While I do have a serious aversion to baked goods this week… I still seem to be eating Nutella from the jar.
It’s complicated.
Can I tell you the secret to super delicious Egg Salad?
Fresh herbs and lemon. Yes! The brightness of herbs and lemon really balance out creamy eggs and mayo. Whole grain mustard is always a good idea too.
If I had little pickle bits to add to the salad… this would be one of my favorite things ever.
Egg Salad Sandwiches
makes 4 sandwiches
8 hard boiled eggs, peeled and cut in half
heaping 1/4 cup mayonnaise
heaping teaspoon whole grain mustard
1 teaspoon finely chopped tarragon
2 teaspoons chopped flat leaf parsley
2 tablespoons finely diced shallots
2 teaspoon fresh lemon juice
salt and pepper to taste

Making egg salad is super easy. Once the eggs are hard boiled and peeled, and the herbs and shallots are chopped, dump everything into a medium bowl. Use a fork to break up the egg whites and yolks and incorporate all of the ingredients. Add more mayonnaise if you’d like it more creamy. Add salt and pepper to taste. Spoon onto good bread and enjoy. Store egg salad in the fridge for up to 4 days.

When I was about twelve, my Aunt V and I went to town, we ate at a cafeteria. We stood in a slow moving line along a wall of small chubby hole doors. Using your own fresh homegrown eggs makes the best egg salad. Our hens are finally starting to lay again as the days are getting longer.
I also like to change it up sometimes and add a can of drained tuna to the egg salad. It makes a nice combo egg salad/tuna sandwich.

I think this recipe was working on my brain overnight, because I woke up this morning and felt the strong compulsion to make homemade mayonnaise with lots of mustard for a turkey salad sandwich (it’s almost egg salad, just with meat, apple, and walnuts.)

This is similar to how I make egg salad (from my mum) – except I use Dijon mustard and have never thought to use lemon – I think grain mustard would be even better and lemon is a great idea. Nice bread too.

try 0% greek yogurt mixed with a bit of full fat mayo. Gives a more tangy flavor and much cleaner mouth feel. Healthy too!

I have a very strong aversion to mayo, but I love eggs in all forms! I make egg salad all the time using dijon mustard for creaminess. To avoid too much mustard flavor I use a touch of very clean bright tasting olive oil (good quality greek olive oils work well) to bind the salad together. People never even notice it’s mayo free!

But you make egg salad looking so “must have” that I might just make it for dinner tomorrow (tonight’s dinner is already in the making – a Kurdish pumpkin kubbeh soup – kubbeh are meat balls covered with semolina dough that cook in the soup. Totally amazing comfort food!)
Being me, I would use in the egg salad red onion instead of the shallots (I only like shallots when they are sautéed) and lose the tarragon – we’re not big on anis over here.

A note on the eggs. I noticed in the beautiful pictures that the eggs got the dreaded greenish/black ring between their yolks and whites. Here’s the deal with that (taken from “What Einstein Told His Cook 2”):
As an egg ages, some of the sulfur-containing protein in the egg white slowly decomposes, forming a small amount of evil-smelling hydrogen sulfide gas, H2S. Heat greatly accelerates this decomposition; at the temperature of boiling water, hydrogen sulfide will be produced in an egg almost two hundred times as fast as at room temperature. The gas diffuses throughout the egg, and when it reaches the yolk, which contains a small amount of iron, it reacts with the iron to form iron sulfides, FeS and Fe2S3, known to chemists as ferrous sulfide and ferric sulfide, respectively. Ferrous sulfide happens to be black-brown, while ferric sulfide is yellow-green. Et volia! A dirty-looking egg yolk. The exact color will depend on how much air is available inside the egg, because in the presence of air the blackish ferrous sulfide changes (as it is oxidized) to the greenish ferric oxide. Because older eggs contain more air, their yolks tend to turn greener.
The longer an egg is heated and the more hydrogen sulfide gas is produced, the more it migrates to the surface of the yolk, and the greener and darker the yolk becomes. If hard-“boiled” eggs are made without actually being boiled, but simply by being left in a covered pan of water below the boiling point, the slightly lower temperature of the water will make a big difference in slowing the production and diffusion of hydrogen sulfide. As soon as the eggs are done, you should stop these ugly chemical reactions dead in their tracks by cooling the eggs in cold running water.

I love a good egg salad sandwich — and this sounds very good. I agree — I’m baked out for now — I just want something that is filling but not too laden with fat, etc, etc. Tonight I made a fresh salad with chicken, hard boiled eggs, pepperoncinis and artichoke hearts over a bed of fresh spinach and mixed salad greens. Tomorrow night — a big, thick egg salad sandwich and a nice glass of cold milk to chase it down with.
