Browned Butter Cranberry Lime Muffins

How to make and photograph Browned Butter Cranberry Lime Muffins:

1.  Walk to the coffee shop around the corner for a small cup of coffee.  Drink it.

2.  Plug in your camera battery.

3.  Look for your camera’s memory card.

You can’t find it.   Ok… no problem.  Keep looking.

Still can’t find it.  Ooooookkk.  Look some more.  Maybe it’s in that spot that you’re absolutely positive you left it last.  No?  Can’t find it?

Super impatient?  I understand.  Camera phone will do.  It just will.

4. Find your phone.

5.  Arrange cranberries and lime on that white thing that you like.

6.  Try to get the kitten to move.

The kitten doesn’t want to move.  The kitten wants to play.

7.  Just let the kitten play.  Fine.  But he will have to be locked up in just a minute.

8.  Melt butter until browned and whip up some batter with fresh cranberries.

9.  Top with granulated sugar and bake.

10.  Photograph and eat warm.  Go get more coffee if necessary.

11.  Don’t share with the kitten.  Sorry kitten.

Browned Butter Cranberry Lime Muffins

makes 12 muffins

Print this Recipe!

7 Tablespoons unsalted butter

1/3 cup whole milk

1 large egg

1 large egg yolk

1 teaspoon vanilla extract

zest of 1 lime

1 1/2 cups all-purpose flour

3/4 cup sugar

1 1/2 teaspoons baking powder

3/4 teaspoon salt

1 1/2 cups fresh cranberries

1/4 cup granulated sugar for topping

Put a rack in the upper third of the oven and preheat oven to 350 degrees F.  Line muffin pan with paper or foil liners

Melt butter in a small saucepan over medium heat.  Keep an eye on the butter.  Melt and cook down the butter until little brown bits appear in the pan.  The crackling will subside and butter will begin to brown fairly quickly after that.  Keep a close eye.  Remove from heat.

Whisk milk, egg, yolk, vanilla and lime zest until combined.  Add the brown butter and whisk to combine.

Whisk together flour, sugar, baking powder and salt in a medium bowl  Add milk and butter mixture all at one and stir gently to combine.  Gently but thoroughly fold in the cranberries.

Divide the batter among muffin cups and spread evenly.

Generously sprinkle with granulated sugar.

Bake until golden and crisp and a wooden pick inserted into the center of a muffin comes out clean, about 18-20 minutes.  Cool in pan on a rack for 15 minutes then remove from the pan.  Serve warm or at room temperature.

    Oh those look tasty! And the kitty is adorable! Both my cats are “too old” to play around all cute like that anymore! I’m going to make those…. not today, but very, very soon!

    Oh Joy why do you tempt me so with your browned butter muffin goodness? I can’t wait to try these ones out. I better get myself to the gym now because if they are ANYTHING like your browned butter blueberry muffins or your browned butter lemon poppy seed muffins; I am in huge trouble!

    Baby-Kitty just wants to be where you are! You are his whole world! So, how did you know that I still have half a bag of limes I’m trying to use up? I am making these muffins today! I only have dried cranberries but I’m sure they’ll work just fine. Cranberry and lime… just sounds awesome together.

      O.k. I lied. I didn’t make them yesterday… but I made them today and my oh my! They were flat out awesome. I plumped some dried cranberries in liquid and they worked great. Thanks for another wonderful recipe!

    Interesting yummy-sounding recipe! I take hipstamatic photos if I’m making something at night because they end up looking better than what my actual camera would take.

    Kitten is sooooo precious! By the way, are those both your men in the second photo? Looks like a pair of boy feet next to the kitty. :)

    Hey Joy! This recipe looks great, and your cat is toooooo cute! Also, just wanted to let you know, I’m not sure if it’s just my computer but all of your comments have not been showing up for me. Like it will say 51 comments and show only one, but when I click “see previous comments” it will go down to 3 comments and only list 3. Not sure if it’s just something funky with my computer but wanted to let you know it’s been happening on your last 5-6 posts for me:)

      FYI – I’m experiencing the same issue Lucy is with only being able to see a handful of posts, and half the fun is reading all of the super creative posts. Oh, and I totally agree that kitty is a cutie, and I feel like my eyes have been opened to something new and wonderful – brown butter in muffins – yummm!

    Wow, brown butter in a muffin! How come I did not think of that ?! Oh, yes, because when it comes to muffin, it has to be superfast to make…. well, I’ll have to try these for sure ! I like the way you wrote this one ! :)))

    I’m not making cranberry sauce for Thanksgiving. Not because I don’t like it but because there are too many other things to eat and make. You have helped me figure out how to prevent open rebellion in my family: I will make these for breakfast. Brilliant. Wish I had a kitty to help me, though.
