Hello sweet friends and happy Sunday!

I hope your weekend feels long on quality time.

This weekend I’m hosting in New Orleans – it’s the first ever BakeAway – a baking, food styling, new-friend-making workshop I’m hosting at The Bakehouse.  It has been incredible so far!  We’re doing yoga, we’re drinking champagne, we’re experimenting with new beignet recipes, I’m wearing bold prints, we’re exploring New Orleans… it’s absolutely too much fun and I’m already so thankful for the sweet friendships I  see forming around me.  And we have another full BakeAway day ahead of us!

Anyway… that’s what’s keeping me very busy.  And Monday I’m looking forward to a nap, or at least a good long sit.

Here’s the offering this week.  I hope you find something you didn’t know you needed:

•  I’m currently listening to President Obama’s eulogy for the late John McCain.  It’s as thoughtful and binding as we’d hope.  (NBC News)

    This is why I eat dinner so late! I simply cannot with anything after dinnertime. But if I’m going to work, hang out with my kid, maybe see a friend, work out, tidy, etc., I have to do it all before dinner or it won’t get done. So I eat at 9 p.m. I don’t know how I will adjust to having earlier, family dinnertime once the kid is no longer a baby who eats three bites of food and flings the rest.

    Hi, thank you very much for the eater’s guide since I am coming visit at the end of September. Also love the article about the 10 questions to ask during diner. I was hoping that you will do a workshop during my visit, but I don’t see any in your calendar. If you add an activity during september 25 to 29, I will try to attend. Nicole

    I once took a weekend cruise out of Tamps, Fl….the ‘lounge entertainer’ was none other than Tim Jones…Tom’s cousin! When he began to sing ‘Delilah’…I had to quickly leave the lounge because I was laughing so hard! The Captain saw me leaving and followed me out with a bottle of champagne & two glasses! He was accompanied by several Welshmen who were on the ship as repair engineers. They were from the same small town in Wales as Tom & Tim…and described how both of them were ‘Real Wankers’!!
    I’ve never laughed so hard in my life!!
    I dated one of those Welshmen for 6 months, while they were stationed in Tampa…Ahhh, Memories!!

    Jogging: get a dog and move to Montana. Grizzly bears, but they rarely kill their victims.

    Don’t think too much about life after dinnertime. I read that as don’t think too much about that time period after dinnertime, to which I heartily agree. If I want to Netflix on the couch for two hours, I really don’t need to contemplate the meaning of that.

    That cute sweatshirt? Yes! But why is it split up the sides?? While jogging in Montana that would be damned drafty.

    As always Joy, enlightening reading. Hope your workshop is a big hit (hard to imagine otherwise). Happiness to you.

    You’re doing all of my favorite things in my favorite city. I hope you’re having the time of your life! I’ll be at a park dancing to house music and drinking punch! I really love the 10 questions idea, specially “Who has been kindest to you” because I hope the answer will always start with them! *cheers*

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
