salty, crunchy stroke of genius.  Enjoy warm, just after grilling, with a hearty handful of potato chips.</p>
<p style="text-align: left;"><strong>Grilled Ham Cheese Pickle and Potato Chip Sandwich</strong></p>
<p style="text-align: left;">You&#8217;ll need:</p>
<p style="text-align: left;">2 slices of sandwich bread</p>
<p style="text-align: left;">Dijon mustard</p>
<p style="text-align: left;">cheddar cheese sliced thin</p>
<p style="text-align: left;">about 5 thinly sliced pieces of ham</p>
<p style="text-align: left;">sliced dill pickles</p>
<p style="text-align: left;">a handful of salted potato chips</p>
<p style="text-align: left;">1 tablespoon of butter for grilling</p>
<p style="text-align: left;">What you&#8217;ll do:</p>
<p style="text-align: left;">Melt butter in a skillet over medium heat.</p>
<p style="text-align: left;">Spread mustard over both sides of bread.  Top with cheese, ham, pickles, potato chips, and more cheese.</p>
<p style="text-align: left;">Smash sandwich breads together.  Grill in melted butter on both sides until golden brown and the cheese is melted.</p>
<p style="text-align: left;">Slice in half.  Serve immediately before the chips get soggy.</p>

<p style="text-align: left;">Oh!  And this is what I&#8217;m having for dessert.</p>
<p style="text-align: left;">It&#8217;s a banana stuffed with dark chocolate and white chocolate and salted peanuts and shredded coconut. I wrapped it in foil and baked it in the oven.  When I was a kid we would pull this sort of stunt while at sleep away camp, but we&#8217;d cook the foil covered bananas in the campfire.  That&#8217;s livin.</p>
<p style="text-align: left;">Also&#8230; don&#8217;t be alarmed that the baked banana peel will be black.  That&#8217;s what happens when bananas peels are baked.  The inside will be a warm baked banana topped with melted chocolate, et al. But&#8230; it&#8217;s not like this is a fancy show piece dessert.  It&#8217;s more of a dessert-for-one sort of situation.</p>
<p style="text-align: left;">Now this is the part where I give you instructions on how to make a sandwich&#8230;. as if you don&#8217;t already know&#8230;. forgive me.</p>

<p style="text-align: left;"><strong>Spinach Goat Cheese Ham Sandwich</strong></p>

<p style="text-align: left;">Makes:  one sandwich</p>
<p style="text-align: left;">2 slices whole wheat or sourdough bread</p>
<p style="text-align: left;">2 tablespoons goat cheese, softened</p>
<p style="text-align: left;">handful of fresh spinach leaves</p>
<p style="text-align: left;">4 slices thin sliced ham</p>
<p style="text-align: left;">whole grain mustard</p>
<p style="text-align: left;">fresh ground black pepper</p>
<p style="text-align: left;">scant 1 tablespoon butter for the skillet</p>
<p style="text-align: left;">Place a skillet over medium low heat and melt butter.</p>
<p style="text-align: left;">Spread one tablespoon of goat cheese on each slice of bread.  Top one slice with spinach and the other slice with ham.  Spread a bit of whole grain mustard atop the ham and smush the two pieces of bread together.  Grill on either side until golden brown and delicious.  Remove from skillet.  Allow to cool for two or three minutes before cutting in half.  Enjoy with olives and wine.</p>
<p style="text-align: left;"><strong>Baked Bananas</strong></p>
<p style="text-align: left;">Makes:  one banana</p>
<p style="text-align: left;">1 banana</p>
<p style="text-align: left;">2 tablespoons dark chocolate chips</p>
<p style="text-align: left;">1 tablespoons white chocolate chips</p>
<p style="text-align: left;">1 tablespoon sweetened shredded coconut</p>
<p style="text-align: left;">1 tablespoon roasted and salted peanuts</p>
<p style="text-align: left;">Place a rack in the center of the oven and place a baking sheet on the rack.  Preheat the oven to 375 degrees F.</p>
<p style="text-align: left;">Cut the head and butt of of a whole banana.  Slice lengthwise down the peel (not through the entire banana, just the peel) and open the peel, revealing just the top of the banana.</p>
<p style="text-align: left;">Stuff banana with chocolate chips, coconut  and cuts.  Wrap loosely in foil and place on baking sheet to cook for 15 minutes.  Remove from the oven and allow to cool for 5 minutes before unwrapping and enjoying straight from the peel.  Get in there.</p>

