<p>I&#8217;m twenty nine years old.  I&#8217;m an adult.  I pay my bills.  I do my taxes.  I go to jury duty.  I stand in line at the post office without heavy sighs.  I floss too!  I totally floss.</p>
<p>And yet.  Somehow.  I thought it would be ok&#8230; not just ok, but reasonable&#8230; not just reasonable&#8230; but a good idea to make chocolate chip cookie dough, freeze it and then dip the balls in melted chocolate.</p>
<p>Now I have a  freezer full of giant cookie dough balls dipped in chocolate and I&#8217;m panicking.  I need an adult.  I&#8217;m about to eat cookie dough for lunch, cookie dough for dinner, cookie dough for dessert, and then cookie dough again for second dinner.</p>

<p style="text-align: left;">Raw cookie dough.  Sooo dang good.</p>
<p style="text-align: left;">Now before anyone starts yelling about raw eggs and poison and disease, let me assure you that this dough has no raw eggs in it.  Instead, I used Greek yogurt as the binder.  You might also use applesauce or peanut butter if you don&#8217;t have thick yogurt on hand.</p>

<p style="text-align: left;">Here&#8217;s how this happened.  I made eggless cookie dough, scooped it up in generous portions on a waxed paper lined cookie sheet, stuck cute plastic forks in the dough and froze those suckers overnight.  The next morning I melted down some chocolate chips, dipped the frozen dough balls and returned them to the freezer.  Serve them right from the freezer&#8230; It&#8217;s sort of the best thing ever.</p>
<p style="text-align: left;">Now if you&#8217;ll excuse me&#8230; I can hear someone calling my name from the freezer.  It must be these dough balls.  It would be rude not to respond.</p>

<p style="text-align: left;">makes 9 large balls</p>

<p style="text-align: left;">1 stick (1/2 cup or 4 ounces) unsalted butter at room temperature</p>
<p style="text-align: left;">1 cup plus 2 Tablespoons all purpose flour</p>
<p style="text-align: left;">1/2 teaspoon baking soda (i know we&#8217;re not baking them, it&#8217;s for flavor)</p>
<p style="text-align: left;">3/4 teaspoons salt</p>
<p style="text-align: left;">1/2 cup brown sugar</p>
<p style="text-align: left;">1/3 cup granulated sugar</p>
<p style="text-align: left;">1 teaspoon vanilla extract</p>
<p style="text-align: left;">1/3 cup Greek yogurt or applesauce or peanut butter</p>
<p style="text-align: left;">1 cup semi sweet chocolate chips</p>
<p style="text-align: left;">1/2 cup chopped walnuts (optional)</p>
<p style="text-align: left;">1 1/2 cups semi sweet chocolate chips, melted for dipping</p>
<p style="text-align: left;">In the bowl of a stand mixer fit with a paddle attachment (or with a large bowl and a wooden spoon) cream butter and sugars until light and fluffy, about three minutes in the machine.  Beat in yogurt or applesauce or peanut butter along with the vanilla extract and stir to combine.</p>
<p style="text-align: left;">Whisk together the flour, baking soda and salt.  Add all at once to the butter and sugar mixture and stir until incorporated.  Fold in chocolate chips and wanuts.</p>
<p style="text-align: left;">Scoop large spoonfuls or ice cream scoops onto a  waxed paper lined cookie sheet.  Spear each dough ball with a cute plastic fork or a popsicle stick.  Place in the freezer overnight or until frozen, at least three hours.</p>
<p style="text-align: left;">When ready to dip the balls, melt chocolate chips in a small saucepan over a low flame or in the microwave.  Remove balls from the freezer and dip into warm chocolate.  Return to the lined cookie sheet and return to the freezer to harden.  Serve cold from the freezer.</p>

<p style="text-align: left;">If blind Al Pacino were to sniff me out, I&#8217;m pretty sure I&#8217;d smell like these brownies.  This fact is both troubling and awesome.  Now I kinda want to reinact the tango scene.</p>
<p style="text-align: left;">To quell your puzzled looks, let me answer a few questions.  Yes&#8230; I just watched Scent of a Woman.  Yes&#8230; it was amazing.  Yes&#8230; I questioned my sanity.</p>
<p style="text-align: left;">I&#8217;m going to keep this short.  I have to go watch Curly Sue and learn a few card tricks.</p>

<p style="text-align: left;">Super fudgy chocolate with nuts and campfire style toasted marshmallows.  Pretty perfect to bring to a summer party.  These brownies are an instant friend maker.</p>

<p style="text-align: left;">I do have a few pro-tips when it comes to this recipe.  Can I share them with you?</p>
<p style="text-align: left;">-  So you&#8217;ve baked the brownies, loaded the warm brownies up with marshmallows, turned on your broiler and you&#8217;re ready to toast your marshmallows?  Put them in the oven and stand there.  Do.  Not.  Walk.  Away.  Your brownies will set on fire before you know it.  It&#8217;s scary when you have to pull a pan that&#8217;s on fire out of the oven.  It&#8217;s really scary.</p>
<p style="text-align: left;">-  You&#8217;re going to need a sharp knife and hot running water to cut through these brownies.  The marshmallows might have a tendency to stick to the knife.  Run the blade under hot water until it&#8217;s clean after every slice you make.  That&#8217;ll ensure that your marshmallows stay where they belong.</p>

