Happy weekend-ing!  I’m think I have what can only be described as a wind-blown sunburn.  You’d think after 34 years I’d know the limitations of my pale, un-yielding, un-tanning skin.

I hope this finds you living your summer days well.  With ice-cold drinks, outdoor picnics, lazy beach days, and enough sunscreen to know better.  I’m crossing things off the Summer Bucket List with a smile on my face.  This Amos Lee concert at the Hollywood Bowl with happy parents and picnic tables was ultra dreamy!

I think of you often.  Most sincerely I do.  I hope your weekend in filled with love and happiness.

Here’s what the Internet has for us this week:

•  NASA’s 3 Billion Mile Journey to Pluto, Explained.  My brain breaks when I read this.

•  Schtoon: (verb) to steal someone’s chair when they get up to do something.  “That cat schtooned my chair when I got up to do something.”  I LOVE this:  The Made-Up Words Project

•  Cheeseburger Ethics:  do professional ethicists behave better than laypeople and WHAT, WHY NOT!?

•  I think that if Harper Lee had wanted to publish Go Set A Watchman SHE WOULD HAVE!  There… I said it.

•  Some dude straight RAN THE APPALACHIAN TRAIL like a boss.

•  The man who makes today’s comedy: Judd Apatow for Rolling Stone.  

•  Forever likable and forever hard-working Dave Grohl.

•  I know it’s just whipping already delicious cheese into a flurry… but it’s still really really delicious.  Add olive oil, lemon, and almost too much black pepper for best results:  Whipped Ricotta with olive oil

•  Between the new dress I have to buy, the plane ticket to your lovely… so lovely, beach destination wedding, and the gift because you registered for three thousand dollar bedsheets WHERE!?… I’d love to attend your wedding but I can’t afford it.

•  A memoir about what happens when you get rid of all your stuff. It’s extreme life-styling.  I really like the idea of asking “does this thing add value to my life” to every item in my house?  TronCat  gets wide-eyed and nervous when I bat that question around.

•  They’ve gone and done it… they’ve ruined kale.

•  The Chef Who Saved My Life.  Jacques Pepin really is the one and only.

•  I thought hard about making a Summer reading list for us, then realized we should all just read Station Eleven by Emily St. John Mandel and call it a day.  It’s so good.    Stop everything and read it, thanks.

•  Cupcakes and Cashmere:  15 Best Things I Ever Ate.  I need to make a list like this, or just go eat a bunch of waffles… which is what I really want to do.

•  Lemon Chia Chews.  Healthful, summer-travel-friendly, and otherwise delicious!

•  These copper and black knives are super chic.

•  What Does $100 Buy You In Different Cities Across The US? I mean… chill out California.  

•  Stand clear of the closing doors, please:  The Most Recognizable Voice In NYC.  I love this glimpse into a part of the world I take for granted.

•  We like pink and red candy.  That’s just the way of our world.  “I’ll take the yellow Gummy Bears….” said no one ever.

    I am with Amy. My favorites are always the yellow, orange, and green candies. Can’t stand red (if it’s cherry). any berry and watermelon, I’ll take. :)

    Dave Grohl is my life. You know that questions “if you could have dinner with any celebrity, who would you choose?” well, it’s Dave. Fer sure. He is everything. I’ll be seeing them at the Austin City Limits Music Festival in October for the FIRST TIME and if I meet him there, I might die. Or high five him. either way…

    I just got a gift certificate for my birthday and am off to get Station Eleven asap! Also listened to The Martian on audio recently and loved it. Totally agree about Harper Lee and Jacques Pepin.

    Will you guys ever record another podcast? Pretty please?

    So…. I liked Station Eleven, but the novel of the summer is Girl with All the Gifts. Seriously, if we’re going to stop everything we’re doing to read one book, this is the book. The end is hauntingly beautiful.

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