<p style="text-align: left;">Fresh herbs and lemon.  Yes!  The brightness of herbs and lemon really balance out creamy eggs and mayo.  Whole grain mustard is always a good idea too.</p>
<p style="text-align: left;">If I had little pickle bits to add to the salad&#8230; this would be one of my favorite things ever.</p>

<p style="text-align: left;">8 hard boiled eggs, peeled and cut in half</p>
<p style="text-align: left;">heaping 1/4 cup mayonnaise</p>
<p style="text-align: left;">heaping teaspoon whole grain mustard</p>
<p style="text-align: left;">1 teaspoon finely chopped tarragon</p>
<p style="text-align: left;">2 teaspoons chopped flat leaf parsley</p>
<p style="text-align: left;">2 tablespoons finely diced shallots</p>
<p style="text-align: left;">2 teaspoon fresh lemon juice</p>
<p style="text-align: left;">salt and pepper to taste</p>
<p style="text-align: left;">bread</p>
<p style="text-align: left;">Making egg salad is super easy.  Once the eggs are hard boiled and peeled, and the herbs and shallots are chopped, dump everything into a medium bowl.  Use a fork to break up the egg whites and yolks and incorporate all of the ingredients.  Add more mayonnaise if you&#8217;d like it more creamy.  Add salt and pepper to taste.  Spoon onto good bread and enjoy.  Store egg salad in the fridge for up to 4 days.</p>

<p style="text-align: left;">When really good tomatoes are thaaaat expensive, you choose carefully.  You don&#8217;t care if you&#8217;re blocking the skinny yoga girl who is fluttering about behind you trying to get at the same tomato display.  Excuse me, skinny yoga girl&#8230;. I&#8217;m going to take my time with this one.  You should go eat a steak anyway.</p>

<p style="margin-top: 0px; margin-right: 0px; margin-bottom: 17px; margin-left: 0px; font-size: 12px; line-height: 18px; padding: 0px;">Turn out onto a floured board and knead about 15 times.  Roll or pat out into a 1-inch thickness.  Cut into 2-inch rounds using a biscuit cutter or cut into 2×2-inch squares.  Reshape and roll dough to create more biscuits with excess scraps.  Brush tops with a bit of heavy cream and a sprinkle of fresh ground black pepper.  Place on an ungreased baking sheet and bake at 425 degrees F for 12-15 minutes.  Serve immediately with softened butter or top with bacon and a fried egg as breakfast sandwiches.</p>

<p>You know that team building exercise you might play at sleep-away camp that requires you to fall backwards into the waiting arms of a fellow camper?  The Trust Fall?  The basic idea is that you completely let yourself fall backwards, trusting that the person behind you has arms outstretched to catch you before you hit the ground.  It&#8217;s a very literal way of saying &#8220;Hey!  I&#8217;ve got your back!&#8221;  or &#8220;Don&#8217;t worry, I&#8217;ll catch you if you fall.&#8221;  If the person you&#8217;ve entrusted to catch you is not paying attention and flirting with her sleep-away boyfriend as you fall&#8230; well, you might have trust issues for life.  Not cool.</p>
<p>I bring up the old Trust Fall because we&#8217;re talking about sandwiches.  Sandwiches are serious business.  I feel like I need to do a good round of Trust Falling with someone before we&#8217;re allowed to make each other sandwiches.  Like I said&#8230; sandwiches are serious.</p>
<p>I need to know that someone has got my back when they make me a sandwich.  Who&#8217;s making me a sandwich?  No one&#8230; that&#8217;s not the point.  It&#8217;s all about trust, and care and attention.  Like&#8230; which slices of bread they choose from the loaf, and how the mayonnaise doesn&#8217;t sneak over the edges, and how the tomato slices are just thin enough, and the lettuce is mostly dry from the washing.  Sandwiches have a lot of details.  There&#8217;s a lot going on.  I need to trust that my sandwich maker can handle these details&#8230; you know?</p>
<p>What?  Too much?  It&#8217;s just a sandwich?  Yea&#8230; a sandwich.  I take my sandwiches to heart.  I haven&#8217;t done the old Trust Fall with the young gentlemen at my local sandwich shop, so frankly, I don&#8217;t know if I can trust them to make me a sandwich&#8230; ridiculous, but true.</p>

