Let me be honest…

April 25, 2011 by Joy the Baker 88 Comments

iphone

I’ve been thinking all day about what I’d write tonight.

Should I write about the peacock I saw this weekend?  Should I tell you about how I was afraid of the peacock until I remembered that it is ostriches that are sometimes mean and not peacocks?  Yea… I’m smart.  Ostriches spit right?  No wait… that’s llamas.

Get me to a petting zoo.  Someone.  Please.

I’m afraid I don’t have any cookies to tell you about, or brownies to share.  I haven’t made soup, or scones, and I still have that Chicken Pot Pie in the fridge.

I’ve been busy busypants.  There are shoes all over my apartment.  Everywhere.  I think my cat might start eating them.

Instead of compiling a list of muffins I’ve already made, I just thought I’d be honest with you.

I’m working on a new project for you.  New project!!!!

My brain is everywhere.  My body is everywhere too… with my brain… but totally not with my brain.  I’m bonkers… that’s what I’m trying to tell you.

iphone

I’m working on this project with other people you might know from the Internet.  Tracy welcomed me into her home and let me shove a camera in her face.  She didn’t pretend to like it.  I didn’t really expect her to.

iphone

Whitney posed for pictures.  She’s a total natural.  Profesh.

iphone

Greg, Andy, and Nathan are super great to work with.  They feed me dinner and make me laugh.

iphone

I went all the way to Austin to work with Tsh.  Austin is full of cool people waiting to do cool things.  Makes sense.

iphone

Tsh is the most lovely of women.  She’s got the sparkle, and an amazing family.

iphone

All of this traveling…

iphone

and working…

iphone

has really worked a number on my sweet tooth.  I made this Easter candy centerpiece a few weeks back.

What on earth was I thinking!?  The kitten attacked the Peeps and I ate the rest of the candy.  I did.  I stress ate it all.  There may still be Peeps under my bed from kitten play.  I’m afraid to check.

iphone

In other news… got this foxyfox pin from a boy.  Maybe I’m obsessed.  No biggie.

Thanks for letting me be honest.  Well… halfway honest.  I still haven’t told you what I’m working on, have I?  Soon soon soon!  I’m comin’ at ya!

Yeah…peacocks are creepy. The people across the street kept some and they make horrible sounds-like a woman screaming in terror. Your first instinct was right. Pretty, but creepy.

My Dad grew up near the Cincinnati Zoo and told stories about being chased by the peacocks that are allowed to roam the zoo’s grounds. Apparently, they are really scary. I can’t bring myself to be any where near them when we go to the zoo because of his stories. Maybe it’s just that the peacocks in Cinci have to be mean? Growing up in a not so nice neighborhood?

    Hi Joy
I found your blog a few weeks ago and have been enjoying it thoroughly ever since!! I haven’t made anything yet, but everything looks so delicious I’m going to have to soon! Also, I’m really excited about your new project, even though I don’t even know what it is! :)

I think I recognize those peacocks… did you see them at Mayfield Park in Austin? I live in ATX and go to UT. It’s a wonderful city!

I love that place! Sometimes this senior-citizen art club goes there to paint the flowers. They’re pretty presh. Cute old people and pretty birds? I’m sold.

You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣

- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F. Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots. Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds. Use a slotted spot or spatula to transfer the bagels on top of the cheese. Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling. Allow to cool for 10 minutes before slicing and smearing with cream cheese.
