Can I be honest? This week was a bit of a doozy. It kicked my ass. I flailed back. It wasn’t cute.

In response, I made us popcorn.  It’s sweet and spiced, and makes a totally acceptable dinner.  Add wine and a few episodes of Boardwalk Empire and I suspect we’ll all be back on our feet in no time.

Oh! I feel like we could use some mental popcorn too. Here are so links to feed your brain while you eat popcorn.  Also, if you eat popcorn by placing your entire face in the popcorn bowl and eat whatever sticks to you tongue… you’re a friend of mine.

The Internet is forever new. I love a new site called PUNCH. We are what we drink, so let’s learn more! The cocktail recipe section is gorgeous and ample.  I also totally enjoy these pieces about Kentucky Moonshine.

I’m going to see the movie 12 Years A Slave as soon as I can muster up the energy to be destroyed.  This review by David Simon has some really thoughtful words in it.  I’m in.

Big Mother Is Watching You is an interesting article about how you can use technology to spy on your kids… but you totally shouldn’t.  If my parents had the ability to spy on me in the mid-90’s… I would have had a lot less fun in AOL chatrooms.  #imnotwrong

Ooooh how we are spied on.  On the press, the leaks, and the really bold work of Edward Snowden.  It’s crazy.

cinnamon sugar popcorn

Cinnamon Kettle Corn

makes about 6 cups

Print this Recipe!

3 tablespoons coconut oil

1/3 cup corn kernels

2 tablespoons granulated sugar

1/4 teaspoon ground cinnamon

sea salt to taste

In a medium saucepan with a tight-fitting lid, place the coconut oil.  Place over medium heat and allow to melt.  Add the corn kernels and sprinkle with granulated sugar.  Place the lid over the pan, keeping the lid slightly ajar.  Allow popcorn to begin popping.  Once or twice, cover the pan completely, and use pot holders to lift the pan and shake it.  When popping slows, remove from heat and sprinkle in cinnamon and sea salt to taste.  Shake into a bowl and serve immediately.

    I made the cinnamon kettle corn. Learned that “sprinkle the sugar” is important, i.e. do not pour it over the kernels and hope it coats well. It also does not require much salt or it masks the subtle sugar taste, just like real kettle corn’s flavor has a hint of salt at the back not front-and-center.

    Very nice! I just made this for my family as an afternoon snack. Love it. Flavors blend nicely together. We are huge homemade popcorn fans.

    Fantastic! I made it with my housemates for an after dinner snack. However, it wasn’t nice when I burnt my finger on the hot sugar. But still amazing!

    Thanks for this recipe. As I prefer to pop my popcorn on the stove top, I am constantly looking for recipes that offer different flavor profiles. While I would not substitute this snack for dinner, but I would use it for dessert.

    As per usual, this recipe worked well for me. However, I would like to offer a word of warning: stand away from the open section of the lid. I didn’t and was popped with some oil.

    i love the sounds of this recipe. kettle corn is a favorite of mine and adding cinnamon just takes it to a whole new level. also, i am a fan of eating popcorn for dinner. with wine. and good tv. you’re totally reading my mail!
    ps. i saw ’12 years a slave’ on the weekend. destroyed doesn’t even touch how i felt through the entire movie and for hours after. take a big box of kleenex.

    I love that you popped this popcorn with coconut oil- it is the only way! Smell ya later, vegetable oil! Coconut oil and popcorn is where it’s at.

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