<p>So, yes.  I&#8217;m a touch neurotic about my sandwiches.  That&#8217;s just how it goes.  Because I&#8217;m so ridiculous, I usually make my own.</p>
<p>This time around I made my own mayonnaise, because, holy heck it&#8217;s easy!  Mayonnaise is a simple emulsion of egg yolk, flavors like mustard and seasoning, acid, and a fat like canola oil or olive oil.   Olive oil will make a strongly flavored mayonnaise.  I went for a roasted red pepper (I bought a jar) version using grapeseed oil as the fat.  This version creates a slightly looser mayonnaise than the one you might scoop from the store bought jars.  For a plain mayonnaise you can make with a bowl and a whisk, <a href="http://www.epicurious.com/recipes/food/views/Homemade-Mayonnaise-241868" target="_blank">check out this tutorial</a>.  It&#8217;s handy.</p>

<p><strong>Roasted Red Pepper Mayonnaise</strong></p>
<p>adapted from <a href="http://www.amazon.com/Fat-Appreciation-Misunderstood-Ingredient-Recipes/dp/1580089356/ref=sr_1_1?ie=UTF8&amp;qid=1242804317&amp;sr=8-1" target="_blank">Fat</a></p>

<p>makes about 1 cup of mayonnaise</p>
<p>1 large egg yolk</p>
<p>3/4 teaspoon Dijon mustard</p>
<p>1 teaspoon lemon juice</p>
<p>salt and pepper to taste</p>
<p>1 roasted red pepper, coarsely chopped ( I used the jarred variety.  Easy!)</p>
<p>3/4 cup canola or grapeseed oil</p>
<p>Combine egg yolk, mustard, lemon juice, and chopped roasted red pepper  in the bowl of a food processor fitted with the blade attachment.  Mix for about 30 seconds.  Add a pinch of salt and pepper and whirl again.</p>
<p>With the machine running (I know it&#8217;s loud), gradually add the oil until the mixture starts to thicken and emulsify.  I added the oil in a steady, but very thin stream.  The mixture will start to emulsify at about the 2 minute mark.  Once it starts to emulsify, you can add the fat more quickly.  If the mixture is too thick for some reason, just blend in 1 teaspoon of boiling water to thin it.  Taste and adjust the seasoning.  Store in an airtight container and refrigerate.  Lasts for 3-4 days.</p>

<p><strong>The Best BLT</strong></p>
<p>makes one sandwich</p>
<p>2 slices of your favorite bread, toasted</p>
<p>3-4 slices of tomato</p>
<p>2 leaves of butter lettuce, rinsed</p>
<p>4 -5 slices of crisp bacon</p>
<p>generous slather of roasted red pepper mayonnaise</p>
<p>Cook up bacon and drain of a paper towel.  Rinse lettuce leaves, and pat dry.  Slice tomato slices and let rest on a paper towel, allowing some of the moisture to be absorbed.</p>
<p>Toast bread and slather with as much roasted red pepper mayonnaise as you like.  Top with bacon, tomatoes and lettuce.  Top with other slice of bread and you&#8217;re in business.  Holy yum!</p>
