Spinach, today! is totally going to be the name of my new and forthcoming vegetarian zine.  I’m getting into the zine business… with spinach.  It’s super niche.  Ok… that’s not true at all.

I’ve got a whole brain full of buttery (and peanut buttery) treats I want to make in the next few weeks… but I really should clean out my crisper first.

I’ve got spinach for days… so I’m eating spinach for days.

Here’s how it’s going down the hatch:

Spinach for breakfast with this Super Spinach Smoothie.

Spinach for lunch with this spicy, gluten-free pasta dish. (recipe below)

And Barbecue Buttermilk Onion Rings with red wine for dinner.  Totally not spinach, but a girl has got to live!

Spicy Spinach Pasta

serves 2

Print this Recipe!

3 cups cooked gluten-free spiral pasta

1 heaping cup baby spinach leaves

3 tablespoons roasted and salted sunflower seeds

1/4 cup grated parmesan cheese

juice of half a lemon

olive oil

salt, coarse cracked black pepper, and red chili flakes to taste

Let’s keep this as simple as possible.  Boil and drain pasta.  While pasta is still hot, toss with spinach, sunflower seeds, cheese, lemon juice, a healthy dose of good olive oil, salt, and two types of pepper.  Toss until spinach is just slightly wilted from the heat of the pasta.  Divide between two bowls, sprinkle with a bit more cheese and serve.

    hey i am on a spinach kick too! tonight i made spinach soup, and for breakfast it’s spinach smoothies. i’m thinking about upgrading to kale next week. but first i want to make this pasta! also looking forward to your buttery treats…:)

    This kind of sounds like pasta with a deconstructed pesto of spinach instead of basil and sunflower seeds instead of pine nuts. In other words, yum!

    perfect pasta for a quick lunch, going to try this as soon as i can get my hands on some good parmesan!

    I’ve been making that smoothie for the past week minus the green powder, it is so yummy and a great way to get your dose of fiber!

    I just had a serious chortle at super niche spinach zine. Amazing.
    Your anecdotes seriously do make me feel as though you are a kin spirit. And then we get into the food and I just know we are birds of the same feather.

    For the gluten – free birds out there. Chana – chick pea – garbanzo (whatever you may call it) makes AMAZING sexy outrageous (is this a madonna song?) onion rings. Whud up. That’s what.

    Seriously, if you came out with a veggie-zine I would read it. No joke. I would totally subscribe. As long as you did some vegan recipes, too. Which you would, cause you’re awesome. Ok, I’ve officially gushed for far too long about an imaginary magazine. Carry on.
