let it be sunday

[I]’m back in Los Angeles for five minutes.  Well… one day and five minutes.  I came to celebrate my mom’s birthday.  I came to eat this cheese burger, play at the January beach, and watch the waves.  

It’s funny being back in the house I grew up in with my parents and sister.  Reunion usually means a lot of yelling across the house… just like old times.  I’m also sleeping on the trundle bed of my youth.  Go ahead and be jealous.  That’s understandable. Suffice it to say, it feels REALLY good to be home for these few minutes.  Really quite nice. 

Here’s the world, on the Internet and in your Sunday.  

•  Still the worst.  Still with the hate and terror. Why ISIS murdered Kenji Goto. And, in all the madness this past week,  Jordanian airstrikes may have killed the ISIS’s last remaining American hostage. 

•  How to grieve when you lose an Interneto friend.  There’s no closure in this weird world of living and dying and twitter.  

•  Weekend Read:  The Forgotten History of Bruce Jenner.  Read this, think about the Kardashians, build a rocket ship, move to the moon, build a new Kardashian-free life.  Good luck.   

•  Captain’s Log(s).  Two friends, all up on a boat.  Making friends and enemies. 

•  I’ve had this tab open in my browser for weeks.  This ring is so so pretty!  Can I borrow $855?  Cool, thanks. 

•  Do you read the Grub Street Diet column from New York Magazine?  It’s a peek inside the lives and diets of awesome people.  The Kerry Diamond edition is a favorite!

•  If you don’t have anything nice to say, SAY IT IN ALL CAPS.  Writer Lindy West confronts one of her worst internet trolls… and he apologizes because he’s a human with feelings.  INSANE!   

•  We get another book from Harper Lee.  Yea we do!  

•  Get the know the most influential women in food.  Go on, ladies. Get it. 

•  Why cats love boxes.  Because they’re passive-aggressive and anti-social.  Cool, me too! 

•  Butternut Squash and Goat Cheese Dip?  Not mad at it.  

•  Valentine’s Day.  This is a thing we have to recognize, right? Sigh.  How about Lemon Raspberry Pie Crust Hearts?  Or better yet, how about we just have a donut and call it a day.  

 •  ThinkPiece:  I regret to inform you that you simple aren’t doing your best.  

And with that, I leave you to Sunday.  I love you, bye-bye.

    Um, yeah, I’ll go ahead and be jealous … of sitting on a warm beach with a burger and fries. February is not being kind to Western NY.

    Love your links this week! The podcast got me through a monotonous day at work, the ring is stunning, Lindy West is an inspiration, Harper Lee, and not doing my best. Pretty much sums up my life.

    From a Los Angeles girl and California native, welcome home Joy. Where else but in Southern California can one enjoy a cheeseburger on the beach in the middle of winter. I love LA! Thanks for sharing your Sunday finds, I always find them interesting and provocative.

    Going back home to visit is so wonderful and relaxing to me. There is nothing like going to visit the parents and have them love on ya! BTW, listened to the latest podcast yesterday….loved it!!!

    I figure since Bruce Jenner lived with all those women, hormones just rubbed off. Whatever the man does I hope he is happy.
    Now why do cats love boxes of any size it just makes them happy and secure. Plus they really want the attention, and it is so nice to see women still in food and of course my favorite JULIA CHILD you guessed it I used caps. Hey have a great week Joy keep on baking. I am going back to making cupcakes and since I am gluten sensitive I will have to give all them away. My creative side is screaming I NEED TO BAKE. So cupcakes it is. Paulette

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
