<p style="text-align: left;">I&#8217;m fairly certain that we&#8217;re approaching the time of year when it&#8217;s reasonable to drink uncanny amounts of sweetener in cold, black tea.</p>

<p style="text-align: left;">It seems only natural to add fresh mint, muddled orange and bourbon.</p>
<p style="text-align: left;">This cocktail is simple, uncomplicated, refreshing, easy to drink, and a really lovely celebration of mid-spring.</p>
<p style="text-align: left;">You know it&#8217;s going to be summer soon, right?  There are short dresses and summer heels in my future. Oh man.  I need tan lotion and tea.</p>

<p><strong>Sweet Tea Bourbon Cocktail with fresh mint and orange</strong></p>
<p><p><a href="#" onClick="window.print(); return false;" alt="Print this Recipe!" class="dco_print_button printthis">Print this Recipe!</a></p></p>
<p>6 cups water</p>
<p>4 or 5 black tea bags</p>
<p>1/4 cup agave syrup (honey will do too)</p>
<p>1/4 to 1/2 cup bourbon (depending on how strong you want your cocktail)</p>
<p>4  to 6 sliced orange rounds</p>
<p>6 sprigs fresh mint</p>
<p>lots of ice</p>
<p>Bring water to a boil.  Turn off water and add black tea bags.  Steep tea for 3 to 5 minutes.  Remove the tea bags, place the tea in a large pitcher and let rest in the refrigerator until cold.</p>
<p>Place agave, bourbon, orange slices and fresh mint in a medium bowl.  It the back of a spoon, begin to muddle (or press together) the ingredients.  The oranges will release come juice, the mint will become fragrant, and the bourbon will tickle your nose.  It&#8217;ll smell delicious.  Once the mixture is pressed together, and the flavors are extracted, add the mixture to the pitcher of tea.  Stir well.  ((Feel free to strain the orange wedges and the mint leaves before pouring into the pitcher of tea, if you&#8217;d like.))</p>
<p>Fill glasses with ice cubes.  Pour sweet, boozy tea over ice.  Enjoy.  Drink it up.</p>

<p><strong>Chai Spiced Buttermilk Pancakes</strong></p>

<p><span>2 eggs</span></p>
<p><span>2 cups flour</span></p>
<p><span>3 tablespoons sugar</span></p>
<p><span>2 teaspoons baking powder</span></p>
<p><span>1 teaspoon baking soda</span></p>
<p><span>1 teaspoon salt</span></p>
<p>3/4 teaspoon ground ginnamon</p>
<p>1/4 teaspoon ground cardamom</p>
<p>healthy pinch of ground cloves</p>
<p>scant 1/8 teaspoon ground ginger</p>
<p>1/8 teaspoon crushed black peppercorns (or a dash of freshly ground black pepper)</p>
<p><span>1 1/2 cups buttermilk</span></p>
<p><span>1/2 cup brewed black chai tea</span></p>
<p><span>4 tablespoons butter, melted and cooled</span></p>
<p><span>½ teaspoons vanilla extract</span></p>
<p>oil or cooking spray (for cooking)</p>

<p><span><strong>Step 1:</strong> In a large bowl beat eggs. Add buttermilk, chai tea, butter and vanilla and mix well. Add flour, sugar, baking powder, baking soda, spices and salt. Mix well until mostly smooth. Let batter set for a few minutes.</span></p>
<p><span><strong>Step 2:</strong> Heat griddle or pan over medium heat. Add a teaspoon of oil (I used grapeseed oil) to the pan or spray with cooking spray. You can test to see if the pan is hot enough by adding a few drops of water, when the drops start to dance its hot enough. </span></p>
<p><span><strong>Step 3:</strong> Pour 2 Tablespoons of batter onto the griddle. Cook on the first side until bubbles that form start to pop. You can also gently lift up the pancake to make sure the bottom is not overcooking, if it is the pan may be too hot and you will need to adjust the heat. Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone. Let cooked pancakes rest on a heat proof plate in a 200 degree F oven until ready to serve.  Maple syrup&#8230; that&#8217;s nice!</span></p>