<p style="text-align: left;">1 2/3 cup granulated sugar</p>
<p style="text-align: left;">3/4 cup cocoa powder</p>
<p style="text-align: left;">3/4 cup butter</p>
<p style="text-align: left;">2 Tablespoons strong coffee or water</p>
<p style="text-align: left;">2 large eggs</p>
<p style="text-align: left;">2 teaspoons vanilla extract</p>
<p style="text-align: left;">1 1/3 cup all-purpose flour</p>
<p style="text-align: left;">1/2 teaspoon baking powder</p>
<p style="text-align: left;">1/4 teaspoon salt</p>
<p style="text-align: left;">3/4 cup chopped walnuts</p>
<p style="text-align: left;">2 cups miniature marshmallows</p>
<p style="text-align: left;">1/4 cup milk chocolate chips (optional but yumtown)</p>
<p style="text-align: left;">Preheat oven to 350 degrees.  Grease and flour a 9 or 10-inch square baking pan.  Set aside</p>
<p style="text-align: left;">Combine butter and cocoa powder in a small bowl, and place over a pot of simmering water.  Make sure that the simmering water down not touch the bottom of the bowl.  Add the coffee or water and stir to melt the ingredients.</p>
<p style="text-align: left;">In a medium sized bowl whisk together the eggs and the sugar.  Add the vanilla extract.  When the butter and chocolate have melted and come together, slowly stir the chocolate mixture into the sugar mixture.</p>
<p style="text-align: left;">Add the flour, baking powder and salt.  Stir to combine.  Fold in the nuts.</p>
<p style="text-align: left;">Pour the batter in the pan, sprinkle with chocolate chips or chocolate chunks.  Bake for 18-25 minutes.  Remove from the oven and set the oven to broiler.  Sprinkle the top of the hot brownies with miniature marshmallows.  Once the broiler is heated, place the brownies on an upper shelf close to the broiler heat.  Stand there.  Don&#8217;t move.  The marshmallows will brown within 1 to 2 minutes.  I mean quick.   Remove from the oven and let cool to room temperature before cutting.</p>
<p style="text-align: left;">Use hot running water to clean the knife blade after each slice into the cooled brownie.  This should help the marshmallow not stick to the knife blade.</p>

<p>I&#8217;ve been struggling for the past few hours with what to tell you in conjunction with these Blackberry Pie Bars.</p>
<p>I thought maybe we could talk about how I&#8217;m still totally dragging my feet about going to my ten year high school reunion.  No&#8230; that&#8217;s been done.  Boring.</p>
<p>Maybe we could talk about how I sat around a campfire with Andrea Zuckerman&#8230; a character from that show Beverly Hills 90210, but that was actually just a dream I had last night.  Not real.</p>
<p>We could chat about the weather?  Seen any good movies lately?</p>
<p>No?  Ok&#8230; let&#8217;s not fight this.</p>
<p>Let&#8217;s get on to the bars.  They&#8217;re good.  Really good.  Good enough to not need a silly introduction.</p>

<p>Think of these bars as your escape from the land of pie baking.  Maybe you don&#8217;t need an escape, but let&#8217;s be honest&#8230; putting together a pie crust can be a pain in the rear sometimes.  Problem solved.  Just press this crust into the bottom of a pan, top it with creamy fruit filling, sprinkle it with more crust bits and you&#8217;re in business.</p>
<p>The result is pure summer blackberry goodness.  The recipe includes directions for either frozen or fresh fruit.  If you&#8217;re using frozen berries, just be sure to defrost the berries and drain the excess juices.  What about raspberries or blueberries instead of blackberries?  Those would probably work too!  Just stay away from strawberries.</p>

<p><strong>Blackberry Pie Bars with Lemon Sugar</strong></p>

<p><strong>Crust and Topping</strong></p>
<p>3 cups all-purpose flour</p>
<p>1 1/2 cups sugar</p>
<p>1/4 teaspoon salt</p>
<p>1 1/2 cups (3 sticks) chilled unsalted butter, cut into cubes</p>
<p>zest of two lemons</p>
<p><strong>Blackberry Filling</strong></p>
<p>4 large eggs</p>
<p>2 cups sugar</p>
<p>1 cup sour cream</p>
<p>3/4 cup all-purpose flour</p>
<p>pinch of salt</p>
<p>2  (16-ounce) packages frozen blackberries, defrosted and drained</p>
<p>(You can also use 6 cups of fresh blackberries, or 1 (16-ounce) package frozen blackberries and 3 cups of fresh blackberries)</p>
<p><strong>To make the crust and topping-</strong></p>
<p><strong></strong>Preheat the oven to 350 degrees F.  Grease a 9 x 13-inch backing pan with butter or cooking spray and set aside.  Zest two lemons.  Measure out the sugar onto a clean work surface.  Rub the lemon zest into the sugar with a bench scraper or the back of a spoon.  Rubbing the zest into the sugar will release oils from the zest and create a lemon scented sugar.</p>
<p>Combine lemon sugar, flour, salt and butter in an electric mixer fit with a paddle attachment.  Beat the ingredients on medium speed until the mixture looks dry and crumbly.</p>
<p>Reserve 1 1/2 cups of the crust mixture to use as the topping.  Press the remaining mixture into the bottom of the pan.  Bake the crust for 12 to 15 minutes until it is golden brown.  Let cool for 10 minutes while you make the filling.</p>
<p><strong>To make the filling-</strong></p>
<p>Whisk the eggs in a large bowl.  Add the sugar, sour cream, flour and salt.  Gently fold in the blackberries.  Spoon the mixture evenly over the crust.  You may have to distribute the blackberries evenly around.</p>
<p>Sprinkle the reserved crust mixture evenly over the filling.  Bake for 45 to 55 minutes until the top is lightly browned.  Cool for 1 hour before slicing.</p>
<p>**If you&#8217;re using frozen berries, be sure to defrost and drain the excess liquid.  Place the frozen berries on a plate in the refrigerator overnight.  They&#8217;re defrosted and ready for bar baking!</p>
