When You Comment on My Blog

It’s important to speak the things that remain unspoken… or rather, type the things that remain untyped.

When you comment on my blog, I see you and I appreciate you.  I know it takes precious minutes out of your important day to scroll down the page, type in your information, and leave a message for me.  I know that you don’t have to do this at all.  I know that you could easily click over to Smitten Kitchen (which would be awesome), that you could click the other tab in your browser and continue watching Bachelor Pad on Hulu (because that’s totally what I would do), that you could go make yourself another cup of coffee (duh).  Instead you take the time to say hello to me.  That makes you amazing.

I see you, and I appreciate you.  I read your comments from my phone first thing in the morning.  I read your comments when I’m waiting in line at the grocery.  When I’m at a restaurant and my companion has run to the restroom… I’m reading your comments.  Truth is… I love you in a weird way.  I think we’re friends.    Other truth is… I try my hardest to respond to all of your questions and concerns in the comment section, and I’m not always the best at it.  Just as a tip:  I’m pretty stellar at responding to people on Twitter.  That’s true.  Despite my flaws, I am indebted to you.

I’m here to graciously offer my gratitude.  I really do appreciate that you come here and take the time to let me know that you are, in fact, here.  It really means so much to me.  Without your comments… I’m kinda just a weird girl that makes too many cookies and talks to her cat.  Thank you for making me more than that (although I’d be totally fine with being a cookie-maker-cat-speaker).  I appreciate you, and I don’t take your presence for granted.  I find you to be a blessing in my life.

    I ‘m relating to you. I get you! I’m sure I’d love you in the neighborhood too because you would put occasional treats at my door or just stop in.. Why not a “neighbor” blogger I say . Sweet! I’m soon to be 70 yrs. young,

    I’m a long time follower, sporadic commenter (oh man, you are going to have to spend all weekend reading through these comments). It’s funny how I feel that ‘friendship’ with you even though I’ve only met you once at a book signing(is that weird?). Maybe its because we share similar thoughts/interests, but I feel like your stories about your life and your podcasts are the things that really make me feel like your friend. I’m not really, but I like the feeling of having another person out there that if I ran into, would easily become my real life friend.

    Hey Joy,

    Just wanted to say a really big THANK YOU for this beautiful little corner of the internet you’ve created. You were one of the first blogs that led me down the path of food-blog-addiction some 3 years ago and I am forever in your debt (as are those around me that get to eat the food I make!).

    I have your cookbook and it is perfectly loved up with spots of flour and batter and scribbled side notes and ‘reviews’ of each piece. My favourite recipe has been the humble cream cheese pound cake – when I made it for my Granny one day she shared it with her friend (70+ years old) who later told me that it brought to mind the pound cake her mother used to make and she thanked me for it. That is one of my most treasured moments of baking and it makes me happy I get to share that with you who made that little moment possible!

    Hi Joy……………I love your blog and ordered your book on amazon yesterday so can sit down and choose recipes with my 8 year old baking fiend rather than read recipes on the laptop cos that’s what I always did with my mum or Grandma………………..can’t wait for it to come all the way to Scotland!! Your blog always reminds me to make some time for my wee girl or before long she won’t want to make time for me…..wish me luck as she is a much better baker than me…….thanks Grandma ……………………from a still excited Ann x

    I love your honesty and humility. I appreciate your blog because you are not just pushing some product or bragging about your fabulous swaggie life. Not that your life isn’t that but you let us know you are one of us and not the chosen one that has a popular blog because you pose wih your new outfit everyday.
    You are funny and smart. I am so happy that I found your blog. I hop one day we can swap recipes and have coffee or something.

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
