Cinnamon Kettle Corn

Can I be honest? This week was a bit of a doozy. It kicked my ass. I flailed back. It wasn’t cute.

In response, I made us popcorn.  It’s sweet and spiced, and makes a totally acceptable dinner.  Add wine and a few episodes of Boardwalk Empire and I suspect we’ll all be back on our feet in no time.

Oh! I feel like we could use some mental popcorn too. Here are so links to feed your brain while you eat popcorn.  Also, if you eat popcorn by placing your entire face in the popcorn bowl and eat whatever sticks to you tongue… you’re a friend of mine.

The Internet is forever new. I love a new site called PUNCH. We are what we drink, so let’s learn more! The cocktail recipe section is gorgeous and ample.  I also totally enjoy these pieces about Kentucky Moonshine.

I’m going to see the movie 12 Years A Slave as soon as I can muster up the energy to be destroyed.  This review by David Simon has some really thoughtful words in it.  I’m in.

Big Mother Is Watching You is an interesting article about how you can use technology to spy on your kids… but you totally shouldn’t.  If my parents had the ability to spy on me in the mid-90’s… I would have had a lot less fun in AOL chatrooms.  #imnotwrong

Ooooh how we are spied on.  On the press, the leaks, and the really bold work of Edward Snowden.  It’s crazy.

cinnamon sugar popcorn

Cinnamon Kettle Corn

makes about 6 cups

Print this Recipe!

3 tablespoons coconut oil

1/3 cup corn kernels

2 tablespoons granulated sugar

1/4 teaspoon ground cinnamon

sea salt to taste

In a medium saucepan with a tight-fitting lid, place the coconut oil.  Place over medium heat and allow to melt.  Add the corn kernels and sprinkle with granulated sugar.  Place the lid over the pan, keeping the lid slightly ajar.  Allow popcorn to begin popping.  Once or twice, cover the pan completely, and use pot holders to lift the pan and shake it.  When popping slows, remove from heat and sprinkle in cinnamon and sea salt to taste.  Shake into a bowl and serve immediately.

    Sorry that you had a rubbish week. Hope that this one is better… Nothing like popcorn for comfort food, though…
    Am completely hooked on Game of Thrones at the moment (literally only just discovered it – must have been previously living under a rock) – so will make this and nibble on it in front of the tv. Heaven.

    Sorry you had a rough week. Ugh! Hopefully this one gets better!

    I love popcorn, cinnamon, and coconut oil. It’s actually a near-daily snack for me! Sometimes I sprinkle on some nutritional yeast too. Pinned!
