Let It Be Sunday, 189!

Hello sweet friends.  

Welcome to your weekend!  I realize I did y’all dirty this week by mentioning that I adopted a dog into my tiny family of me and Tron without sharing a picture of our sweet girl.  Her name is Maggie and she’s a sweet little mama pup.  We’re learning how to be in the world together and it’s pretty great.  Also, it turns out that it takes a village to take proper care of a dog, so my friend and neighbor Nicole and I share Maggie and really… it’s super progressive and  so helpful.  

This week has been a lot future work – working on our fall schedule at The Bakehouse (check it out!) and somehow already thinking about Thanksgiving and Christmas food.  It’s still hot out fyi… barely a hint of sweater in sight.  

In what is a surprise to me and just about everyone around me, I’m taking a spontaneous (very) trip to Greece this week.  I’ll call it a belated summer vacation.  I’ll call it a testament to YES… because if someone asks you if you want to go to Greece the answer is 100% YES LET’S LOOK AT FLIGHTS.  So off I go.  If you’d like to follow along with the adventures, I’ll add updates to the the Instagram Stories.  Just taking big bites out of life.   

Here’s the offering this week, some tough stuff, some awkward pieces, some strong opinions.  I appreciate that you’re here. It really means to much to me.  Take what you need below: 

•  I appreciate this raw perspective of this week’s tough anniversary:  The Real Lesson of Sept. 11. ( New York Times)

•  Let’s keep our thoughts with the Carolinas: Florence Will Drop An Inconceivable Amount of Water.  This week on The Daily podcast: a two part series reminding us of the trauma and tragedy of Hurricane Harvey in Houston last year.

•  This week I made these Vanilla Bean Sprinkle Cookies– taking it all the way back to my second cookbook, Homemade Decadence.  Happy colors and sweet nostalgia.  I used these sprinkles – my absolute favorite confetti.  (Joy the Baker and Amazon)

•  Jon’s Sheet Pan Turkey Caprese Meatballs seem like the perfect weeknight meal.  Very into this as an alternative to eating scrambled eggs over the kitchen sink. (The Candid Appetite)

•  Carry this little nugget to trivia night:  How Did ‘OK’ Become The Most Popular Word In The World. (Kottke)

•  I’m using this shoulder bag for my spontaneous trip to Greece this week organized with packing cubes. (Everlane and Target)

    What a sweet pup Maggie is! I love that you and your neighbor are sharing custody of her. Even when we have limitations, it reminds me to “choose the bigger life” as Gretchen Rubin would say. Dogs bring a lot of richness to our lives. Happy for you!

    Thank you oh thank you for the sweet Maggie pic!! Made my whole day ??

    I went to Greece as a teenager and it was just magical. The charming boy whose only English consisted of “you, face, angel!!” And one other word, a hope which the previously mentioned compliment didn’t actually get him. Ahem.
    The light was so bright and clear, I had never experienced anything like it, and the blue of the ocean, and warm Aegean water……I hope you have a wonderful time, and thank you for reminding me of the magic!

    Have a blast in Greece! I spent a month there in grad school and still miss it. If you stumble across a dish that’s basically just chickpeas in some delicious butter/broth/mysterious savory something, served in a basement restaurant in Athens, please do share. I’ve been trying to recreate it for years with no luck!
    Also eat the hell out of the yogurt because it’s the real deal. Yamas! (That’s Greek for “cheers!”.)

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
