Mediterranean Pull Apart Bread

What I was trying to do was solve a problem. 

It’s December, you can guess the problem.  The… I Have To Go To A Holiday Thing With An Edible Thing Problem.  But what edible thing because honestly it’s hard to manage a festive dress, host gift wrapped and ready, having gas in the car, lipstick in the purse, brain in the head, car keys not lost because I accidentally left them in refrigerator (WHY / HOW!?) being considerately tardy and not rudely late and… those of you that manage all of the festivities with children… God bless you, amen.  

This bread is to solve that sort of problem.  The problem of you having to bring an edible thing to a holiday thing.  This bread solves a lot of other problems like, holiday party anxiety… because you can just shove it in your mouth until the social panics dissipate.  

So here we are.  Adult lives and problems solved.  There’s little that warm bread and melty cheese can’t do.  I’m testing their limits every day. 

Now… if you are bringing this bread to a holiday party… be the person that asks to reheat it in the oven for just a few minutes before serving.  Efforts will be rewarded and cheese will be extra stringy delicious. Ok.  We’re good we’re good. 

Mediterranean Pull Apart Bread

Here’s what we’re looking at:  

A round loaf of crusty, fluffy, fresh bread.  Lots of adjectives, but we’re talking about bread and it’s best to get it all right. 

Coarsely chopped artichoke hearts (the pickled canned kind), kalamata olives, and sun-dried tomatoes.  

Sea salt, coarse black pepper, and dried oregano.  

Crumbled feta and fresh basil for after baking.  

Here’s how!

Slice the loaf vertically and horizontally creating cubes and being sure to keep the bottom of the loaf attached.

Now let’s get to it… with clean hands because we’re going to do some shoving (a technical culinary term for getting all this goodness into this loaf).

After the oil is drizzled over and into the loaf, Monterey Jack cheese is shoved into the pieces.

Artichoke hearts and olives, also shoved into the loaf trying our best to get good bits into every bite.

Sun dried tomatoes too.  

If your sun-dried tomatoes are super dry, rehydrate them in a bit of boiled water before dicing and shoving.

Salt + pepper + oregano for flavors more flavors.

Bake until melted, bubbling, warm, and otherwise irresistible.  You’ll know when that happens.

Mediterranean Pull Apart Bread

Ingredients

Scale
  • 1 round, fluffy, and crusty loaf of bread
  • 2 tablespoons olive oil
  • 2 cups Monterey Jack cheese
  • 1 cup coarsely chopped canned artichoke hearts
  • 1/2 cup coarsely chopped kalamata olives
  • 1/2 cup coarsely chopped sun-dried tomatoes
  • coarse sea salt, fresh cracked black pepper, dried oregano
  • 1/2 cup crumbled feta cheese
  • fresh basil leaves

Instructions

  1. Place a rack in the center of the oven and preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper and set aside.
  2. First slice the loaf of bread. Using a serrated knife, slice into the loaf, creating 1-inch thick vertical strips, but making sure to leave the bottom of the bread attached. In other words, don’t slice all the way through the loaf and create slices. You want to keep the bread loaf in tact. After you’ve cut vertical strips into the loaf, cut horizontal strips into the loaf, creating a bunch of bread cubes all attached at the bottom of the loaf.
  3. Place on the prepared baking sheet and drizzle with olive oil, separating some of the cubes a bit to get the olive oil into some of the bread pieces.
  4. Next work with the Monterey Jack cheese. Separate some of the bread pieces, and shove the cheese in there. Try to get cheese into every bit of the loaf. Don’t be shy.
  5. Do the same separating and shoving technique with the artichoke heart pieces, the kalamata olives, and the tomato pieces. Sprinkle with salt, pepper, and dried oregano.
  6. Bake until even more golden brown, and until the cheese has meted and the bread look irresistible, about 12 to 14 minutes.
  7. Remove from the oven and place on a platter. Sprinkle with feta cheese and fresh basil. Serve warm. Really… just get out of the way because people will tackle you to get at the loaf. It’s that good.

    Just recently I saw something similar to this on a cooking show on tv but this pull apart looks so much better. I’m going to make it to take to a gathering in a couple of days! Looks delicious.

    Everything turned out great but my cheese didn’t melt in the middle and I couldn’t keep it in the oven any longer because the top of the bread was burning… so people ended up pulling out slices of bread with no cheesy goodness on them. Maybe it was the shredded cheese I purchased from Trader Joes?

      Did you use Monterey Jack cheese? Some cheese doesn’t have as much fat and can melt funny.

      This bread looks delicious. Used to make this with melted garlic butter, shredded mozzarella and sliced scallions — also very yummy. I used to cut & stuff the bread, and wrap it in foil before popping it in the oven. After about 30 minutes, unwrap and give it another 10-15 minutes — this should warm it all the way through and make cheese melty and delicious.

    This is gorgeous! I have an outstanding Tuesday afternoon day date with some of my girlfriends, while the bulk of our babies are at school, to watch Hallmark Christmas movies and eat treats. This is so going on the to bring list! We always end up with lots of sweet and not enough savory carbs!

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
