Sweet Corn Pancakes

I’m looking out for your weekend.  Also… let’s be real.  I’m looking out for my weekend, too.

I don’t know about you, but I need this weekend to feel extra different from the work week.  Like… forever different.  I want to cross at least four things off my Guilty Pleasure List.   Can we do this together?  Can we sleep until we’re boooored of sleeping?  Can we eat Cinnamon Sugar Toast at any time of the day or night?  Can we do that weird thing where we sit on the couch reading food magazines while listening to old Jewel songs and eating cold meatballs?  Is that one just my guilty pleasure…?  Jewel used to live in a van in Alaska, right!?  Nevermind…

I’m sure we can all agree to enjoy late-morning homemade pancakes.  The rest of our weekend guilty pleasures we should execute in private.  Things got a little weird with the meatballs (or was it Jewel that made things weird?).

Ps.  These pancakes are made all the more special and weekend-y with the addition of sweet summer corn.  You in?  (Heck yes you are!)

It’s almost possible to make pancakes on Saturday morning before your morning cup of coffee.  Almost.  Make a pot.  Enjoy it… then start measuring.

Also…  I want this wooden spoon to forever be this clean.  Impossible.  No biggie.

Since it’s summer, adding sweet corn is totally the right move!  I charred my corn over the gas burner for extra flair.

Aaahh, weekend.  I welcome you with open arms.  I’ve got the Jewel queued up.  Don’t act like you don’t know every single word to Foolish Games.

This pancake recipe was inspired the latest addition to my growing cookbook collection:  Pancakes by Adrianna Adarme.  You know Adrianna!  She’s the happy face and kitchen wizard at A Cozy Kitchen.  She has a thing for pancakes so clearly she’s a friend of mine.  I wonder if Adrianna likes Jewel.  Yea… I’m still not letting this go.

Sweet Corn Pancakes

makes 10 to 12 small pancakes

adapted from Pancakes

Print this Recipe!

1 ear sweet corn

1 cup all-purpose flour

1/4 cup cornmeal

2 tablespoons granulated sugar

2 teaspoons baking powder

1/8 teaspoon salt

1 cup whole milk

1 large egg

1 teaspoon pure vanilla extract

butter or vegetable oil for cooking

First char the corn by removing the husks from the ear of corn and toasting the ear directly over a low gas flame.  Rotate the corn until each side is charred and toasted.  Remove from the flame and allow to cool until cool enough to touch.  Once cool enough, cut the corn from the ear and place in a small bowl.

In a medium bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.

In a small bowl, whisk together milk, egg, and vanilla extract.

Add the wet ingredients all at once to the dry ingredients and mix until just combined.  The batter will have small lumps.  That’s great!  Fold in the corn kernels.

Place a rack in the center of the oven and preheat oven to 175 degrees F.  Place a clean kitchen towel on an oven-safe plate.  Set aside.

Place a skillet over medium-low heat and melt about 1 teaspoon butter or vegetable oil.  Use a 1/4 cup measuring cup and spoon a scant 1/4-cup into the hot skillet.  Cook for 2 to 3 minutes, or until small bubbles form on the surface of the pancakes.  Flip and cook until golden on both sides.

Transfer cooked pancakes to prepared plate and cover with towel.  Place in the oven to keep warm until all of the pancakes are cooked and ready to serve.  Serve warm with pure maple syrup.

    When I was a junior in high school I got placed in Drama class. Being extremely shy this class was difficult. One of our assignments was to lip sync to a song and perform to it. The week they had to perform I was out of the country. I was dancing on the insides thinking I got away with not having to do the assignment. Alanna 1, Drama 0. The day I came back to school from the trip the teacher approached me and told me that she hoped that I would be ready to perform the following day. Thinking that I had gotten away with not doing this assignment I had no song planned. The pit of my stomach dropped at the nervousness of having to perform and the fact I had no song. I quickly ransacked my mind and realized there is one song I know by heart and having been belting it out ever since I borrowed the cd from the library in ’97….Foolish Games by Jewel. I ended up owning that performance using crumpled up tissue (unused), a piano bench as a bed, blanket, pillow, sweats, and a comb to tease hair into a mess. A+. Again, Alanna 1, Drama 0. Thank you, Jewel.

    You are taking it *back* with Jewel. For realz.

    I am digging this sweet charred corn action in the pancake. If you were going to top it with anything, what would you top it with (aside from maple syrup). I’m really into crazy fun toppings on pancakes and waffles right now (outside of the ubiquitous slab of butter, mound of whipped cream, or sliced strawberries – boring, overdone, and makes it feel like I’m eating at Denny’s). I’d love to hear your suggestions!

    I enjoy reading Adrianna Adarme recipes, very delicious pancakes, at least I`m sure this is their taste, I have never tried this recipe but never is too late…

    i would gladly partake in both the listening to foolish games and the eating of cold meatballs. call me strange, but that sounds pretty awesome to me. a glass of wine might also be necessary.

    These are a must very soon! I love pancakes on the weekends, but the boy doesn’t like having sweet stuff for breakfast. I bet he would eat these, for sure! Love the roasted corn too- great recipe!

    I’ve once tried to bake cornbread with corn inside but the kernel texture turned out leathery and terrible so I’ve been reluctant to try again. I did use frozen instead of fresh, however. Did you notice this texture at all in your pancakes? Is fresh corn the secret?

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣

2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
