Hello friends.  

I’m back. We’re back.  We’re in it!  Summer snuck right up at me the last few weeks.  I spent a few good days in Toronto recently and wow TORONTO – you’re wonderful. Such nice people.  Such good food.  Such chic restaurants.  I’m smitten.    

I’ve got a boatload of Joy the Baker plans coming up the next few months which means more travel – I’m packing up to come see you and bake together.  It’s a hair-brained Bakehouse idea that’s really come to life, see the eighth link below.  

This week I’m testing a dozen or so summer recipes, light and fresh, that will make their way to this space over the next few weeks.  All things I want to enjoy by a pool.  Incidentally I called a meeting with my contractor next week where he’ll likely tell me that I’m stone-cold crazy for wanting to put a pool in my modest backyard.  Im content with the pool vibe snacks.  That’s much more reasonable. A girl can dream.

How are your summer plans taking shape?  Do you have your summer bucket list yet?  Are you hydrating with a passion?  Are you wearing a wide brimmed hat?

•  American Routes is one of my favorite radio shows.  We lost Dr John last week and these two hours of music and interviews are really something.  (American Routes) 

• The newest issue of Cherry Bombe is out and it’s right up our alley: The Baker’s Dozen.  

•  If you follow The Bakehouse on Instagram you know I’m taking my New Orleans baking workshops on the road this summer!  Classes will be along the west coast, in Texas, and Oklahoma.  Lots have sold out but we’ll be adding a few more dates as June continues!  Thank you to all of you who have bought tickets!  I can’t wait to see you this summer!  The Bakehouse Summer Tour.  (The Bakehouse Nola) 

•  It is not an accident I bought eggplant at the farmer’s market:  I Can’t Stop Making Ina Garten’s Rule-Breaking Eggplant Parm. (The Kitchn) 

•  It’s so simple.  It’s everyday cake:  Lemon Pound Cake with Lemon Poppy Seed Buttercream. (Joy the Baker)

•  I wear two eye rings everyday and many of you ask about them on Instagram.  They’re Marta Pia rings and I like them quite a lot!  (Marta Pia)

    That lemon cake remains one of my favorites since I baked it after your first post. It’s in my recipe box and on regular rotation… although now that I’m thinking about it, it’s been a minute since I last made it. Think I know what’s happening this weekend!!

    Your Bakehouse Summer Tour includes August 10 at Farmgirl Flowers in San Francisco.
    Will this take place in their 16th St. Warehouse? Will this be a cooking class?
    I would love to attend…maybe with some friends. Can you please send particulars?

    “ I wear two eye rings everyday ”. I have been reading your blog since nearly the beginning (10 years?) I skim the Let It Be offerings, then go back to read them as I get time. My observation skills are often lacking, but for the life of me I couldn’t figure out how I missed the fact that you wear 2 eye rings every day. When I scrolled back to the top I examined your face, still puzzled. Finally I read about missing planes, family secrets and friendship paranoia. Then. The rings. Eyes. Literally. Eyes.

    I am quite pleased every time I come here and find I’ve already read most of your recommendations. Soul sister. Even so, you always have something I don’t know about.
    I did recently read (NYT) that NOLA’s berms that were built post-Katrina are sinking a lot and I worried for you, the first person I associate with NOLA.
    Makes me want to switch to an electric car….no, even better, biking. Heck, with the calories expended, I could eat all the desserts I wanted!

    The BakeHouse tour is a great idea but still, I would think half the fun would be actually cooking in your beautiful NOLA home…and meeting your furry family as well. I love on the east coast so I am out of luck but I wish you all the best. How fun is it that you get to cook at the Mercantile!
    So, when you mentioned wearing eye rings, I thought you meant rings worn in piercings near your eyes. Seriously, I actually scrolled back to you photo at the beginning of the post because I had not noticed you had piercings. Lord, how dumb am I? I then clicked on the link you posted and,duh, of course… eye rings!
    They are beautiful…all of the choices and I am very tempted.

    Joy, for the life of me I can’t find the link to purchase tickets for your Portland event. I clicked on the link you provided, but there is nothing to click on at that page. I looked at the event space and I can’t find it there either. What am I doing wrong?

      There is a “tix” link right on the same line as the Portland dates. Sadly for both of us, it looks like the Portland date is sold out.

    Joy, I love the articles you post. Such a well-rounded person! I think the pool that takes up a modest back yard is so California:) I say since we are looking for a house there! I can’t wait to move.
    Toronto is a great city even when it’s freezing I’ve enjoyed being there. Spectacular food choices.

The thing is, you think you’re making enough for leftovers but somehow it’s all gone in one sitting. It’s that good. Recipe linked in the bio. Xo
I made these Almost Almond Croissant with a sheet I made these Almost Almond Croissant with a sheet of puff pastry and half a log of almond paste. Consider this a max volume weekend treat. ⁣
⁣
You’ll need:⁣
- A thawed sheet of puff pastry, fridge cold⁣
- 3.5 ounces or half a log of almond paste cut into 12 even-ish pieces⁣
- An egg beaten for egg wash, with a splash of heavy cream and a glug of vanilla bean paste for extra luxury⁣
- Sliced almonds⁣
- Powdered sugar ⁣
⁣
Lightly roll a sheet of puff pastry and slice into six rectangles. ⁣
Brush each rectangle with egg wash. Arrange each with two slices almond paste. Pull two corners of the puff pastry up and over the paste, pressing lightly to seal. Brush lightly with egg wash. ⁣
⁣
Transfer to a small, parchment lined baking pan and allow to rest in the freezer while the oven preheats to 425 degrees f. ⁣
⁣
Bake from chilled for 12 minutes. Remove from the oven and again lightly brush with egg wash. Top with almond slices and bake for 6-8 minutes more. Keep an eye as to not burn the almonds. ⁣
⁣
Remove from the oven and allow to cool slightly before dusting with powdered sugar and enjoying warm.
No hesitation. Marshmallows in every cookie. ⁣

Just tryna get the most cheese on my most simple s Just tryna get the most cheese on my most simple small-batch bagel recipe. Get in on this with me: ⁣
⁣
2 Easy No Yeast Bagels⁣
1/2 cup self-rising flour⁣
4 tablespoons greek yogurt (plus a teaspoon or two more if needed)
1 large egg, beaten for egg wash⁣
1/3 - 1/2 cup grated gouda or gruyere⁣
Everything bagel seasoning⁣
3 tablespoons baking soda with 2 cups of boiling water. ⁣
⁣
Place a rack in the upper third of the oven and preheat oven to 375 degrees F.  Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray. ⁣
⁣
In a small bowl, use a firm spatula to work together the flour and yogurt. Add a few teaspoons of yogurt if it feels dry and knead into a cohesive ball for 5 minutes or so. Sprinkle with a bit more flour if it gets overly sticky. Cover with a damp paper towel and gather your toppings. ⁣
⁣
Divide dough in two and roll each piece into a roughly 8-inch rope. Bring the ends around and pinch into a circle. ⁣
⁣
Sprinkle the bottom of the prepared pan with grated cheese in two spots.  Pour boiling water over the baking soda and float each bagel in the water for 20 or so seconds.  Use a slotted spot or spatula to transfer the bagels on top of the cheese.  Brush lightly with egg. Sprinkle with more cheese and everything bagel seasoning. ⁣
⁣
Bake for 20 - 22 minutes until deeply golden and bubbling.  Allow to cool for 10 minutes before slicing and smearing with cream cheese.
